  1. The dough is very easy to prepare. Take one and a half glasses of flour (250 gr.), sift. Cut the cold butter into pieces and combine with flour. Using your fingertips, rub the butter and flour together to form crumbs (you don't need to rub the butter completely). Add sugar, a pinch of salt and egg yolk.

For the test we will need:
- eggs – 2 pcs.;
- sugar - 2.5 tablespoons;
- salt – ½ teaspoon;
- flour - 3 cups (maybe a little less or more, depending on how much the dough takes);
- vegetable oil – 2 tablespoons;
- melted butter – 100 grams;
- warm milk – 1 glass (200 ml.);
- dry yeast – 3 teaspoons (without a slide);

Procedure for preparing the dough

Step 1. Pour some water into a glass and pour the yeast into it; while we mix the rest of the ingredients, the yeast will dissolve. I always dissolve them in water, even if the recipe doesn't call for it. Firstly, they dissolve faster in water than, for example, in milk. And secondly, kneading dough in which the yeast is evenly distributed throughout the entire volume is better than when it remains granules.

Step 2. Lightly heat the milk, melt the butter and combine everything in a bowl in which we will knead the dough.

Step 3. Break the eggs there and pour in vegetable oil.

Step 4. Then add sugar and salt.

Step 5. Mix everything properly with a whisk until foam forms and pour in the dissolved yeast.

Step 6 Sift the flour and gradually add it to our dough. There is no need to pour it all at once, there may be a lot and the dough will turn out very tough.

Step 7 Knead soft dough. Grease a clean bowl vegetable oil, place the dough in it and cover cling film. In this state we put it in the refrigerator for an hour and a half. NOT IN THE FREEZER!!!

Meanwhile, while the pie dough is in the refrigerator, prepare the filling. I said above that I make my pie with a filling of fresh apples, apple jam and dried apricots. Therefore, pre-soaked in hot water I cut us into pieces with dried apricots. I also cut fresh apples and mix everything with apple jam. The proportions are completely arbitrary.

If you are making your pie with only apples, then cut them into slices and sprinkle with sugar. It is, of course, better to cut apples just before storing them. Otherwise they will turn black. There is another option: sprinkle the apples with lemon or orange juice, then they will not turn black and will calmly wait their turn.

Recipe: making a pie with dried apricots and apples

Meanwhile, an hour and a half has passed, the dough is ready, the filling is ready. Let's get started:
Step 1. Divide the dough into 2 parts. One is larger, the other is smaller. The one that is larger is the basis that will be smaller top part. We roll out the base so that there is enough to cover the sides of the pan in which we will bake. I have a round one. You can have a rectangular one or any other.

Step 2. We spread the filling on the base, cover with the second part of the dough, which was also previously rolled out. The diameter of the “lid,” let’s call it that way, is smaller than the base and approximately equal to the diameter of your mold.
We connect the edges of the two layers of dough (top and bottom) and braid the same braid as on. But before that, trim off the excess dough around the edges, it will be useful for decorations. Be sure to make a small hole or cut in the center of the pie. This is done so that it does not break during baking.

Cover the finished decorated apple pie with a napkin and leave in a warm place for 30 minutes to rise. Before baking, brush with egg, maybe only yolk, and place in the oven. Baking time is about 20 minutes at 180˚C. We check readiness with a toothpick by piercing the pie in the area of ​​​​the edges, where the dough is thicker.

It is advisable to take sour apples for making the pie. We use puff pastry with yeast, but you can also use yeast-free dough for cooking.


Wash, core the apples and cut them first into slices, then into small cubes.


Place our apples in a bowl. Add sugar, you can sprinkle lemon juice so that our apples do not darken. Add a little semolina to the filling so that the apple juice does not “run out” of the pies during cooking.


Add cinnamon.


Sprinkle flour on a flat surface. Lay out our dough and roll it out.


We lay out our chopped apples mixed with cinnamon and sugar. There is no need to feel sorry for the apples; the beauty of this pie is that there are a lot of apples in the filling. Cut the dough into strips, as in the photo.


We begin to form our apple pie.


Despite the fact that there are a lot of apples in the pie, they bake wonderfully. The filling is not boiled, but crispy, sweet and sour.

Ingredients:

Apples– 500-700 gr (3-4 apples)

For the test:

  • Butter - 150 gr
  • Sour cream - 100 gr
  • Wheat flour - 200 gr
  • Baking powder - 1.5 teaspoons (can be replaced with baking soda- 0.5 teaspoon, which we quench in any acid - a little sour cream or vinegar)

Sour cream filling:

  • Sour cream - 200 g.
  • Chicken egg - 1 pc.
  • Sugar - 150-200 g (2 faceted glasses).
  • Flour - 2 tbsp. spoon
  • Vanilla sugar – 1.5 spoons, optional

Let's start cooking:

Wash the apples. Heat the oil until room temperature. Sift the flour in advance.

Making the dough:

Melt 150 grams of butter in the microwave or in a saucepan and let it cool slightly.

In the meantime, add 2 cups of flour (200 g) to the container.


Add 1.5 tablespoons of baking powder and mix.


Pour in warm butter.


And add sour cream.


Mix. From the resulting mixture, begin to knead the dough with your hands.


You should get a soft, homogeneous dough.

Wrap the resulting dough in film and place it in the refrigerator for 20-30 minutes.


In the meantime, we’re making the filling for our Tsvetaeva apple pie.

Fill:

Break the egg into a clean container.

Take a full glass of sugar (approximately 150 g) if you want more sweet pie, then you can add a little more.


You can also add one and a half tablespoons of vanilla sugar. Stir, beat with a whisk or mixer until smooth. Sift the flour.


Add sour cream.

It's great to add a little vanilla. Initially, of course, this component was not in the Tsvetaevsky pie recipe, but this will help make the pie even tastier.


Mix and beat with a mixer for 2 minutes, or with a whisk.


Preparing the dough for the mold:

Grease the baking dish with butter or vegetable oil, if it does not have a slippery top layer. Sprinkle the pan with a little flour, this is the so-called “French shirt”, it is needed so that we can take out the apple pie without difficulty.

It is better to use a form with low sides, since in a high form the filling may remain liquid after baking.

We take the dough from the refrigerator, roll it out to a thickness of about a little less than a centimeter and put it on a mold previously lined with tracing paper, form small sides, make the height of the sides small, about 3-4 cm.


Let's prepare the apples:

The cream and dough are ready, let's take on the apples. It is best to cut them right before you send the apple pie to bake.

If you have already cut the apples before preparing the dough and filling, you can pour lemon juice over them, then they will not have time to darken

Take 500-700 grams (3-4 apples) of green apples. Sour varieties are suitable for this recipe; it is better to take “Antonovka”.

Peel off. Clean out the core.


For Tsvetaevsky apple pie, you need to cut the apples into long, very thin slices less than 0.5 centimeters.

Ingredients:

  • Flour – 300 g
  • Cottage cheese – 300 g
  • Butter – 200 g
  • Sugar – 150-200 g
  • Baking powder for dough -10 g
  • Egg – 1 pc.

  • Apples – 6 small pieces
