However, it is not easy to do, and searching for such an animal during the New Year holidays is useless. We will try to make something not complicated, but at the same time very tasty.

"Rabbit in Wine"

Us you will need:

  • carcass of a young rabbit;
  • two glasses of dry white wine;
  • half a glass of strong meat broth;
  • a couple of tablespoons of fat sour cream;
  • spices for meat;
  • two large carrots;
  • large white onion;

Washed and dried rabbit carcass, cut in portioned pieces. Peel the onions and carrots. Chop the onion into half rings and the carrots into small squares. Place half of the vegetables on the bottom of the duckling pot, now lay out our meat, and sprinkle with a layer of the remaining onions and carrots. Wash the meat, dry it and lightly freeze it in the freezer, this will make it easier for you to cut it into thin pieces that need to be beaten well on all sides. Don't be too fanatical, otherwise you might end up making holes in the meat. Lightly sprinkle the chopped fillet with salt and spices. While it is soaking, make the batter. To do this, place the egg with salt until smooth, add a little milk and flour. You will get a thick dough, like pancakes. It will need to be carefully diluted with milk until smooth. Heat a frying pan with a thick bottom thoroughly and heat the oil in it. Dip the pieces of meat into the batter and immediately into the frying pan. Reduce heat and bake until a nice, even golden color.

Cooking:

Wash and dry fish, coat thoroughly with salt and spices. Make squares out of foil on which we will bake the hake. It needs to be laid out clearly in the center. Divide the finely chopped greens into two equal parts and generously cover the carcasses with each one. Divide the butter into small cubes and also divide it into two parts and place it on top of each fish. Wrap the hake in foil, while trying to do it so that a boat forms at the bottom. If necessary, wrap in an additional layer of foil.

Bake for 30 minutes in an oven preheated to 170 degrees. Ready dish Serve directly in these boats so the wonderful sauce doesn't spill out. The hake will be surprisingly tender, juicy and aromatic, as it will be soaked in oil and herbs. Side dish The first thing we always do is mashed potatoes. Let's move away from this tradition and serve it not in pure form, but a new and quite interesting solution that will not leave anyone indifferent. And, of course, let’s not forget about rice, which is also unusual.

"Puree fries"

Us you will need:

  • potato;
  • butter;
  • spices;
  • a pair of chicken eggs;
  • flour;
  • breadcrumbs;

In other words, after boiling the potatoes, drain all the water, add oil, spices, salt and eggs and mix thoroughly to make a thick consistency. homogeneous mass. Sprinkle the table with flour and place our potato dough. Let the oil heat up in a container with high sides.

Let's return to the test. It needs to be collected into one lump (this is not easy) and distributed on a table thoroughly and generously sprinkled with flour. To roll it out into a 3 mm layer, use a film that you place on top of the dough. Now you need a mold to cut out the figures. Cookie pans are perfect. Cut out, roll in breadcrumbs and place in hot oil. When they become golden brown, remove with a slotted spoon onto a paper towel to drain off excess fat. They are delicious both warm and cold.

Old New Year is an unusual holiday!

Few people know that it is a tradition to meet new year holidays according to the new and old styles, with a difference of 13 days, appeared back in 1918. Since ancient times in Rus' January 14 was called Vasilyev Day. It was believed that this day was decisive for the whole year, bringing good luck in agriculture and high grain yields.

According to tradition, on Vasilyev's day the sowing ceremony was performed. In some regions, echoes of that ancient ritual are still preserved. Costumed adults and children walked around the houses of relatives and friends, sang prayers and scattered wheat around the house. The mummers were given gifts, and the hostess collected the wheat and hid it until the next sowing.

In Ukraine, Vasiliev's Day was celebrated with quite noisy festivities, with songs and dances. On the eve of the Old New Year, Ukrainians cooked and served buckwheat porridge By special recipe. The ritual of cooking porridge was as follows: at two o’clock in the morning, the eldest woman in the family brought cereal from the barn, and the eldest man went to fetch water from the well. Then they melted the stove together until the stove warmed up; under no circumstances should they touch the cereal or water. Already in the morning, the whole family sat down together at the table, and the woman hostess stirred the porridge, saying ritual words, after which all household members got up from the table, bowed and the hostess sent the porridge to the oven.

The finished porridge was carefully taken out of the oven and its degree of readiness was examined. crumbly porridge, promised the family a rich harvest and a happy year. This porridge had to be eaten all in the morning. If the pot of porridge cracked or the cereal fell out of it, then this was considered a bad sign and did not bode well. This mess was thrown away.

In Russia, on Vasiliev's Day they treated them to pork dishes. Vasily was the patron saint of pigs, so jelly or baked jellied meat were required on the table suckling pig or pork pies.

In many cold regions of our country, dumplings or dumplings with surprises were made. As a surprise, spices, a coin or a match were wrapped in dumplings. Each surprise filling meant something and predicted to the owner what his life would be like in the coming year.

What did our grandmothers stuff New Year’s dumplings or dumplings with, what and why:

    bread - for a satisfying life

    small coin - for money

    a large coin or paper money - for the purchase of real estate or a car

    beans - to unexpected wealth

    salt - to tears and grief

    sugar - to sweet life, passion and love

    white thread - k long journey, travel, relocation

    black thread - to a short road

    thread with knots - to life's confusion

    cherry pit or fish scales - for pregnancy, newborns or simply for increasing the family

    ring - for wedding, marriage

    button - for new things or clothing purchases

    ground pepper - to sudden changes in life, thrills

    rice - to unexpected additional income

    dill seeds - to light flirtation and temptation

    raisins - for a promotion, a change in career

    cucumbers - to good health

    flour - to torment, troubles in life

    bay leaf- to recognition and glory

    Capsicum red pepper - to new fans or to a new lover

    nuts - to two fans at once

    peas - for travel, unforgettable vacation

    black peppercorns - to new friends

    cranberry - to unrequited love

    apples - to a quiet and peaceful life

    carrots - to new acquaintances, friends or trouble in business

    garlic - to difficulties, problems in life

    caramel - to new love or renewal of love

    grain - to increase wages

    button - for new things

    dough - to replenish the family, children

If you want to make such comic dumplings or dumplings, I recommend making the filling with “good” surprises. It is much more pleasant to receive a dumpling with a good prediction than to be upset even because of a comic fortune-telling.

In addition to dumplings, the festive table was served best dishes that every family could afford.
