The most magical night of the year has ended - New Year's. In the morning, when the guests had left, the owners hastily threw away the leftovers. holiday dishes in the refrigerator so as not to spoil. When they got enough sleep, they realized that they no longer wanted to eat the same salads, dried sliced fruits, cheese and sausage. But it’s also a shame to throw it away. What to do?

Chef Maria Orlova, owner of a vegetarian cafe in Kazan, shared recipes for easy-to-prepare, light and healthy dishes made from recycled materials with AiF-Kazan.

What's left: Vegetables and potatoes, cooked for salad

If you prepare Olivier or Mimosa salad for the second time from the remaining boiled potatoes and you don’t want carrots, you can make a casserole. To do this, chop the vegetables, fry them with spices and place them on a baking sheet. You can also add to the mixture the remains of green peas, corn and other ingredients that were left in different quantities from the salads prepared for the New Year's table. All this needs to be filled in sour cream sauce, sprinkle cheese on top and bake. The same casserole can be prepared from leftovers already chopped, but not seasoned with mayonnaise, sour cream or salad dressing.

It is better to eat meals within two hours to get the maximum benefit from the food. The maximum shelf life for prepared salads seasoned with mayonnaise, sauce or oil is 24 hours. Therefore, it is better if you immediately calculate how much you can eat in New Year's Eve, rather than prepare a bowl of salad just in case. WITH re-cooking perishable products, for example, meat, it is better not to risk it. If you hate throwing away the remains of baked chicken, duck or goose, give them to your, neighbor's or street dogs and cats.
