When starting to prepare the cream, first separate the yolks from the whites of the eggs. Only yolks are used for the cream, and from the whites you can make meringue or an egg white omelet.

In a deep bowl, mix the eggs (only the yolks of course) and sugar. Beat them with a whisk or mixer. To ensure that the mixture beats well and the sugar dissolves properly, use warm yolks.
