Preparation

  • turkey 1 carcass (about 4 kg);
  • melted butter 40 g

For filling:

  • vegetable oil 2 tbsp;
  • pancetta (aka dry-cured brisket). Cut into 0.5 cm cubes 150 g;
  • 2 medium bulbs;
  • garlic 3 cloves;
  • chopped dry sage 2 tbsp;
  • fried pine nuts 3 tsp;
  • grated zest of 1 lemon;
  • chopped parsley 0.5 cups;
  • fresh bread crumbs 2 glasses;
  • lightly beaten eggs 2.

Preparation

Making the filling

  1. Fry the brisket in butter on high fire 2 minutes.
  2. Reduce heat and add garlic and onion. Simmer for another 5 minutes until the onion becomes soft.
  3. Add the sage, remove from heat and leave for 15 minutes.
  4. Then, add the nuts here, lemon zest, bread crumbs, parsley, eggs.
  5. Salt, pepper and mix well.

Cooking turkey

  1. We wash the carcass and dry it with paper towels.
  2. Stuff with filling and tie the legs with strong thread. We bring the wings back.
  3. Place the turkey in a large frying pan and baste melted butter(half the norm), salt and pepper.
  4. Pour 2 - 3 glasses of water into the pan and cover the carcass with foil.
  5. Bake for 2.5 hours. Then remove the foil and grease with melted butter. If necessary, add water.
  6. Simmer for about 45 more minutes. The bird should be golden.
  7. Remove the cooked turkey from the oven, wrap it in foil and leave for another 20 minutes.
  8. Advice. If the turkey needs to be defrosted, it is best to do this in the refrigerator, focusing on the weight of the bird (for every 0.5 kg you need 5 hours).

What delicious things to prepare for the New Year 2018, so that it would be both interesting and appropriate on the festive table? Maybe a slice? We are used to buying ready-made sausage, ham, etc. in stores. What if you try to make something like this yourself, using new recipes?

Essentially, this is the same lard with meat streaks, cooked according to Italian recipe. Pancetta takes more than one day to prepare, so it’s better to make it in advance in order to be in time for the New Year’s table.

Ingredients:

  • you will need a large, fairly fatty piece of brisket;

The same brisket can be cooked faster. To do this, you need to rub it well with spices, roll it tightly into a roll, wrap it in gauze and put it in the refrigerator for a week. In this form, it turns out more tender, but without the characteristic dried taste.

  • lemon 1;

  • fresh parsley, dill, basil, tarragon 10 g each;
  • egg yolks 3.

Preparation

  1. Grate the lemon zest and squeeze the juice well into a separate bowl.
  2. Cut the salmon into strips 5 cm thick. Salt, pepper, and place in a baking dish. Watering lemon juice and leave to marinate for 15 minutes.
  3. Separately mix the yolks with cream, then add mustard, herbs, and lemon zest.
  4. Pour the sauce over the fish and place in an oven preheated to 200 degrees for 20 minutes.
  5. Serve with lemon slices and sprigs of herbs.

Instead of fresh herbs, you can use dried herbs; then the quantity should be adjusted to taste.

Ingredients:

  • 400 g fillet of any sea fish. River fish will also work, but then you will need to choose the bones more carefully;
  • 8 eggs;
  • 2 table. spoons of flour;
  • 2 onions;
  • 150 g milk;
  • 3 table. spoons of vegetable oil;
  • salt, pepper and other spices to taste.

Preparation

Cut the fillet into pieces, remove the bones, salt and sprinkle with spices.

Bread the fish in flour and fry in vegetable oil on both sides.

Separately, finely chop the onion and fry in vegetable oil.

