The first soup was made in ancient China, about 100 BC. Other peoples did not cook it due to the lack of strong dishes and the nomadic way of life. Europeans learned about the soup only in the 17th-18th centuries. Although in Kazakh cuisine such a dish as "soup" appeared relatively recently. According to statistics, there are now about 150 thousand types of soups, which in turn are divided into more than 1000 types. Carrot soup

Ingredients:

  • cucumber - 1 pc.
  • avocado - 1 pc.
  • lime (or lemon) - 1pc.
  • natural yogurt (or kefir) - 150 g
  • vegetable broth - 300 ml
  • black caviar (vegetarian) - 2 tbsp. l.
  • green onions - a bunch
  • spices to taste

How to cook?

  1. Wash the avocado, cut it in half, and remove the pit. Then use a spoon to separate the vegetable from the rind.
  2. Wash the cucumber, peel it, cut it in half lengthwise and remove the seeds.
  3. Coarsely chop all vegetables. Chop the onion as well, leaving some for garnish.
  4. Squeeze the juice out of the lime.
  5. Whisk the vegetables, onion and yogurt in a blender until smooth. Add 2 tbsp. To the mixture. l. lime juice, spices and vegetable broth. Mix everything well.
  6. Ready cucumber soup scatter into plates, garnish with fresh onion rings and vegetarian caviar.

Diet vegetable kefir soup

Ingredients:

  • cucumber - 1 pc.
  • radish - 200-300 g
  • natural yogurt - 0.5 l
  • natural kefir - 2 glass
  • green onions - a bunch
  • white pepper
  • fresh herbs

How to cook?

  1. Whisk the dairy products in a blender until smooth.
  2. Wash the cucumber, peel and chop on a coarse grater.
  3. Cut the radish into thin slices, finely chop the onion.
  4. Combine the yogurt-kefir mixture, cucumber, radish and herbs in a saucepan. Then add spices to taste.
  5. Put the prepared soup in the refrigerator for several hours.
  6. Garnish the cold diet vegetable soup with dill before serving.

Diet okroshka with chicken breast and vegetables

Ingredients:

  • chicken breast (boiled) - 2 pcs.
  • cucumber - 2 pcs.
  • eggs (boiled) - 2 pcs.
  • fresh peas - 300 g
  • radish - 3-4 pcs.
  • kefir - 1 l
  • boiled water - 1 l
  • lemon juice - 1 tbsp. l.
  • mustard - ½ tsp.
  • greens (dill, parsley, onion)
  • spices to taste

How to cook?

  1. Combine kefir, water, lemon juice and mustard.
  2. Radish, cucumber, peeled eggs and chicken breast cut into cubes.
  3. Into a pot with liquid ingredients add chopped vegetables, peas and meat. Add spices to the resulting mixture and mix everything well.
  4. Send the diet soup to the refrigerator to cool and serve.

Summer vitamin soup with cabbage and greens

Ingredients:

  • cabbage (medium head) - 1 pc.
  • carrots - 1 pc.
  • celery - 1 pack
  • tomatoes
  • onion
  • pepper
  • Bay leaf

How to cook?

  1. Wash the carrots, peel and grind.
  2. Chop the cabbage.
  3. Cut celery into half rings, tomatoes into small pieces. Peel the onion.
  4. Boil water, add onions, bay leaves, and then cabbage to it.
  5. After 5 minutes, toss celery into diet vegetable soup and cook for 10 minutes.
  6. Finally, add tomatoes and carrots to the dish. Cook for another 5 minutes.
  7. Remove the onion from the prepared vegetable soup and pour it into bowls.

Vegetable puree soup

Ingredients:

  • carrots - 1 pc.
  • bell pepper - 1 pc.
  • broccoli - 100 g
  • tomato - 2 pcs.
  • onion - 1 pc.
  • parsley
  • natural kefir (or yogurt)

How to cook?

  1. Wash vegetables and herbs. Cut them into pieces, put them in a saucepan, cover with water and send them to the stove.
  2. After 30 minutes, place the cooked vegetables in a blender, season with salt and beat until smooth.
  3. Before serving, season the dish with kefir and garnish with fresh herbs.

Carrot and nut soup

Ingredients:

  • carrots - 700 g
  • apple - 2 pcs.
  • vegetable broth - 2 l.
  • garlic - 2 teeth.
  • onion - 1 pc.
  • cream (skim) - 1 tbsp. l.
  • spices (cumin, turmeric) - 1 tbsp. l.
  • pepper
  • thyme
  • pecans (or pumpkin seeds)

How to cook?

  1. Cut onions, garlic, apples into cubes, carrots into rings.
  2. Fry the apples with onions, spices and thyme in a dry skillet without oil. Then add the carrots and hot broth here.
  3. Cook the soup for 30 minutes until the vegetables are done.
  4. After a while, remove the thyme from the dish and whisk all the cooked ingredients in a blender until smooth.
  5. V ready-made soup add skim cream, salt pepper. Serve with fresh thyme and nuts.

When making a diet vegetable soup, add many different seasonal herbs to it. It has a very beneficial effect on the functioning of the body. Nutritionists recommend eating it every day, and in considerable quantities - from 400 to 600 g. More recipes dietary soups can be found.
