During Maslenitsa week everyone bakes pancakes. I love them in any version: either simply with butter or with various fillings. This time I remembered my mother’s pancakes with liver and really wanted to repeat them.


Ingredients:
Milk – 1.5 cups
Flour – 2/3 cup (–)
Eggs - 5 pcs.
Sugar - 1 tbsp.
Salt
Liverwurst

Cooking method:


- prepare the dough for pancakes: beat 2 eggs with sugar, salt, pour in milk, add flour (to the desired consistency) and stir, if the first pancake is lumpy, add a little flour
- bake pancakes

Boil eggs (3 pcs.), cut into cubes

Chop the liverwurst and heat in a frying pan (you’ll get something like a pate)

Mix eggs with liverka and put on a pancake, spreading over the entire area

Fold the pancake into a triangle (in half twice)

Fry on both sides until golden brown

Many people don't like liverwurst, but the pancake version should please everyone. I checked it on my beloved: I told him that these were pancakes with pate (and in fact, that’s what it is), so he devoured it and asked for more. Very tender filling that melts in your mouth.

Cooking time is about an hour. The recipe is intended for a stovetop (gas, induction or electric).

Ingredients:
For pancakes:
- milk – 1 liter;
- eggs - 2 pieces;
- sugar – 1 tablespoon;
- flour – 2-3 cups;
- salt - to taste (usually a pinch);
- a small amount of boiling water.

For filling:
- chicken giblets – 600-700 grams;
- onion – 2 medium heads;
- salt - to taste;
- ground pepper - to taste.

Let's start preparing pancakes with the filling. Probably many young housewives are wondering what to do with chicken giblets that remain when cutting the chicken. We found them good use. First, they need to be soaked in cold running water for about an hour.




Then, if there are films or pieces of fat left somewhere, remove them with your hands. And fry in a small amount of sunflower or olive oil in a frying pan over medium heat. Let's let them cool down




At this time, let's take care of the onions. Peel it and cut it into small pieces. Saute the onion a little in a frying pan. The fire should be low and stir constantly so that the onion does not burn. Bring until golden brown.






Then mix the onions with giblets and pass through a meat grinder. Add pepper and salt to taste.




Now let’s move on to the most important component – ​​homemade pancakes. There are several varieties of them - yeast and yeast-free. We need the yeast-free ones as they are thinner and better suited for spring rolls.
In a mixing dish, mix a pinch of salt and 2 eggs using a whisk.

Add the specified amount of sugar and milk, whisking constantly. Add a small amount of boiling water, this will give the pancakes more bubbly.




Then add flour, it is difficult to say the exact amount. Usually this is 2-3 glasses. You need to make sure that the mixture is thick, but flows well. The thinner the mixture, the thinner the pancakes will be. The main thing is not to overdo it. Knead until all the lumps of flour are broken up and the mixture is homogeneous.




Then we put it on strong fire frying pan and heat it thoroughly. Lubricate with a small amount of oil. To avoid excess oil, it is convenient to lubricate with a cotton sponge or a special brush.
Now scoop out about half a ladle of baking mixture and, starting from the middle to the edges, roll it out carefully and quickly over the entire surface of the pan. If there are any gaps left, fill in with a small amount of mixture.
As soon as the edges of the pancake begin to lag behind the pan, it is ready. Now, using a spatula, pry it up and quickly turn it over. This process requires skill. Some turn over with two spatulas, some with their hands.




Let's wait until its second side hardens and remove it from the stove. Let's finish the rest of the pancakes in the same way. Try to make homemade pancakes as thin as possible. Grease each pancake with butter.
Now put about 2 tablespoons of giblet filling into each pancake and roll it up.
