I bought a Chinese pomelo that smelled fragrant within a radius of 5 meters. It is called "honey", it has a very fragrant smell, so it was packaged in a separate bag with a gold clasp. The fruit was 170 mm in diameter. The skin is thick but soft.

Cleaning recommendation.
You can not use a knife when cleaning at all, so as not to damage the pulp inside. Without a knife, it is easy to peel, the peel of a pomelo is softer than that of grapefruit and orange. Therefore, immediately remove the peel along with the subcortical layer.

I take a big stainless steel pan with a thin bottom, pour sugar immediately. Sugar was small, two glasses. Then I add water by eye, about half a glass. It will also depend on the quality of the sugar itself.

Pour the chopped zest into the diluted sugar, mix thoroughly and turn on first for strong fire. As soon as the contents in the pan boil, reduce the heat to a minimum.

Immediately, at the beginning of cooking, I add ground turmeric from the pan. A friend brought me a set of beautiful tin chests from Paris, they originally contained sweets. Now I store my spices in them, it is convenient to pour turmeric here from a large pack.

I also add it to the pot with jam ground cinnamon, which I myself grind from sticks and pour into a chest. I'm pretty sure the cinnamon is natural. Half a teaspoon is enough.

Mix well the jam with spices and close the lid. The total simmer time was approximately 1.20 hours. When I open the lid, the result is pleasing, the turmeric has dispersed in sugar and colored the white subcortical layer in a bright yellow color.

When the jam has cooled, I transferred it to glass jars. I got two cans of 0.5 liters. A good yield from the zest of a single pomelo fruit, which many people inadvertently dispose of. I keep it vitamin jam in a refrigerator. Although it is so tasty that it is not stored for a long time, but is quickly eaten.

What can be said about the taste of pomelo zest jam. Everyone is concerned about the question of whether it will be very bitter. I can safely say that there is a slight citrus bitterness in the jam.
