Video recipe for making ginger dough

Surely, on the Internet or at Christmas markets, you have seen cookies, gingerbreads, or other cookies painted with icing confectionery, which looked almost like works of art. As a rule, icing sugar is used as such decoration. Today I will tell you how to quickly and deftly prepare such beauty!

Ingredients

  • egg white 1 pc.
  • powdered sugar 150 g
  • lemon juice 1 teaspoon

Preparation

To prepare the glaze, we need only two main ingredients - egg white and powdered sugar. From one big egg it turns out pretty large number icing, which is enough for a good kilogram of cookies. Wash the egg thoroughly with soap. We carefully separate the egg white from the yolk. Beat the egg whites with a mixer at low speed, using a whisk or fork. Beating the whites into a foam is not our goal. It is necessary that the protein only becomes a homogeneous liquid mass.

Now we add lemon juice, from which the icing will shine and shimmer a little in the light, and mix. The glaze is ready. Next, if you need icing of different colors, then divide it into different containers and add food coloring. I use Americolor gel dye. The quantity is determined by the intensity of the color you want to achieve.

You can use the icing to paint with dots, lines, or to completely fill the entire surface of the cookie. To prepare the filling mixture, add a few drops of water to the glaze and mix. If the glaze is still thick, then add more water and so on until the required consistency is reached - it should be liquid enough to spread over the surface of the cookies. We do the filling like this: first thick glaze draw a line along the perimeter of the future fill, and then fill the inner space with more liquid glaze. We put our mixture into pastry bags. You can use regular bags if you don't have piping bags or a pastry syringe.

We cut off the edge and start drawing. The main thing is not to be afraid to do this. These cookies will still decorate any tea party and will look very elegant! I have quite a bit of artistic talent, but it turned out well, it seems to me.

Look at the photo, some of the cookies are decorated with dots, and the cloud in the foreground is almost completely filled in. The glaze dries in different ways: thick glaze takes 30 minutes, liquid glaze dries for a couple of hours at room temperature before pouring. If a thick layer of icing is placed on the cookies, the time will increase. The glaze will dry for sure in a couple of days!

Gingerbread cookies New Year's figures is a symbol of Christmas in Europe, like the Christmas tree, Christmas cake and Santa Claus. Ginger cookies are traditionally baked by the whole family - this charming tradition, which has come to us from time immemorial, brings relatives closer together and makes Christmas and New Year in the brightest, most comfortable and delicious holidays. I would like to thank the unknown monk who lived in the 11th century, because it was thanks to his absent-mindedness that the classic recipe ginger cookies. While preparing for the monastery's Christmas meal, the monk confused ground ginger with flour, but everyone in the monastery liked the baked goods so much that the recipe spread to other monasteries. Now homemade ginger cookies have turned into a magnificent culinary handmade that decorates festive table for Christmas or New Year. DIY gingerbread cookies for the New Year

The German city of Nuremberg is called the ginger capital of Europe, so many people specifically go there for the best in the world.

To prepare the dough, first mix dry products - flour, soda and spices, and separately grind soft butter with sugar, eggs and honey. After this, the ingredients are combined together and the dough is kneaded until the crumbs stick together into a dense, uniform ball. Properly prepared dough usually does not stick to your hands and has a texture similar to marzipan. Ready dough wrapped in cling film and place in the refrigerator for 30 minutes. This is necessary so that the butter hardens, because it is easier to cut out figures from a denser dough using gingerbread cookie cutters.

Next, part of the dough is rolled out with a rolling pin on the table, figures are cut out of it, placed on a greased baking sheet at a short distance from each other and baked for 5-15 minutes at a temperature of 180 ° C - the baking time depends on the thickness of the cookies. By the way, the other part of the dough is in the refrigerator at this time, otherwise it will begin to melt. For the same reason, the figures need to be cut out as quickly as possible so that their contours are not blurred. By the time the baking sheet is filled with cookies, the oven should already be preheated. When the cookies have darkened a little around the edges, they are considered ready, but if they are kept in the oven, they will become hard. Properly prepared gingerbread cookies start out soft and then become crispy.

