Achieving such a result is not easy. After conducting a large-scale experiment, where more than 20 servings of oatmeal cookies were baked, we found exactly the recipe that will satisfy cooks striving for the ideal.

The Science behind Baking Oatmeal Cookies

Traditional oatmeal cookie recipes start with basic ingredients and techniques: cream butter and sugar together until creamy, then add eggs, a mixture of flour, salt and baking powder, and finally add rolled oats. All ingredients are mixed, then placed on a baking sheet and baked.

When cookies are baked, the following processes occur:

  1. The butter turns into a liquid state. Under influence high temperatures the dough acquires a softer consistency. The butter that is included in its composition softens, releasing additional moisture. This liquid contributes to a flatter cookie shape, as well as better bonding of all dough ingredients.
  2. The edges of the cookies harden. After the cookie has taken shape, its edges begin to become harder than the middle. This is due to the fact that the thin elements of the cookies are more exposed to high temperatures and react faster to them, becoming crispy.
  3. The cookies become more fluffy. Baking powder reaction or baking soda with an acidic environment promotes the formation of bubbles, which, when released, lift the cookies from the inside. The acidic environment can be provided to a greater extent by cane sugar, which we will talk about a little later.
  4. The sugar caramelizes. Melting sugar crystals turn into liquid, sticky caramel, which gives the cookies sweet taste and allows it to keep its shape.
  5. Egg whites react with starch. When proteins are exposed to high temperatures, a coagulation process occurs. This means that protein chains upon contact are attracted to each other and form protein networks that retain water within their structure. This reduces the fluidity of the protein and makes the cookies too dry. But, since wheat flour is rich in starch, which slows down the coagulation process, the cookies will not be overdried and their necessary structure will be built.
  6. The Maillard reaction occurs. The taste and smell of something fried is a chemical reaction called the Maillard reaction. These are the consequences of combining amino acids, which are contained in flour and eggs, with sugars, breaking down into numerous elements as a result of the influence of high temperatures on them. In our case, furfural is released - an element that is responsible for the smell of freshly baked bread and the delicious brown crust.
  7. The cookies are cooling. After the cookies are taken out of the oven, the cooking process is not over. As the cookies cool, the sugar that caramelized during the baking process hardens. This makes the oatmeal cookies crispy. During cooling, excess air may also escape from the cookies, which will help reduce their volume.

Baking temperature for oatmeal cookies

The temperature of the oven will also determine how the oatmeal cookies turn out. If you bake at a low temperature, there is a greater chance that the dough will spread and the cookies will turn out wider. At higher temperatures, from 170 °C and above, the cookies spread less. But don’t forget that it can burn, so you shouldn’t overdo it with the temperature either. In our opinion, a temperature of 170-175 °C is optimal. Then 15 minutes will be enough for the oatmeal cookies to bake evenly and not burn.

Ingredient proportions

In our experiment, we will start from the proportions of ingredients that were identified by analyzing culinary sites on the Internet, then we will have to replace or remove one of the components in order to evaluate the results.

A standard oatmeal cookie recipe consists of 100 g butter, 2/3 cup sugar, 1 cup oatmeal, 1 cup wheat flour, 1 egg, ¼ teaspoon salt and ½ teaspoon baking powder. All ingredients are mixed, the dough is kneaded, cooled in the refrigerator to ensure better adherence of the ingredients, placed on a baking sheet and baked for 15 minutes at a temperature of 170 ° C.

Baking oatmeal cookies without wheat flour

Products made from wheat flour are beloved in every family. But because high content carbohydrates - 70 g per 100 g of flour, many refuse to eat this product, citing its high calorie content. In addition, wheat flour premium undergoes lengthy processing and purification processes, during which many beneficial substances are lost. On the other hand, flour contains a large number of gluten, which helps bind all the ingredients in the dough and keep the shape of the baked goods.

Let's see if oatmeal can completely replace wheat flour when baking homemade oatmeal cookies. Oat flakes of different sizes have a greater or lesser degree of stickiness due to their structure. Large flakes are denser and harder; they will react less actively with the rest of the dough ingredients. Medium oat flakes and instant cooking In this regard, the flakes' more responsive, soft structure and smaller size will allow them to impart a more sticky texture to the dough.

