  • diabetics should completely abandon the sweet dessert;
  • nuts - strong allergen, therefore, jam is not recommended for everyone; for the same reason, it should not be eaten by pregnant, lactating and children under 3 years old, so as not to provoke a negative reaction.

Consideration should also be given to high calorie content product (280 kcal), which is not only inappropriate for weight loss diets, but can also provoke obesity with frequent use.

The cooking process is laborious, but the final version is worth such efforts. The procedure takes a lot of time, although this does not scare those hostesses who have already appreciated taste qualities dessert. Confirmation of this is a large list of various recipes for making jam.

Only a small part of the huge culinary piggy bank is considered here. Beginning hostesses can take them as a basis in order to experiment later, creating their own algorithms, fraught with proprietary secrets.


It is unripe fruits that are taken into cooking, in which the shell has not had time to harden. The degree of maturity is determined with a needle - if it has passed through the nut, it is suitable for jam.

In this dessert recipe, you don’t have to “undress” the kernels - the green skin will add an unusual piquancy to the jam. The main thing is to carefully sort out the raw materials so that there are no sick, spoiled, rotten fruits.

The nuts will need to be soaked first. Liming is usually used. It will take at least 2 days to soak, but this is necessary to remove unpleasant bitterness. In this case, the water in the vessel will have to be changed three times a day.

After 2 days, the liquid is drained and proceed to the next soaking phase, but already in a solution of slaked lime (0.5 kg per ½ bucket of cold water). After keeping the nuts for 4 hours, they are thoroughly washed under the tap (flow through).

Having pierced the fruits with a knitting needle, they are again soaked in a clean liquid for 2 days, with periodic replacement of water. After that, the nuts are dried and proceed to step cooking dessert:

  • pour nuts with water and simmer for 3 hours;
  • prepare a syrup from 1 kg of sugar and 1 liter of water (for 1 kg of fresh nuts);
  • adding fruits to the syrup, cook for 5 minutes. and set aside for 12 hours;
  • five-minute cooking is repeated 3-4 more times with breaks of half a day, until the jam becomes thick enough.

During this time, the nuts are thoroughly saturated with syrup and become unusually tender. Dessert in cans (sterile) is packed hot and immediately sealed.

At the preliminary stage, you can do without the use of lime. Then the soaking process will be somewhat different. But first, a small hole is made in each core with a knitting needle, and a clove (a spice, not a flower) is placed in it. Nuts are completely covered with water and insisted for a decade. In the lime-free method, it is also necessary to change the water several times a day.

After 10 days, the fruits are poured with hot water for 15 minutes, and then cold again. Keep another day, and then dry thoroughly. In this recipe, you can try to make jam without the skin, with only kernels.

Cooking dessert is identical to the one above, but it will need to be kept on fire for 10 minutes in 4-5 visits with an interval of 6 hours. And the proportions of the products for cooking are different here - for 1 liter of water they take 2 kg of sugar per 100 pieces of fruit.

The algorithm for making dessert described above can be called simple. But Ukrainian housewives make jam in a slightly different way, spending no more than a day on the final stage. The method of soaking does not matter - it’s more convenient for anyone, but clove buds are not placed in the kernels.

Prepared fruits (1 kg) are first boiled for 20 minutes in clean water, then transferred to syrup, to which cloves (10 pcs.) And juice from one lemon have already been added. Cook for 5 minutes, then insist 1 hour and so on 3 times. After the 4th cooking, they are packaged.


Caucasian cuisine cannot be imagined without the use of walnuts. Perhaps there is no such dish, wherever the kernels are present. Therefore, it is not surprising that Armenian housewives love nut jam. The principle is used standard, but with small nuances:

  • juice of at least 2 lemons is poured into the syrup, and in addition to cloves, cinnamon (10 g) with cardamom is also added;
  • the jam is simply brought to a boil, removed and insisted for a day;
  • in the fourth run, boil until the nuts are completely soft.

When packing, fruits are first put into jars, and then they are poured with boiled syrup.

Despite the remoteness of the countries, the cuisine of the Bulgarians is akin to the eastern one. Here you can find a recipe for cooking a pleasantly smelling, delicious nut dessert. The peculiarity of this process is its continuity.

First, nuts (peeled) are soaked for an hour in a 0.5% citric acid solution. Then they start cooking using the contrast method: 4 minutes in boiling water, then cool 10 minutes in cold water. And so they spend 7-8 visits, without departing from the stove. This procedure replaces pre-soaking.

Only after that, the nuts are transferred to the syrup, and the jam is brought to the desired condition. A few minutes before removing from heat, lemon (10 g) is introduced into the dessert.


When preparing desserts for the winter, housewives often experiment by combining various ingredients. Here, too, it is proposed to try combining nuts with berries. An interesting tasting option is obtained with lingonberries (for lack of it, you can take other fruits).

First brew berry jam, for 1 kg of lingonberries taking the same amount of sugar. When the dessert thickens enough, crushed nut kernels are added to it. Ripe fruits are already taken here.

After boiling the mixture for 25 minutes, the jam is packed in jars. The result is a dark thick jam with original lingonberry-nut taste and unusual aroma.
