Ingredients:

  • pure water - 2 l;
  • granulated sugar- 2 kg;
  • citric acid - 65 g.

Cooking

Bring clean water to a boil and combine it with citric acid. For greater naturalness, the acid can be replaced with the juice of natural lemons, and their zest can be added to the syrup for a pleasant citrus aroma. Following the acid, we send rowan berries to a saucepan with water. At the same time, before adding the mountain ash, you should check for integrity, if necessary, sort, rinse and dry.

We cover the saucepan with the base for the syrup with a lid and wrap it well. We leave the berries in the water for a day so that they soften and give all their benefits to the water. After the time has passed, we filter the drink, pour the juice back into the saucepan, and discard the berries. Add sugar to the juice, mix well and bottle or clean banks. Ingredients:

  • black chokeberry berries - 1 kg;
  • cherry leaves - 10-15 pieces;
  • granulated sugar - 1.25 kg;
  • citric acid - 48 g;
  • water - 1.8 l.

Cooking

The cooking method is the same as in the previous recipe, with the only difference - rowan berries must be poured into a saucepan in layers, shifting each layer with cherry leaves. As soon as all the berries are in a saucepan, boil water, dilute in it citric acid and pour the contents of the pan with the resulting solution. We cover the base for the syrup and leave it for two days.

After the time has passed, we filter the juice, and discard the berries and leaves, or use it to prepare the tincture. Dilute sugar in rowan juice, bring the syrup to a boil and pour over sterile jars. Roll up and keep refrigerated until needed.

Ready syrup is also diluted with water before use. You can also add a spoonful or two of goodies to a cup of tea or coffee as a sweetener.

Bring the contents of the pan to a boil and simmer for 20-30 minutes or until the volume is reduced by half. I have been carrying the desire to reproduce the taste of chokeberry syrup since childhood. I began to realize my gastronomic dream not so long ago and now for 5 years now I have a tradition - every autumn I cook chokeberry.
I will not talk about the benefits of this berry. She is without a doubt. I want to talk about the incomparable taste of syrup.
By itself, chokeberry is not very tasty - with bitterness, it knits the mouth. Its feature is aroma. Fragrant, delicately spicy. Saturated color the berry itself allows you to prepare a tasty and sweet treat from it. Now is the time to do it.
For syrup, you need a ripe, but not overripe berry. The main thing in harvesting is to get ahead of the birds that adore chokeberry.
We collect the berries, free them from the stalks and wash them well. Since the mountain ash grows in a bush, on which worms and snails with waste products like to sit, the mountain ash can be soaked for half an hour in cold water.


Not the most important, but a very important accent in the preparation of chokeberry syrup is cherry leaves. They need a lot. In the recipe, I gave an approximate amount.
