Cranberries, which belong to the lingonberry family, usually grow in swamps. Translated from Latin, the name of this berry means: swamp sour ball. Cranberries ripen in September, and the harvest can be harvested from autumn until spring. Cranberries collected in September are still hard, but during storage the berries will soften and ripen. After the first frost, cranberries become tastier. If you collected it already in the cold, then it is better to store it frozen. Well, the sweetest cranberries are those that have overwintered on the bushes, but collected in the spring, they are not stored for a long time. In Rus', cranberries have long been famous for their medicinal properties. These small sour berries have absorbed everything most necessary and valuable for the human body, being a concentrate of vitamins and useful substances, which is especially important for residents of the northern regions. The list of ailments that cranberries help with is huge. It is used as an antipyretic, it can enhance the effect of antibiotics, cleanse blood vessels of cholesterol plaques, preventing atherosclerosis, and has bactericidal properties. It has proven itself in the treatment of sore throat and respiratory diseases, improves immunity, and saves from vitamin deficiency. Juices, compotes, jelly, jelly, wine, liqueurs, and jam are made from cranberries. I offer you the easiest way to prepare this healthy berry - cranberries, mashed with sugar. This preparation has not only healing and preventive properties, but is also extremely tasty.

Ingredients:

  • 1 kg cranberries
  • 1 kg sugar

How to prepare cranberries for the winter:

Sort the berries, removing leaves, twigs, debris, rinse well, place in a colander to drain.

Grind the cranberries using any mechanical device available to you - a meat grinder, immersion blender, chopper, food processor. An ordinary crush, which can easily cope with raspberries, will not help you here, since cranberries are quite dense.

Sprinkle the pureed cranberry mixture with sugar, mix well, leave for a while, maybe overnight, so that the sugar is completely dissolved.

Then place in sterilized jars, close with boiled plastic lids (or screw on metal ones). Jars of grated cranberries should be stored in the refrigerator. Without a refrigerator, this product may turn sour or ferment.

Another tasty option for this dessert - add one orange to the same proportions of cranberries, grating it together with the cranberries. You can grate it with the peel, or without it. With this processing method, this is extremely healthy berry will retain its beneficial properties until spring.

Ready-made raw cranberry jam can be spread on a loaf, poured over pancakes, and if you put two tablespoons of grated cranberries in a warm cup boiled water, you will get a delicious medicinal drink.
