5. Add another third of the milk and mix until it reaches a creamy, homogeneous consistency.

6. Pour the remaining third of the milk into a saucepan and bring to a boil, stirring occasionally. Then, in a thin stream with vigorous stirring, so that the yolks do not “cook”, pour it into the egg-milk mixture.

7. Pour the resulting mixture into a saucepan and over low heat, constantly stirring with a whisk or spatula, heat until thickened, without boiling.

8. Place butter (a 30 gram piece) into the hot mixture and cool until room temperature under a lid in a water bath. It is advisable to stir periodically so that the hard crust does not harden.

9. In a separate cup, beat melted butter (200 grams) with a mixer.

10. Also beat the thickened egg-milk mixture with a whisk or mixer.

11. Gradually add the egg-milk substance, a couple of tablespoons at a time, to the whipped butter.

12. Beat each approach with a mixer until smooth.

  • Prunes – 1 pc.
  • Bay leaf – 2 pcs.
  • Cloves – 2 pcs.
  • Coriander – 4 crushed seeds
  • Raisins – 5 pcs.
  • Soda – 0.5 tsp.

Preparation:

1. Pour the bulk ingredients into a deep stainless steel or glass pan.

Don’t be surprised that the ingredients contain soda - you won’t notice its taste at all, but it is what helps draw out the required color from the tea leaves.

It is better to replace sugar with glucose to create an enhanced grape flavor from the raisins.

2. Add vanillin literally at the tip of a knife so that you don’t get the taste of liqueur instead of cognac with a hint of vanilla.

3. Pour in vodka and begin to heat over low heat, covering with a glass lid.

4. To ensure that the vodka is imbued with all the necessary aromas and the alcohol does not evaporate when heated, it is best to seal the hole in the glass lid (if there is one) using bread crumbs.

5. As soon as we see that our “brew” is about to boil, we immediately turn off the heat and let it cool under the lid.

Cognac is never boiled!

The temperature of the liquid can be measured with a special culinary thermometer. It should be about 90 degrees.

6. Strain the cooled drink through filter material. In extreme cases, a regular strainer will do.

7. Pour into a beautiful bottle or decanter and you can serve!