Knead a not very stiff dough and put it in the refrigerator for an hour - you need the flakes to swell slightly. Line a baking tray with baking paper. Form small cakes from the “rested” dough and place on a baking sheet lined with baking paper, at a distance from each other (during the baking process, the gingerbread cookies will increase in size. Bake for 15-20 minutes at 180º.

Recipe 2. Curd cookies oatmeal

Ingredients: 3 large eggs, 200 g butter, 200 g cottage cheese, 500 g oatmeal, 300 g flour, one teaspoon baking powder or slaked soda. Salt, paprika, red pepper, dry garlic - to taste.

Rub the cottage cheese through a sieve. Grind the oatmeal into coarse crumbs. Add flour, oatmeal crumbs, baking powder and beaten eggs to the cottage cheese. Recipe 3. Date oatmeal cookies

Ingredients: 100 g Hercules flakes, 100 g pitted dates, 150 g sugar, 150 g butter, 150 g flour, 3 teaspoons baking powder.

Cut the dates and boil for 5 minutes in a small amount of water (about 150 ml). While the dates are cooling, whisk together the flour, oatmeal and baking powder in a deep bowl. Then add the butter cut into pieces to this mixture and grind it well with flour. The resulting mixture should resemble bread crumbs. Then add 100 g of sugar to the dough, mix thoroughly, pour in the water in which the dates were boiled, and knead again. Grease a baking tray and sprinkle with flour. It is advisable to take a round mold with a diameter of about 20 cm or a rectangular baking sheet 18x25 cm. Divide the dough into 2 parts: “cover” the mold with one, place dates on top, and place the other half of the dough on top. Bake for 40-45 minutes at 180º. Recipe 4. Chocolate oatmeal cookies

Ingredients: 4 eggs, 80 g oatmeal, 85 g sugar, 1 tablespoon starch, 2 tablespoons melted butter, vanilla sugar - to taste. For glaze: 3 tablespoons milk, 50 g chocolate, 4 tablespoons powdered sugar.

Grind the oatmeal into fine crumbs (but not into powder). Beat the eggs with granulated sugar, add vanilla, starch, butter and flakes, mix everything well. Recipe 6. Diet oatmeal cookies

Ingredients: 1.5 cups of oatmeal, 50 g of natural honey, 100 g of low-fat cottage cheese, favorite dried fruits, sunflower oil.

Pour boiling water over the oatmeal, and when it swells, add cottage cheese, honey and finely chopped dried fruits. You can take dates, raisins, dried apricots, figs, dried cherries. Recipe 7. Oatmeal cookies with nuts

Ingredients: 90 g rolled oats (not ground), 75 g unrefined light brown muscovado cane sugar, 3 tablespoons butter, 2 egg whites, 100 chopped walnuts, 2 tablespoons wholemeal flour.

Turn on the oven at 190°. Melt the butter and cool, add oatmeal, nuts, proteins, sugar and flour. Knead into a homogeneous dough. Cover the baking pan with parchment, grease it with the remaining piece of butter and place the cookies at a distance of 3-4 cm from each other: form about 12 gingerbread cookies from the finished dough with your hands. Using a fork, flatten the cakes so that they are no thicker than 0.5 cm. Bake until golden brown in a hot oven for 15-20 minutes. Store the finished oatmeal cookies in a container with a tight-fitting lid.


1. Both regular rolled oats and instant cereal are suitable for making oatmeal cookies. To make the dough tasty, the flakes are usually ground in a blender or meat grinder until coarsely ground.

2. After kneading, you need to let the dough “rest” for an hour and a half so that the flakes absorb moisture and swell. Thanks to this, the dough becomes thicker and does not spread on the baking sheet, and the gingerbread cookies themselves are baked more evenly.

3. The butter must be taken out of the refrigerator in advance and added to the dough softened so that it can be easily mixed with other ingredients. Also, do not replace butter with margarine, this is very harmful product, it is made from cheap artificial fats.

4. There are some subtleties when baking cookies from oatmeal. As soon as it appears golden brown crust, immediately remove the gingerbreads from the oven, do not overcook them, otherwise they will harden. When the cookies have cooled, place them in a bowl and cover with a towel.

You shouldn’t buy oatmeal gingerbread in the supermarket, especially if you are going to treat your child to them: just read what they are made of. These additives can cause allergies or diathesis in children.