How to decorate gingerbread cookies

A classic decoration is gingerbread cookie frosting, which can be made from 1 egg white, cups powdered sugar, 2 tbsp. l. water and 1 tbsp. l. lemon or orange juice. Beat all ingredients in a mixer or blender until the glaze thickens. You can add more powdered sugar if the mixture is too runny. The thicker the icing, the easier it is to draw patterns on the cookies.

You can make glaze without protein. In this case, for 150 g of powdered sugar, take 1 tbsp. l. water and 1 tsp. citrus juice. Grind the mixture until smooth. When the sugar drop does not spread, but remains in a ball on the saucer, the glaze is considered ready.

Very tasty and custard glaze. To prepare it, boil 50 ml of water in a saucepan, then reduce the heat and gradually add 300 g of powdered sugar. Stirring the mixture constantly, pour 1 tsp into it. lemon juice and cook for 5 minutes.

You can add food coloring to the glaze, and to apply designs, use a pastry bag or plastic bag with a corner cut off. You just have to draw on the cookies very quickly, because the icing hardens instantly. You can find examples of patterns in photos of gingerbread cookies with icing posted online, or come up with your own version.

Gingerbread cookies decorated with glaze should sit for 10 hours until the glaze completely dries. Now you can pack New Year's gifts without worrying that the cookies will stick together.   • sugar (preferably brown) - 80 grams;
  • cocoa - 1 tablespoon;
  • fresh ginger, grated - 1 teaspoon;
  • soda - half a spoon;
  • ground cinnamon - 1 teaspoon;
  • ground cloves - 1 teaspoon.
For decoration:

Wrap the dough in film and refrigerate for about half an hour.

When the time comes, divide the dough into two halves. Place one of them on baking paper, flatten it a little, and then cover with another sheet of baking paper. Roll out the dough. You should end up with an even layer of dough, the thickness of which is 5-7 millimeters.

Preheat the oven to 180 degrees. Place baking paper on a baking sheet.

Make the dough: cut out shapes from it and place them on a baking sheet.

Now you can put the future cookies in the oven, keep them for 10 minutes.

Advice: If the figures turn out to be thicker than 7 millimeters, hold the cookies for another 4 minutes.
Don't waste time. While the first batch of cookies is baking, start the second batch: do the same with it.
After the cookies are ready in the oven, let them cool and you can decorate.

For the glaze, combine all the ingredients and beat them with a mixer for 10 minutes. You will get a glossy mass.

Advice: To check if the glaze is suitable, run a knife over it - it should leave a mark on the glaze for about 10 seconds. You can correct a mass that is too liquid using powdered sugar and a mixer, and a mass that is too dense can be diluted with a spoon of warm water.

Pack the glaze into bowls and mix with food coloring. After this, fill with mass pastry bags and start decorating the cookies.

Decorate the cookies with edible beads and leave for 4 hours. cool place so that the glaze hardens.

1. The dough should lie in the refrigerator.
After you have kneaded the dough, wrap it in cling film and put it in the refrigerator: this will harden the butter a little, so it will be easier to roll out the dough and cut out shapes from it.

2. Roll out the dough on baking paper.
In the recipe we used two sheets of baking paper and rolled out the dough this way. This is convenient because it makes it easier to roll out an even layer, and the dough will not accumulate excess flour. And the most important thing for the housewife is that she won’t have to struggle to wash a dirty countertop. But, of course, if you don’t have baking paper in the house, you can roll out the dough on the table.

3. Cocoa will add color to the cookies.

You probably saw delicate coffee-colored figures in the photo of cookies. Nose basic recipes It doesn't always work out like this. To make beautiful cookies, the British pour in dark syrup, and the Americans add blue-black molasses! In our country, grandmothers tinted baked goods with burnt sugar (sugar burned in a frying pan). Our mothers use a simpler method: add cocoa. In this recipe, it is what will help the cookies gain color, like in the picture in the magazine.
