Ingredients:

  • Vegetable broth – 1.2 l.
  • Potatoes - 3 pcs. (medium size).
  • Carrots - 2 pcs.
  • Beets - 1 pc.
  • Onion - 1 pc.
  • Bell pepper - 1 pc.
  • Garlic clove – 3 pcs.
  • Soy sauce - 3 tbsp. l.
  • Peeled pine nuts – a handful.
  • Sunflower oil – 3 tbsp. l.
  • Salt, spices, herbs - to taste.

Preparation:

1. Rinse the beets well and cook until tender in water. Remove, let dry and cool, then peel and cut into cubes.

You can cook beets in literally 15 minutes in the microwave by placing the vegetable in a plastic bag.

2. Grind the garlic cloves. Peel the pepper from the tail and seeds, the onion from the husk, and the carrot from the skin. Grind into cubes.

3. Pour oil into a frying pan, heat it up and sauté in it. vegetable slicing. When the vegetables acquire a golden hue, add soy sauce and simmer for a couple of minutes.

4. Rinse the potatoes well, peel them and cut them into small cubes.

5. Pour vegetable broth into the pan and boil. Then add the potatoes and cook for 10 minutes. Then add the roasted vegetables and beet cubes. Add salt, lightly pepper and continue cooking for another 10 minutes.

If there is no broth, then you can boil water and use crumbly vegetable broth Maggi or "Persona".

6. Move the pan from the stove to a heat-resistant bowl and, using a blender attachment, grind all the vegetables in the soup into a pulp. Put it back on the fire for a couple of minutes, and then leave it covered for 15 minutes.

If anyone knew a lot about porridge, it was the inhabitants of the monasteries. It is the monks who observe all possible fasts, but at the same time their diet is so nutritious that any royal chefs can envy.

And the secret of the monastery porridge is that not one, but several different cereals are used at once, which are rich in fiber and proteins and a variety of vitamins and microelements.

Ingredients:

  • Water – 350 ml.
  • Buckwheat – 50 gr.
  • Pearl barley – 50g.
  • Millet – 50 gr.
  • Rice – 50 gr.
  • Mushrooms – 100 gr.
  • Onion – 1 pc.
  • Carrots – 1 pc.
  • Sunflower oil – 2 tbsp. l.
  • Pepper, salt - to taste.

Preparation:

1. We inspect all cereals for the presence of debris, select and remove it, then rinse the cleaned grains in running water and lightly dry them in plates.

2. Grind fresh mushrooms, grate the carrots and chop the onions. Maybe instead fresh mushrooms take frozen ones - that’s where the taste comes from ready-made dish won't change much.

3. If we use a multicooker for cooking, then it is advisable to fry the vegetables and mushrooms in oil for ten minutes in the “Barbecue” mode. If in a deep cauldron, then 5-7 minutes are enough for frying.

4. Add all 4 washed cereals.

5. Fill with vegetable broth. Season with salt and pepper. Stir carefully.

6. Place a few sprigs of dill and parsley on top for a pleasant aroma.

7. Close the lid. If we cook in a cauldron, then put it in the oven for 30-40 minutes, preheated to 180 degrees. In a multicooker, it is enough to close the steam release valve and turn on the porridge cooking mode for twenty minutes.

3. Lenten salad with seafood

In the spring, to protect yourself from vitamin deficiency, you need to eat healthy products, which are rich not only in proteins, but also minerals. The ideal solution can become seafood, which consists of almost a quarter of them. At low calorie content seafood is rich in minerals necessary for the human body, such as iron, zinc, magnesium, iodine and others.

Ingredients:

  • Frozen sea ​​cocktail– 300 gr.
  • Beijing cabbage – 200 gr.
  • White wine vinegar– 1 tbsp. l.
  • Cherry tomatoes – 100 gr.
  • Cucumber - 1 pc.
  • Lemon – 0.5 pcs.
  • Soy sauce – 2 tbsp. l.
  • Fresh ginger – 0.5 tsp.
  • Garlic clove – 1 pc.
  • Sunflower oil – 1 tbsp. l. + 2 tbsp. l.
  • Salt, sugar, pepper, herbs - to taste.

Preparation:

1. Defrost the frozen sea cocktail and place it in boiling water for a couple of minutes. Remove with a slotted spoon and let drain excess water. When the seafood has cooled to at least 60 degrees, put it in a bowl, add salt (about 0.5 tsp), add sugar (about 1 tsp) and pour in vinegar and sunflower oil. Leave to marinate for one and a half hours.

2. Everything fresh vegetables rinse well, cut off parts from them that usually do not go into salads and chop them: cabbage and cucumber into strips, and tomatoes in half.

3. Squeeze lemon juice into a separate cup and try not to get any seeds. Add 1 tbsp. l. sunflower oil and soy sauce. Grind the ginger root using a grater and a clove of garlic using a garlic press. If you salt pink salmon, chum salmon or salmon yourself, you will get fresh and tender slices. This is not at all difficult and does not require, as it may seem, a lot of time, but it can significantly save the family budget.

We cut the fillet of pink salmon (or its relatives) into slices about 1 cm thick. You can remove the fish from the bones yourself; it is easiest to cut it half-thawed.
Sprinkle it with a mixture of salt and sugar. Their ratio can be 1:1 or 2:1, as you like, about 1 tbsp per 1 kg of fillet. spoon of salt. You can add pepper, herbs, onions, lemon... But you can do without it. Place a weight on top (a flat plate or lid with a weight) and put it in the refrigerator for several hours (overnight). In the morning the fish is ready!

Baked fish and potatoes.

You can take pike perch, pink salmon, chum salmon. Place 2-3 cm thick pieces of salted fish on a greased baking sheet or in a mold, top with a layer of onion rings and slices of salted potatoes. The dough is made simply: 1 glass of water, 1 tsp. salt, flour as needed, until dough is smooth.

It is convenient to make minced meat from fillet, but you can also separate the fish from the bones yourself. The most commonly used are pink salmon, chum salmon or salmon (in the latter case the minced meat will be fattier). Add 1 large onion per half kilo of fillet (also scrolled or chopped), 1 clove of garlic, salt to taste. Next, prepare it like “regular” dumplings.

Besides fish, lean filling can be mushrooms fried with onions, you can add boiled beans; stewed pumpkin With a large number onions and garlic. Such fillings are especially suitable for juicy manti.

Fish pie

Dough: for 50 g of “live” (or frozen) yeast, diluted in 100 g of water with a teaspoon of sugar, take a glass of water and 200 g of melted margarine or vegetable oil, 1 tsp. salt, floor glasses of sugar. Add flour until the dough becomes smooth.

The filling can be varied, for example:

When the dough rises, add salt, sugar, three tablespoons of vegetable oil, another half a kilogram of flour and beat the dough until it stops sticking to your hands.

Then put the dough in the same pan where you prepared the dough and let it rise again.

After this, the dough is ready for further work.

Pea pancakes

Boil the peas until soft and, without draining the remaining water, grind, adding 0.5 cup wheat flour for 750 g of pea puree. Form pancakes from the resulting dough, roll in flour and bake in a frying pan in vegetable oil.

Pies with pea filling

Boil the peas until tender, mash, add onion fried in vegetable oil, pepper and salt to taste.

Prepare simple yeast dough. Divide the dough into balls the size of a walnut and roll into flat cakes 1 mm thick. Add the filling. Bake in the oven for 20-25 minutes.