  • fresh champignons 500g;

Preparation

  1. Wash the liver well, remove the films and check for a gall bladder. If there is one, carefully cut it out.
  2. Mix the liver with eggs, flour, sour cream and beat in a blender until smooth. Salt.
  3. Grease a frying pan, the diameter of which is equal to the diameter of the future cake, and heat it up.
  4. Pour a ladle onto hot frying pan liver mixture to form a thin pancake.
  5. Fry over medium heat until done. You need to turn it over carefully, in one motion, so as not to tear the pancake.
  6. We fry separately. To do this, cut the onion into cubes and grate the carrots. Fry over medium heat with vegetable oil for about 10 minutes (the vegetables should not brown, but just become soft). Salt and pepper.
  7. Divide the carrot-onion mixture into equal parts, the number of which is equal to the number of liver pancakes minus one (if you get 8 pancakes, then divide the vegetables into 7 parts).
  8. Mix mayonnaise with crushed garlic.
  9. Let's start shaping the cake. To do this, place the first cake on a dish, grease with a thin layer of mayonnaise, and place on top fried onions and carrots.
  10. Cover with the next pancake and grease with mayonnaise in the same way and sprinkle with vegetables.
  11. This way we create a cake, leaving the top pancake untouched.

To make the cake more elegant, you can grease it on the sides and top with mayonnaise and sprinkle with boiled grated eggs.
It is better to prepare such an appetizer a day before serving, so that the cake is soaked.

Ingredients:

  • 100 g hard cheese;
  • 2 – 3 squid;
  • 2 boiled eggs;
  • 2 table. spoons of mayonnaise;
  • green onions.

Preparation

  1. Cook the squid covered for 1-2 minutes. You can’t keep it longer, otherwise the meat will become tough. Cut into cubes.
  2. Grate the eggs on a medium grater, finely chop the onion.
  3. Mix all ingredients (except cheese).
  4. From the resulting mass we form balls and roll them in grated cheese.
  5. Place on a plate and decorate to your liking.

Dessert

Of course, the main table decoration for the New Year of the Dog is birthday cake. You can, for example, bake a delicious and elegant one, or you can even build a beautiful one. But sometimes you want to cook something truly special and more refined. Then maybe we can serve some mousse and sweets?

Ingredients:

  • 150 g dark chocolate;
  • 3 tsp honey;
  • 300 ml cream 33%.

Preparation

  1. Break the chocolate into pieces.
  2. Separately, bring 150 ml of cream and honey to a boil and pour the hot mixture over the chocolate. Mix everything well so that there are no pieces left.
  3. Pour the rest of the cream cold into the chocolate mass and beat into a strong foam with a mixer.
  4. Place in the refrigerator for 10 hours.
  5. Remove from the refrigerator and beat again.
  6. Next, put the chocolate in a pastry bag and squeeze it beautifully into bowls or glasses.
  7. Decorate with dark grated chocolate.

Ingredients (6 servings):

  • 600 prunes;
  • 250 g marzipan;
  • 100 g each of black and white chocolate;
  • 200 g peeled walnuts;
  • 50 ml brandy;
  • coconut flakes.

Preparation

  1. Pour the washed prunes into brandy, cover with a lid and leave in a cool place for 40 hours. Shake the dried fruits periodically.

  • 1.5 cups sugar;
  • 3 glasses of milk or cream;
  • 2 eggs;
  • 3 egg yolks;
  • 1/8 tsp salt;

Therefore, we will do most of the work on preparation and in the kitchen during the week, and on December 31 we will pay attention to hairstyle, manicure, roller coaster rides, and a trip to the main Christmas tree of the city. And only an hour before setting the table will you spend in the kitchen. Each menu and shopping list can be downloaded in a separate file for printing, so you don’t forget to take it with you to the store. In addition, the list is divided into 2 parts. The first is products that you can buy in advance, a week before the holiday. After all, there will be no crowds in stores these days. The second part is what you need to buy the day before the holiday. This part includes perishable food. I specifically do not include side dishes on the menu, because... they greatly complicate the night's feast. If you think you can’t do without them, add them yourself. I also do not indicate fruit, vegetable, meat and cheese cuts. I also advise you to avoid fruit and vegetable salads, which will quickly leak and lose their appearance.     • Cut turkey fillet (chicken if desired) into two portions and beat. Salt and pepper. Place in a container or wrap in cling film and put it in the refrigerator.
    • If you are using frozen shrimp, transfer them from the freezer to the refrigerator so that they defrost properly.
  3. 31th of December:
    • Cooking turkey fillet with sauce. To serve the fillet burn, we do this. While we fry the fillet, turn on the oven and heat to 180 degrees. Transfer the fillet to a ceramic or glass mold for baking, cover with foil and send to the oven. After 5 minutes, turn off the oven and the fillet will finish cooking on its own. It can stay there for 20-30 minutes. If you don’t have an oven, cook according to the recipe, but cover the finished fillet on a plate hot cap from the frying pan. If the fillet has cooled before serving, use the microwave. And only then pours the sauce on it.
    • Prepare the shrimp sauce, pour in the shrimp. Slice the tomatoes. We are preparing canapés. All together it will take 20 minutes.
    • Prepare turkey sauce. 10 minutes.
    • Mix the salad right before serving. 2 minutes.
    • Let's get some candy.
    • Let's set the table, fix our hair, and welcome the New Year!

