Baked milk in a slow cooker recipe. Baked milk in a slow cooker: as tasty as from a Russian oven

Today I will share with you tips on how to make baked milk in a slow cooker, as well as recipes for making baked milk in a thermos, pressure cooker, oven and just on the stove.Surely everyone who loves dairy products is familiar with the taste of baked milk.

And some people prefer this kind of milk. For example, my daughter cannot live without it! Therefore, in order not to constantly buy such milk in the store and pamper your childnatural product, made by hand, I had to learn how to make it at home.

This is the easiest and now my favorite way to prepare this type of milk. If you have a slow cooker, then you will surely enjoy this process too. All that is needed for this is the milk itself (I cook from 2 liters of natural homemade milk, which I buy from grannies in the market).

So, we take milk and pour it into a multicooker saucepan. Then we set the “multi-cook” mode (if there is no such mode, then “extinguish”), press the “start” button, close the lid and forget about it for 5-6 hours. After this time, I still leave the milk in the “heating” mode for a couple of hours.

If your multicooker does not have a “multicooker” mode, then using the “quenching” mode, be sure to watch the milk: in the multicookers of some manufacturers, in this mode, the product is first brought to a boil and at this stage it can escape (for example, this happened in my old DEX multicooker, and with the new Panasonic multicooker, fortunately, there is no such problem).

That's all we need! The result is milk amazing taste and aroma, beautiful light chocolate color and golden crust. Try it, and you will definitely like the process of its preparation with the help of the “smart pot”, and, of course, the taste of the resulting milk.

My daughter loves milk prepared this way. In addition, when preparing yeast baking (buns and pies), I add it to the dough, and the taste finished products becomes simply amazing!

Baked milk in a thermos: recipe

If you don't have a slow cooker, you can try making this milk in a regular thermos that holds heat well. This method will also not take you much time and will not require a lot of labor, and as a result you will get delicious milk. Of course, it may not be of the same density and color as cooked in a slow cooker, but the taste of milk made in this way will differ little from that cooked in a slow cooker or saucepan.

In order to prepare milk in a thermos, we first need to rinse the thermos well with boiling water, then boil the milk and immediately pour it into a thermos, which we close tightly with a lid. We leave the thermos with milk alone for the whole day or night (no less than eight hours). After that, open the thermos and enjoy the taste of baked milk of the most delicate pink color.

Recipe for baked milk in the oven

Our grandmothers used this recipe for making milk, and it is the closest to the classic one. A clay pot is best for this process, but if you don’t have such dishes, don’t worry: any thick-walled saucepan will do.

So:

  1. Preheat the oven to 180 degrees.
  2. Put the dish with milk in the oven.
  3. Wait for it to boil and lower the temperature to 80 degrees (you can even up to a hundred, see the behavior of milk).
  4. Somewhere in an hour on milk it forms golden crust, then lower the temperature a little more (up to 70-80 degrees).
  5. Leave the milk to languish in the oven for about seven hours.

During the preparation of milk, constantly monitor it: if you see that it can escape, lower the temperature.

Tip: if you want the crust on milk to be crispy, do not cover the dish with milk with a lid. Otherwise, if you like soft crust then cover the saucepan with a lid.

Baked milk in a pressure cooker

To prepare milk in this way, boil the milk in a pressure cooker for 20 minutes and leave it to cool completely. The lid does not need to be opened.

As you can see, this is the fastest of all the ways to prepare this type of milk at home. When preparing milk in this way, foam may occur in it. Therefore, who does not like foam, milk can be filtered.

Cooking such milk on the stove

This method of making milk was also used by my grandmother from time to time. This method is also quite simple, but requires constant monitoring of the behavior of the milk.

So, we take it into a saucepan, pour milk into it and put it on fire. As soon as it starts to boil, reduce the heat to a minimum and leave the milk to simmer for 3-4 hours, periodically removing the foam from it. It is not necessary to cover the pot with a lid. The milk will be ready when it is a nice dark creamy color.

The idea of making baked milk in a slow cooker seemed to me at first to be pampering. Now, after all, in every store or market you can find any milk of any fat content, including baked milk. But, as with most dishes from a slow cooker, once you try something made with your own hands, you don’t really want a store-bought one anymore. I'm going to cook now small stock baked milk in a slow cooker and then gradually add it to your morning coffee. Highly pleasant taste coffee does.

Ingredients:

You can put sugar in milk - so it will be even "melted".

Recipe for homemade baked milk in a slow cooker

This recipe requires a minimum of effort, but the time during which the slow cooker will cook itself will take quite a lot. First of all, you need to pour milk into the multicooker bowl, then dip the silicone brush into the melted butter and draw a line along the side of the bowl 1 cm above the milk level. This is necessary so that the milk does not escape.

On top, for reliability, I also install a steam grill. Now the milk is definitely not going anywhere.

And finally, you need to choose the appropriate multicooker mode. “Lanning” or, if it is not available, “Milk Porridge” is best suited. In general, this should be a "slow" program that does not boil, but simmers the milk at a low temperature. My multicooker does not have such a “very-most” program - I found this out by trial and error. Therefore, I did this: I brought the milk to a boil in the “Extinguishing” mode, and then the multicooker switched to “Heating”, and I forgot about the milk for 3 hours. During this time, the milk acquired a creamy color, and a brown foam formed on its surface.

True, I saw a lot on the Internet different recipes where milk needs to be heated for 6 hours. And someone keeps milk in a slow cooker for 8 and 12 hours. This, apparently, depends on the model of the multicooker, and on the milk. For example, pasteurized milk from a package that I bought in a store quickly curtailed and tried to fry on the bottom and walls of the multicooker until I thought of cooking it for no more than 3 hours. Now I’m wondering how milk from a real cow will behave, in which there are no additives, and whether it is really the same after languishing in a slow cooker as from a village stove. I'll do my best to let you know how it goes.

So, the recipe for this delicious drink includes only 1 ingredient - cow's milk. It can rightly be argued that the higher the percentage of fat original product, the more tasty and aromatic the baked milk in a slow cooker will turn out. I usually buy store-bought milk, which has a fat content of 3.7%.

Pour milk into the multicooker bowl. Of course, you can use 2 liters (I often do this), but it is better to prepare another portion of fresh.

Cover the pot with a steamer. This is necessary so that when boiling, the milk cannot escape. During heat treatment, the liquid with foam will rise exactly to this insert, and not higher. If you want to protect yourself from boiling milk, you can additionally grease the inside of the bowl with a strip butter(slightly above the milk level).

We insert a saucepan with milk into the slow cooker and select the Stew mode. I set the time to 5 hours, but in reality, 4 hours is enough for 1 liter. If you cook 2 liters of baked milk in a slow cooker, set it for 5 hours.

The first half hour you need to monitor the milk, periodically opening the lid to avoid boiling it. Then close the lid and cook the milk in the Simmer mode. See how it behaves after an hour of languor - you can see a not very strong boil.
