I would like to note right away that it is better to use chicken minced meat, it makes the broth beautiful and takes less time to cook. But, if necessary, it can be easily replaced with any other.

While the water is boiling, prepare the minced meat. Salt/pepper to taste, add a little onion (the amount depends on your desire). Meatballs are usually made purely from meat, they are small in size and when in the broth they will not be dry.

Before the water boils, we have time to prepare the potatoes by cutting them into cubes as in the photo.

Dip the formed chicken meatballs into boiling water. Form small meat balls with wet palms. Reduce heat to low to obtain a nice, clear, clean broth. We are waiting for it to boil.

Now that our hands are free and we have time, let’s prepare the frying. Chop the onion and grate the carrots.

Onions and carrots are medium-small in size. If they are large, then halves are enough, otherwise the soup will be too vegetable, and the sweetness of the carrots will affect its taste.

  1. Fill the pan 2/3 full with water and set to heat.

  2. While it is boiling, grind the meat and 1 onion in a meat grinder, add salt and pepper, stir and beat the minced meat. To do this, pinch it off piece by piece and forcefully throw it into the rest. meat mass. This manipulation helps to hold the minced meat together, and your meatballs will not fall apart.
  3. Peel the potatoes, cut into cubes and place in boiling water. Add salt to taste.

How to make soup:

  1. Place a pot of broth (or just water) on the stove to boil.
  2. Peel the potatoes and cut into arbitrary cubes.
  3. Select a crumb from the bread slices and soak it in milk. You can skip this step if you decide to make meatballs according to the rules.
  4. Chop the onion, add half to the minced meat, season with pepper and salt, add the soaked bread and stir.
  5. Fry the other half of the onion, then add the coarsely grated carrots.
  6. When the broth boils, throw in the potatoes, let it boil again, cook for about five minutes, and add the meatballs.
  7. Frying will come next, put it in the pan 5-7 minutes after the meatballs boil.
  8. Cook for an additional 2-3 minutes, add herbs. Meatballs are considered ready if they float to the surface. Let the soup come to a high boil and turn off. Leave the pan on the stove for 10-15 minutes, the soup should brew a little.

Soup with chicken meatballs and noodles - step-by-step recipe

Soup with potatoes and noodles this time I decided to use stars. Remember, as a child, from a bag? Now I buy Makfu, they don’t boil well. This recipe soup is suitable for children.

Take:

  • Minced chicken – 350 gr.
  • Potatoes – 2 pcs.
  • Egg.
  • Carrot.
  • Onion – 2 small.
  • Dill and parsley - a small spoon.
  • Salt, butter, pepper

Step-by-step preparation of soup:

I admit, the minced meat turned out to be a little runny, so the meatballs were not perfectly round. But she didn’t add anything - she sacrificed the shape for the sake of taste.

Place a pan of water on the gas until it boils, peel the potatoes and cut into strips. After boiling, discard potato straws stew.

Add diced onion to the minced meat, add salt, beat in the egg, add pepper and mix well. Make small balls of equal size.

Place the meatballs in the pan with the potatoes.

At the same time, fry: grate the carrot, cut the second onion into cubes and fry in oil.

A couple of minutes before the end, add the fried carrots and onions into the soup. Then add the greens - I have frozen ones from the freezer. Cook for 2 minutes, turn off and let the soup stand for a quarter of an hour.

Soup with meatballs, vermicelli and mushrooms

An excellent version of your favorite soup with ground beef and mushrooms.

You will need:

  • Ground beef – 350 gr.
  • Egg.
  • Champignon mushrooms – 200 gr.
  • Large onion.
  • Tomato paste - spoon.
  • Small vermicelli - a handful.
  • Carrot.
  • Potato tubers – 2-3 pcs.
  • Bay leaf, a little pepper and salt.

Preparation:

  1. Cut the mushrooms into slices, grate the carrots, and chop the onion. Peel the potatoes and cut into strips.
  2. Fry the vegetables in a frying pan in oil (butter, vegetable). Then add the mushrooms and fry together until the mushrooms are ready.
  3. Add the tomato, stir and simmer for a couple of minutes.
  4. Combine the minced meat with the egg and seasonings, knead and form into meatballs.
  5. Boil water in a saucepan, add potatoes, cook for 5 minutes. Add meatballs, let cook together.
  6. When the meatballs float to the surface, add vermicelli to the soup and add fried mushrooms. Cook for an additional five minutes, throw in the bay leaf and turn off. When serving, sour cream is appropriate - place a spoon on a plate.

Recipe for soup with meatballs, melted cheese and noodles

The following soup recipe is not only with noodles. Mushrooms and processed cheese will make the soup piquant and original. I suggest cooking the soup without frying.

Take:

  • Minced meat – 350 gr.
  • Potatoes – 3 tubers.
  • Processed cheese – 2 pcs.
  • Mushrooms – 200 gr.
  • Onions and carrots - one each.
  • Greens, salt and a little pepper.

How to cook soup:

  1. Bring water to a boil, quickly peel and cut the potato tubers.
  2. Chop the carrots and onions into cubes.
  3. Place potato cubes in boiling water, add half the carrots and onions.
  4. Add the rest of the onion to the minced meat, pepper and form into balls.
  5. Transfer the balls to the soup and continue to simmer over low heat.
  6. Divide the champignons into plates and fry with the remaining carrots.
  7. Cut the cheese into cubes, add to the soup, and add the fried mushrooms there. Cook until the potatoes are cooked and the meatballs float to the top. Season with herbs and turn off. Let the soup steep for a while.