For such a menu, it is better to allocate 2 hours for preparing food on December 30th. In fact, there is very little cooking and cutting the Olivier will take you the most time.

    • Take out the cake and decorate with yogurt. I buy ready-made sugar figurines in the form of snowflakes or decorate as in the recipe. 15 minutes.
    • Drain the liquid from the olives and mozzarella and make the appetizer on skewers. I recommend entrusting this part to children, then you will spend 5 minutes.
    • Place fish paste on crackers. Let's decorate. 10 minutes.
    • Prepare mayonnaise and season Olivier salad. 10 minutes.

As you can see, it will only take you an hour to prepare on December 31st. If you want, you can form the meatloaf in the morning and put it in the refrigerator. This will further reduce the preparation time before the holiday.

If you have a little more time, you can bake truffle cake. He's truly amazing. Cakes for it can be prepared 3-5 days before the holiday. If you have 1-2 more guests, choose one of the New Year's salads.

Menu for a company of 8 people


If you are going to celebrate with a large group, you want to surprise your guests and not inflate your budget. So I made up a relatively budget menu. The main thing with this option is not to cook a lot of dishes, but simply increase the quantity of each. You can also ask one of the guests to help with cooking. Or ask to bring some of the salads or cake with you. The main emphasis in this menu is not only on its budget, but also on the fact that on the 31st you only need to point finishing touches. And you'll still only spend an hour cooking. I quite boldly suggest that you include barley salad in the New Year’s menu for your company instead of the usual Olivier salad. And for those who do not recognize salads with mayonnaise - potato salad. It can also serve as a kind of side dish. The number of ingredients for the salad does not need to be increased; there will be enough for each guest. but make boiled pork from a piece of meat at the rate of about 150 grams per person. For a sweet end to the evening, I suggest buying tangerines and sweets for the cake. The recipe makes a cake for about 8 people.

Cooking plan:

  1. In 3-4 days. We bake cake layers for Pinscher cake. I would like to draw your attention to the fact that big company you need to take a double portion of the recipe ingredients. We also make cake layers for the mushroom snack cake.

Most of the worries about organizing and holding the holiday, of course, fall on women's shoulders. This includes cleaning the house, preparing a menu for the New Year, buying groceries and gifts. Therefore, it often happens that, having completely run around and tired, by the evening there is simply no energy for the holiday itself. Let's talk about how to set a good table for big company, let's discuss sample menu for the New Year, which will cost minimal costs time and effort.

So, you invited guests to your house, let’s say it’s a company of ten people. The first thing to do is create a menu. At the same time, be sure to write everything down in a notebook, because then it will be much easier to make a grocery list and not forget anything.

Preparing the main course

A meat dish for the New Year is simply a must and is an integral part of the festive table. Let's look at three options: beef, pork and poultry, sometimes we allow rabbit, but you can't find it in markets very often. Of course, they can be served in different ways: separately, as part of dumplings, manti, cabbage rolls and other things. But, perhaps, many will agree that a beautifully baked and decorated pork ham, beef tenderloin, goose or turkey will decorate the New Year's holiday menu much better than the same cabbage rolls. The main thing to remember is the integrity of the product. If it's a ham, marinate it the way you like and cook it whole. If it is beef, then roll the flesh into beautiful roll, carefully pull it with twine (not synthetic!), You can first stuff it with a mixture of various herbs (dill, rosemary, thyme, parsley, coriander, etc.), and finally pour aromatic sauce, serve with vegetables and herbs.

