Cake crusts prepare them biscuit dough, which is divided into three parts and poppy seeds, raisins and nuts are added to each. This dough is prepared on the basis of egg mass. To do this, the whites are separated from the yolks. Beat the whites with a mixer into a thick foam. The longer you beat, the more bubbles are formed in it, which makes the dough airy. Then add sugar and add the yolks one at a time, without stopping shaking. Lastly, add flour, making sure to sift it first. Gently mix with a spatula, in the same direction as whipping. baking powder;

flour – 100 g;

one egg;

fine sugar – 100 g;

100 ml full-fat sour cream.

Fillers

raisins – 0.5 tbsp;

chopped walnuts - half a glass;

poppy seed – 0.5 tbsp.

Cooking method

1. In a deep bowl, combine sour cream with egg and sugar. Mix everything well with a spoon.

2. Sift flour with baking powder. Add flour in small portions liquid ingredients and knead the dough without lumps.

3. Add poppy seeds into the dough and stir. Place it in a mold, grease it, and bake until golden brown at 200 C.

4. For the other two cake layers, prepare the dough according to the same principle, only add pre-steamed and dried raisins to one, and chopped nuts to the second.

5. Ready-made cakes cool on a wire rack. Combine sugar with sour cream and beat with a mixer until fluffy.

6. Place the cakes one on top of the other, covering each with cream. Leave the cake to soak for two hours. Then cut it and serve with coffee, compote or cocoa.

Ingredients

four yolks;

raisins – 120 g;

two eggs;

square shortbread cookies – 900 g;

fig jam - half a glass;

200 g sugar;

a pack of butter;

roasted cashews – 150 g;

homemade milk – 1.5 tbsp;

flour – 75 g;

vanilla bag

Cooking method

1. Mix sugar with flour.

2. Beat the eggs until foam appears. Pour in milk in a thin stream, continuing to whisk. Then gradually add the dry mixture and beat until not a single lump remains.

3. Cook the mixture over low heat, stirring continuously, until thickened. Cool the cream. Add butter and vanilla. Beat for five minutes, gradually increasing the speed.

4. Chop the nuts and add them along with the poppy seeds to the cream. Mix.

5. Place cookies in one layer on a plate. Lubricate it custard, stepping back two centimeters from the edge. Place another layer of cookies. Spread it with fig jam mixed with raisins. Each subsequent layer of cookies should be slightly smaller to create a pyramid-shaped cake.

Ingredients

three eggs;

a can of boiled condensed milk;

175 g butter fat;

200 ml heavy cream;

300 g cane sugar;

one and a half tbsp. sour cream;

half a glass of hazelnuts;

one and a half tbsp. flour;

poppy seeds and raisins - half a tbsp.

Cooking method

1. Soak poppy seeds in warm sugar syrup. Then fry in a dry frying pan.

2. Wash the raisins and pour boiling water over them. Leave for a quarter of an hour. Drain the infusion and dry the raisins on a napkin.

3. Prepare the 1st cake layer. Take one egg and add half a glass of sour cream, flour and sugar to it. Put some baking soda and chopped nuts. Knead into a homogeneous dough without lumps.

4. For the second cake layer, we take the same ingredients, but instead of nuts we add raisins.

300 g cane sugar;

300 ml sour cream;

100 g poppy seeds;

Cooking method

1. Take three small bowls and place an egg, a pinch of salt and slaked soda, as well as one hundred grams of wheat flour, sour cream and sugar. Knead a thick dough without lumps.

2. Pour poppy seeds into the first bowl, add chopped nuts into the second, and steamed and dried raisins into the third. Mix well and bake three cake layers at a temperature of 180 C. Half an hour for each cake. Cool the finished cakes.

1.5 tbsp. sour cream 20%;

100 g of any nuts.

a can of condensed milk;

a pack of butter fat;

2 tbsp. cocoa.

Cooking method

1. Pour boiling water over washed raisins. Steam for ten minutes. Then drain the infusion and dry the raisins on a napkin. Poppy pour hot water and leave to swell. Chop the nuts.

2. For the first cake, beat an egg into a bowl. Add half a glass of sugar and sour cream to it. Mix, put a little soda and gradually sprinkle half a glass of flour, knead the dough without lumps. Add steamed poppy seeds to the dough and mix until smooth.

3. Lubricate the inside of the multicooker bowl with oil. Place the dough in it and cook in the “baking” mode for 20 minutes. Then turn over using the steamer and bake for another three minutes in the same mode.

