  • Punch down the dough.
  • Pour 60–80 ml of cold milk into a clean bowl. Combine it with the egg, beat with a whisk. Add sugar first, then flour, stir until smooth.
  • Heat the remaining milk until almost boiling. Pour it into the prepared mixture in a thin stream, whisking it with a whisk to prevent the formation of lumps. If you cannot avoid the appearance of lumps, strain the future cream through a sieve.
