What you need:

1 tbsp. steamed rice
500 g beef liver (for more delicate taste beef liver can be replaced with veal or chicken liver)
4 boiled eggs
200 g hard cheese
200 g canned corn
flour - for breading
vegetable oil - for frying

Homemade mayonnaise:
3 yolks
150 ml vegetable oil
30 ml lemon juice (1/4 lemon)
1 tsp Russian mustard
1 tsp Sahara
pinch of salt

How to cook rice salad with liver:

    1. There are several secrets in cooking liver that will help make it soft and juicy.

    Always choose fresh liver, not frozen.
    Pour boiling water over the liver and immediately lower it into cold water. Remove the outer film with a knife and soak in milk for 1 hour. Cut the liver into pieces 1 cm thick, do not add salt, roll in flour.


    Heat vegetable oil in a frying pan, add pieces of liver, fry for about 30 seconds and turn over. Then fry the liver again for about 1.5–2 minutes on each side.

    It is important that the oil is hot. In this case, a crust immediately forms on the liver, which retains all the juice inside. Cook the liver over medium heat until the juice becomes clear when pierced.

    Place the finished liver on a paper towel and blot with a napkin to absorb excess oil.


    Grate the cooled liver on a fine grater.


    At the same time as preparing the liver, boil the rice until tender and rinse in cold water.


    Drain liquid from corn.


    Divide the eggs into white and yolk, grate separately on a fine grater.

    For mayonnaise, place the yolks in a bowl, add salt, sugar and mustard. Whisk vigorously for 1 minute.

2. Place the eggs in cold water and let them cook. As soon as it boils, reduce the intensity of the fire. After 8 minutes, take out the eggs, dip them in very cold water, and when cool, peel them.

3. Cut the ham, tomatoes, fillet and eggs into large (0.7 by 0.7 cm) strips.

4. Cut the cucumbers into thin (0.2-0.3 cm thick) circles.

5. Grate the cheese (use the fine-hole side of the grater). After all the products are prepared, place them in a deep bowl. Leave about a third of the cucumbers, they will be needed for decoration. Send all the mayonnaise there, mix everything well.

6. Place a ring mold on a plate, fold the resulting mass inside it and compact it a little with a spoon.

7. Remove the form, place cucumber circles on the sides of the salad and on top, fill the free spaces with corn.

Cooking steps:

1. Wash the vegetables and pour boiling water over them. Boil until tender - potatoes should boil for 25-30 minutes, carrots - 40-45 minutes, beets - about 1.5 hours (be sure to check for softness with a pointed wooden stick).

2. Chop the onion into cubes, place it in a plate, pour hot (about 70⁰C) water. Add the same spices and leave to marinate.

3. Boil the eggs - place them in cold, lightly salted water; when they boil, turn down the heat. After 8 minutes, remove the eggs to clean thoroughly - cool them in very cold water.

4. Using the large-hole side of a grater, grate the cheese, vegetables, and eggs onto separate plates (you should end up with 5 separate mounds).

5. Cut the breast (or the flesh of the legs) into cubes measuring approximately 0.5 by 0.5 cm.

6. Rinse the prunes (if the dried fruits are dry, soak them first in warm water for 30 minutes), dry on a paper towel and cut into cubes of the same size.

7. Peel the pomegranate, place the separated grains in a plate.

8. Drain the marinade from the onions - strain into a colander with small holes. Place a glass in the middle of a flat dish. Place layers of salad around the glass in this order - potatoes, meat, onions, carrots, eggs, cheese, nuts, beets.

9. After layers of meat, eggs and beets, coat the dish with mayonnaise. At the same time, compact the salad a little, giving the shape of a small slide. Decorate the salad - sprinkle half of the mound with pomegranate seeds, the other half with prunes.