Goose or chicken?

Therefore, if you want to move away from the banal, the American version with turkey would be ideal. The bird is quite large, the carcass is large (up to 7-10 kg), and there is a lot of meat on it. Its undoubted advantage is its low calorie content, environmental friendliness and lightness. Two medium-sized turkeys (3-4 kg) or one large one will be enough. In addition, a bird roasted whole in the oven, you see, looks very festive.

Many people underestimate the importance of sauce as part of the holiday table. And it’s completely in vain, because if you choose it correctly, it will only emphasize and add zest to your main dish. So be sure to include it in your New Year’s menu. Recipes can be very different. Before serving, you can drizzle with oil and sprinkle with herbs or make a puree. For goose, turkey or chicken, bake potatoes along with them. It will be saturated with juices and rendered fat, which will give it an indescribable taste.

The vegetable side dish can be fresh vegetables, pureed or baked in the oven or grilled. The last method will take longer. You can use any vegetables for a side dish, but still keep in mind that not everyone likes the same broccoli or cauliflower. But puree from them will decorate children's menu for the New Year.

The rice side dish is also quite versatile and loved by everyone, the main thing is to choose long-grain varieties. It is important to boil it correctly so that it does not turn out to be porridge. The main meat dish can easily be combined with such a side dish by adding oriental spices and herbs.

The stock is too much for your pocket!

It is quite possible that guests will find themselves with good appetite or someone else will come unexpectedly, so you should always have a backup plan of what to put on the table. Let's decide what to cook for the New Year as a “spare” main dish. Our traditional and native dumplings are simply irreplaceable here; in 10 minutes they will already be on the table, hot and fragrant. The second option will take a little longer to prepare, on average 30-40 minutes. These can be cabbage rolls and manti prepared in advance; there is no need to defrost them, just take them out and cook them. And remember, the supply, as they say, does not stretch the pocket, the New Year's week is long.

Salads for the New Year

For a company of ten people, 4 types of salads will be enough, each type in two standard-sized salad bowls. Every year every housewife has a headache about what to choose. The old ones seem to have become boring, but without them the table seems empty and not at all New Year’s. I want something new, but suddenly not everyone will like it. Therefore, it is best to prepare two traditional salad, and the other two are new. Be sure to make one with meat (but not with what is involved in the main dish), another with fish, the third vegetable, and the fourth at your discretion, let it be completely new and experimental or, conversely, your favorite. Thus, there is a chance to please all guests.

Fish salads

As practice shows, salads for the New Year can be anything, but herring under a fur coat is beyond competition. Keep the content the same, change the form. For example, in the shape of a fish, which is easy to do in a silicone baking dish, if available, in the form of a roll, portion columns made using a culinary ring, where each layer will stand out beautifully, in the form of a wreath, the middle of which can be decorated with a candle and fir trees twigs. To start, buy a large, fresh and crispy baguette, you can even make it from flour coarse, With various additives, cut it into small slices, and then fill it with the contents. Use, for example, soft curd cheese (not salted) and lightly salted red fish. The same filling option would be ideal for savory profiteroles (but they should be baked the night before). In general, there are a lot of options, feel free to include them in the menu for the New Year. Economical and tasty filling of the table is guaranteed.

There should be cuts on the table: cheese, sausage, fish. Spice them up with some canapés. Do fruit slices not worth it. On the last day of the year, the first thing you need to do is get enough sleep, believe me, you will have time to do everything, it will be much worse if the holiday passes with a feeling of fatigue. But then get down to business. Marinate the meat for the main course. Wash all the fruits you put on the table. Place candies and other sweets in vases. And around lunchtime, start eating salads. Leave those that may lose their presentation until evening for later. Turkey cooks on average for 3-3.5 hours, therefore, it should be put in the oven approximately 4 hours before the expected time of the feast. Thus, before the guests arrive, there will be at least a couple of free hours left for your beloved.

Entrust setting the table, preparing fruit and other little things to family members; it’s better to do this in the middle of the day. But all necessary utensils, cutlery, it’s still worth preparing in advance so that you don’t have to rush to look for something at the last moment.
