First, I usually boil the milk in an aluminum pan or stainless steel bowl.

When the milk is brought to a boil, measure required quantity rice and rinse it once cold water. There is no need to strongly wash out the starch from the cereal; after all, the milk rice porridge should be a little like a spread, and not crumbly.

Then pour the rice into thick-walled pan made of stainless steel (or aluminum) and fill it with water so that it rises one centimeter above the grain.

Place the pots of rice on the fire and immediately add salt. Now, wait until the water boils and cook the rice over low heat until it boils completely. At this time, do not forget to stir with a ladle or spoon.

When the water from the rice has boiled away, we begin to add hot milk, approximately 300 ml, to the porridge.

Stir and cook the porridge over low heat (or using a divider). As soon as you notice that the milk has boiled away, but the rice is not ready yet, add the remaining hot milk and cook the rice until done.

Five minutes before the end of cooking (when you can see that there is still a little rice left), add vanillin and sugar to the porridge.

Stir until the granulated sugar dissolves; the rice usually has time to cook until done. Place in milk rice porridge butter, stir and cover the pan with a lid.

To make the porridge even tastier, after removing it from the stove, I recommend wrapping the container with the porridge in a blanket or terry towel and letting it brew for thirty minutes.

  5. Cook over high heat for 8 minutes, stirring constantly.
  6. Reduce heat to medium and simmer for 15 minutes. Do not stir.
  7. If the water has not evaporated during this time, continue cooking.

  7. Cook for low heat 15-20 minutes.

Ingredients for 2 servings

  • 250 ml milk;
  • 250 ml water;
  • 50 ml round rice (50 g);
  • 2 teaspoons butter;
  • a pinch of salt;
  • sugar - to taste.

Short-grain rice is best suited for this porridge. The porridge turns out creamy, tender, similar to dessert.

Ideal proportion for rice porridge: 1:10. To make it easier to understand, I will give an example: Measure out 1 liter of liquid (50/50 milk and water), and then pour rice into a measuring cup to the 100 ml mark. I was preparing a small portion, so I divided this proportion in half.

It is very important to maintain proportions. To obtain rice porridge with a pleasant consistency, it is necessary to maintain a grain-to-liquid ratio of 1:10. The liquid in our case is water and milk. We take them in equal proportions.

In a pan of suitable size from of stainless steel with a thick bottom, pour in the milk and water. Add required amount rice and mix.

How and for how long to cook

Place the pan on low heat and cook, stirring occasionally. Only after 15 minutes the liquid in the pan will boil, by this time the rice will have swollen a little and been saturated with liquid.

Cook over low heat until the rice porridge is ready (another 25 minutes from the moment it boils). Cooking time may vary slightly, depending on the quality of the rice.

Add butter, salt, sugar (optional) to the finished porridge. Stir and cover with a lid. Wrap the pan with porridge in a towel and set aside for 20-30 minutes.
