How to cook okroshka in mineral water with chicken and sour cream

Boil the potatoes until tender. You can cook it in its “uniform”, you can peel it and cook it right away, it doesn’t matter. Then cool and cut into small cubes. Boil the eggs hard. To do this, place in a saucepan and fill with water. Add a teaspoon of salt to the water. If there is a hole in the egg, the salt will prevent the egg from leaking. From the moment the water boils, cook the eggs for 8-10 minutes. After hot water drain and cover the eggs with cold water. Cool, peel the shell and chop finely. Place the chopped potatoes and eggs in a saucepan.


Wash, peel and finely chop fresh cucumbers or grate them on a coarse grater, as I did. Add to the eggs and potatoes in the pan.


Wash the green onions and chop them finely. Place in okroshka.


Wash parsley or dill, or you can wash both, chop and add to the pan.


Wash the chicken fillet and place it in a saucepan. Fill with clean, filtered water. Bring to a boil, reduce heat, skim off foam and cook for 20-25 minutes until tender. Then remove from the pan and cool. Finely chop the chicken fillet and add to the okroshka.


Pour mineral water into the pan.


Salt to taste and add lemon juice or citric acid to taste. Adjust the thickness of the soup with water.


Okroshka with mineral water is ready. When serving, add sour cream to the plate.

Okroshka on kefir with mineral water

Classic okroshka on kefir with mineral water takes on slight piquancy in taste. The refreshing note is emphasized by a variety of spicy herbs - parsley, dill and green onions. This is the simplest recipe with a traditional set of products.

Ingredients:

  • Potato tubers – 1-2 pcs.;
  • Selected egg – 2 pcs.;
  • Red radish – 100-150 g;
  • Spicy greens (dill, onion) – a bunch;
  • Kefir – 1 l;
  • Mineral water – 700-800 ml;
  • Boiled sausage – 250 g;
  • Fresh cucumber – 1-2 pcs.;
  • Table vinegar 9% - 1 tbsp. l.;
  • Salt (plain or with iodine) - to taste.

Preparation:

  1. Prepare your food. Boil the potatoes in their skins until tender. Cool the tubers. Also hard-boil the eggs and cool under running water. Spicy greens rinse, dry on a towel.
  2. Start cutting. Potatoes, eggs and sausage - cubes. If you are cooking for many servings, there is an option to use a food processor with a special attachment for slicing. Place the ingredients in a saucepan.

  1. Next, cut the cucumber into thin slices. If the vegetable is mature, cut off the thick skin and use only the pulp. Cut small cucumbers whole.
  2. Cut the radishes in the same way.
  3. Chop the greens with a knife. Place everything in a common pan.
  4. Pour in cold kefir. Add mineral water, also cold and with gases. Mix everything. You will get almost a whole pan with a capacity of 3 liters.

  1. Pour in vinegar. If you only have essence and not 9% vinegar, simply dilute it with water. The ratio of acid and water is 1:7. Stir and use in recipe. Add salt to taste. Stir again. Close the lid. Leave in the refrigerator for 30-40 minutes. During this time, the ingredients will be soaked in salt and vinegar. It will turn out aromatic and very tasty. Serve cold soup with black or rye bread.

Okroshka with mineral water and mayonnaise

Mayonnaise is often used to season hot soups. But the sauce is also great for a cold version. Okroshka in mineral water with mayonnaise is tender and slightly piquant, suitable for lunch for the whole family. Use any sauce for the recipe - regular, sour cream, with avocado or olive oil.

Ingredients:

  • Cucumber – 1 pc.;
  • Dill – 3-4 sprigs;
  • Onion feathers - a bunch;
  • Mayonnaise – 3-4 tbsp. l.;
  • Radishes – 4-5 pcs.;
  • Ham – 200 g;
  • Selected egg – 2 pcs.;
  • Potatoes – 400 g;
  • Mineral water – 1.5-2 l;
  • Citric acid – 2-3 pinches;
  • Fine salt - to taste;
  • Parsley - garnish.

Preparation:

  1. Boil eggs and potatoes in advance. If these products are left over from preparing the salad, great. Put them in okroshka.
  2. Finely chop the radish, cucumber and ham into cubes.
  3. For eggs and potatoes, you can use a special grill.

  1. Boiled tubers pass through such vegetable cutters without any problems. You can use only one kitchen device to chop all the ingredients - a large grater.
  2. Sort out the greens and rinse. Dry, it is convenient to use paper towels. Then chop the dill and onion feathers. Use other greens if desired. If you have basil or cilantro in your garden, feel free to cut them for soup.
  3. Combine all the cuts in the pan where you are going to cook the okroshka. Squeeze a little mayonnaise there. If at the end of cooking it seems that there is not enough sauce, add more.

  1. Boil the eggs until hard-boiled. Cool, clean. Cut into fine cubes. Place in a saucepan.
  2. Slice the sausage there too. Here it is boiled, but if you wish, take whatever you like.

  • Potatoes – 400 g;
  • Chicken meat (boiled) – 400 g;
  • Radishes – 4-5 pcs.;
  • Cucumber – 1-2 pcs.;
  • Boiled egg – 2-3 pcs.;
  • Sour cream – 1-2 tbsp. l.;
  • Mayonnaise – 1-2 tbsp. l.;
  • Table mustard – 1 tsp;
  • Mineral water – 2 l;
  • Salt - to taste.

Preparation:

  1. Peel the potatoes and rinse. Boil whole tubers or in large pieces. Drain the water. And chop the pieces into smaller ones. Or press into a thick puree with a masher. Place back into the pan.

  2. Also chop the cucumber and radish. Place the ingredients in the pan.

The “highlight” of the recipe is the combination of beef, mineral water and daikon. Unusual and very delicious okroshka on sparkling water will delight you and your loved ones. The recipe uses apple cider vinegar; it has a milder taste than table vinegar. But, if you don’t have apple cider vinegar, take table, wine or even balsamic vinegar.

Ingredients:

  • Beef (shoulder or neck) – 400-450 g;
  • Chicken egg – 2-3 pcs.;
  • Fresh cucumber – 2 pcs.;
  • Daikon – 100-150 g;
  • Sausage – 50-60 g;
  • Greens - optional;
  • Salt - to taste;
  • Apple cider vinegar – 1-2 tsp;
  • “Borjomi” - 2 bottles of 0.5 l.

Preparation:

  1. Choose lean beef for the recipe. A lean shoulder or neck will do. Want to replace beef with veal? Do so. The recipe will not change at all. Boil the meat until soft. Don't add a lot of water, because you don't need a rich broth here. Pour boiling water over the cut beef pieces in the pan. Add a teaspoon of apple cider vinegar. Cook at moderate boil for half an hour. During this time, also boil the eggs.
