Pike perch in Polish: recipe

Ingredients:

  • fish – 400g;
  • water or fish broth– 1l;
  • eggs – 3 pcs;
  • butter – 80g;
  • lemon juice – 25ml;
  • greens - dill and parsley;
  • salt and white ground pepper- to taste.

How to cook fish in Polish

  1. It is advisable to buy fish fillet with skin or when cutting, do not remove it. Be sure to check for the presence of bones, especially if children will eat the fish.
  2. Then cut into several portions.
  3. As I wrote above, we will boil pike perch. It is advisable to do this in fish broth, but if you don’t have it or don’t want to bother, you can just do it in water. I did the following: I cleaned and cut up the fish, cooked broth from the tail and head, removing the gills, of course. When cooking, I added a piece of celery stalk, herbs (parsley, green onions, dill), bay leaf, peppercorns and allspice, as well as a whole small onion. Yes, and definitely salt. I didn’t cook it for long – I simmered it for 40 minutes after boiling over low heat. Then I strained it all and kept only the broth for myself.
  4. We put pieces of pike perch in it. Without bringing it to a rapid boil, keep it on low heat, first on one side for 2-3 minutes, then turn it over and the same amount on the second. Then cover with a lid, turn off the stove and let it steep. For small, not thick pieces of pike perch, this time, taking into account the infusion, is enough for them to cook. If you are in doubt, or you have some other fish, cook it longer. But in any case, don’t overcook it.
  5. Boil the eggs hard. To keep the yolk bright, it is better to cook it this way: dip the eggs in cold water, throw in a pinch of salt (it will prevent the protein from leaking out in case the shell bursts), bring to a boil and immediately turn off, do not drain the water, cover with a lid, wait 12 minutes. Then hot water pour out, pour cold and cool the eggs completely. This way the yolk will remain yellow and will not acquire the blue color that happens to it if it is overcooked. Finely chop the cooled eggs with a knife.
  6. We heat the butter, there is no need to boil it, so the heating is minimal, we wait until it melts and becomes liquid.
  7. Pour lemon juice into the melted butter and add chopped eggs.
  8. The sauce for Polish fish should contain a lot of greens, so don’t be shy, chop a bunch of dill and a bunch of parsley. Place in the butter-egg mixture, season with salt and pepper and mix well.

  9. Take the fish fillets out of the saucepan, place the pieces on a dish and spoon our thick egg sauce onto each one.