If walnuts are used in the recipe, they need to be shelled and roasted, then they will become more buttery and fragrant, which will make the cake much tastier. The easiest way to do this is in a frying pan without adding oil. They are fried over medium heat until golden brown, stirring occasionally or simply shaking the pan. The recipe uses following ingredients(per one cake):

– 0.5 cups flour premium;

– 0.5 cups granulated sugar;

– 0.5 cups is not very good liquid sour cream;

– 1 average chicken egg;

– 1 teaspoon of baking powder (can be replaced with baking soda, quenched with vinegar);

There will be a total of three cake layers, each with various additives, so all ingredients are multiplied by three and additionally half a glass of raisins, nuts and poppy seeds is used for each.

Impregnation cream

Beat one glass of sour cream well with a mixer with 4 tablespoons of granulated sugar. This is a simplified version, but you can use the classic sour cream recipe. To do this, half a liter of unboiled chilled milk is mixed with 500 grams. cold sour cream and beat well with a mixer, gradually increasing the speed until fluffy and homogeneous mass. The main thing here is not to overdo it, otherwise you will end up with oil. Add two cups of granulated sugar, vanilla and beat a little more.

In a deep bowl, mix the egg, sour cream and sugar with a whisk. Flour is sifted into a separate container and mixed with baking powder. All these components are combined, nuts are added and stirred. The resulting dough is poured into a special form, greased with oil, and baked in the oven at a temperature of 200°C.

In the meantime, you can prepare the dough for the second cake, repeating the same thing, only using raisins instead of nuts. The third cake is prepared with poppy seeds. They don't turn out very tall, but they bake for about half an hour.

The cooled cakes are coated with cream, assembled into a cake and left for several hours for better soaking.

You can decorate this cake in various ways depending on taste and imagination. You can just crumble it into sour cream grated chocolate or crushed cookies into powder. For those who like something sweeter cake will do chocolate cream. If earlier I couldn’t make baking from biscuit dough, now everything works out as it should. It all depends on the batch and baking temperature of the cakes.

I like this cake because it contains both poppy seeds and cocoa. And cream made from condensed milk and butter is my favorite.

So, to make the cake I needed these products.

Then I started kneading the dough.

Separated the eggs into whites and yolks.

The dough is first kneaded in a common bowl. So I put all the yolks and all the sugar in a bowl.


Using a mixer, I beat the yolks with sugar until creamy. The mixture should become thick and slightly yellowish in color. To make the yolks beat better and faster, I always add a little hot water(about a teaspoon).


In another bowl, I beat the whites with a pinch of salt until they form peaks. I put the whites in a bowl with the yolk mixture, but did not stir.


I poured flour.


Mix carefully with a wooden spatula from top to bottom. You only need to stir for a short time, just until the large lumps of protein disappear.


Separate half of the dough into another bowl. And in this dough I put dry poppy seeds, a third of a teaspoon of soda and a pinch citric acid.


Mixed the dough with a spatula.


Split form covered parchment paper and laid out the resulting dough. I smoothed it out with a spatula.


Placed in a preheated oven. I bake sponge cakes basically according to the same scheme. That is, first my oven is heated to 200°. I place the pan with the dough and bake for 10 minutes. Then I lower the temperature to 170° and bake the cake at this temperature until done. This is another 30 minutes (maybe a little longer).

When the cake was browned, I carefully opened the door and checked the readiness with a toothpick. My toothpick was still dry, so I took out the mold.


Again, carefully separated the ring and transferred the cake over the edges of the paper onto the wire rack. She removed the paper and turned the cake over onto a towel. Cool down.


In the meantime, I started on the second cake. In a bowl with the remaining dough, I put cocoa, a third of a teaspoon of soda and a pinch of citric acid.


Stirred so that the cocoa and soda were well distributed throughout the dough.


Placed the dough in a pan lined with parchment.


I baked it according to the same procedure as the poppy seed cake.

While the cake was in the oven, I prepared the cream.

To do this I put it in a bowl butter and kneaded it with a spatula. The oil should be room temperature, so you need to take it out of the refrigerator in advance.

Add condensed milk little by little and stir.

When all the condensed milk was in a bowl with butter, I beat these products with a mixer. To make a good cream - thick and homogeneous - the condensed milk must be whole (without added oils, powdered milk and other things) and also at room temperature. As soon as the cream comes together, you need to stop whipping, as then the cream may separate and become pockmarked.


The finished brown cake also needs to be cooled.


Then I cut each cake into two parts with a sharp knife.

I collected the cake. First, I put the cake with poppy seeds, coated it with cream and sprinkled with crushed nuts.


I put the cake layer with cocoa and also coated it with cream and sprinkled with nuts.


So I collected the whole cake.

I greased the top of the cake and a little of the sides with cream. Sprinkled with ground nuts.


I kept the cake in the room for two hours so that it was soaked in cream, and then put it in the refrigerator until the next day.
