How to bake Uzbek flatbread in Redmond. Airy kefir cakes in a slow cooker

You can make wonderful garlic flatbreads in the slow cooker. These flatbreads can be served with any soup, especially borscht. They also go well with unsweetened kefir, fermented baked milk, and just with tea. Garlic flatbreads are very easy to make. And quite quickly, if you do not take into account the time of raising the dough. Garlic flatbreads come out fragrant, soft, rosy.

Ingredients:

  • Flour – 200 gr.
  • Dry yeast – 0.5 tsp.
  • Warm water – 100 ml.
  • Salt – 0.5 tsp.
  • Sugar – 0.5 tbsp.
  • Vegetable oil – for dough – 1 tbsp., for frying – 2 tbsp.
  • Garlic – 2 teeth.
  • Butter – 1 tsp.

The initial quantity of products is designed for 6 cakes.

Cooking method

I pour it into a deep plate warm water(not hot!). I add yeast. Stir and leave for 10-15 minutes.

Add salt, sugar, 1 tbsp. vegetable oil. Stir until smooth. I add flour.

I'm kneading soft dough. It will stick to your hands a little. I roll the dough into an elastic ball.

I cover the bowl with the dough cling film and put it in a warm place to rise for 1-1.5 hours. The dough should increase in volume by about 2 times.

After an hour and a half, I take out the dough. I place it on a floured surface. I knead it lightly. Then I divide it into 6 equal pieces. And I start rolling out.

I roll each piece with a rolling pin (without much zeal!) into a circle with a diameter of 10-12 cm. A thickness of 0.5 cm. I prick each circle with a fork in several places.

Pour vegetable oil into the multicooker bowl. I turn on the Frying (or Baking) program. I place the flatbread in the bowl and fry it on each side for 5-7 minutes (until golden brown).

During the frying process, the cake will “rise” in thickness.

I fit 2 flatbreads in my bowl at the same time, this speeds up the process of baking the flatbreads.

I rub the finished hot flatbreads on both sides with garlic passed through a press. And then I grease it with butter (you don’t have to grease it if you want a less fatty version).

I place them in a pile on a plate and let them sit for a while to absorb the flavors of the garlic.

The flatbreads are ready! Bon appetit! They are best served warm, but they are also very tasty cold.

Garlic cakes are prepared in a Redmond RMS-M 20 multicooker.

Today I will share with you a simple, but very delicious recipe preparing airy kefir cakes in a slow cooker.

As a child, my grandmother made fluffy kefir cakes, but on the stove. And now I began to cook them myself, and my favorite assistant, a multicooker, helps me with this. Flatbreads cooked with kefir in a slow cooker turn out much fluffier and airier than those cooked on the stove. It just takes a little longer to fry them. But if you are the owner of a powerful multicooker model, then the cooking time will be the same as on the stove.

Kefir flatbreads turn out incredibly tasty, aromatic and filling. They can be consumed with tea and coffee. You can also use tortillas instead regular bread, since they are unsweetened baked goods and contain absolutely no sugar. These cakes will appeal not only to adults, but even to small children. I hope that you will definitely use my recipe and prepare airy kefir cakes in your slow cooker.

From unsweetened baked goods in a slow cooker you can make not only flatbreads, but also... You can fry the pies or bake them.

Ingredients

For airy cakes we will need:
  1. Egg 1 piece
  2. Kefir 250 ml
  3. Wheat flour 250-300 grams
  4. Vegetable oil to taste
  5. Soda 0.5 teaspoon
  6. Vinegar or lemon juice
  7. Salt to taste

1. Pour kefir into a deep bowl. To make flatbreads, it is best to use kefir with a fat content of no more than 2.5%. Too fatty kefir is not suitable for flatbreads.

2. Add 2 tablespoons of vegetable oil and soda to a bowl with kefir slaked with vinegar. If you are going to use sour kefir, then you don’t have to quench the soda with vinegar.

4. At the very end, add wheat flour and knead the dough. The dough should be soft, elastic and not tough. Cover the kneaded dough with a towel for 10-15 minutes.

5. Roll the resulting dough into a rope and cut it into 6-8 pieces. Roll each piece of dough into a flat cake. If you want the cakes to be even, you can cut them out using a saucer. Leave the rolled out cakes alone for about 4-5 minutes.

6. While the flatbreads are resting, we pour vegetable oil into the pan. Press the “Bake” button and wait for the oil to heat up. Fry the flatbreads on both sides until done, with the lid open. Then, close the lid for 4 minutes to steam the cakes.

At the end you can sprinkle the finished cakes coarse salt. I would also recommend stacking the tortillas on top of each other, and then covering them tightly with a bag for 15 minutes. And then, you can already enjoy their unique taste.

And for lovers of lush fragrant homemade baked goods we offer to bake

Do you want to eat, but there is nothing? Yes, that's great!

Let's take what we found:

  • 1 egg
  • a little salt
  • a little sugar
  • a little vegetable oil (I took unrefined sunflower oil)

Mix all this first with a fork, gradually add flour, now the dough can be mixed with your hands. Add flour, flatten the dough on the table/board/be careful not to break the plate, fold the dough in half. And so on until you get tired of it, until the dough becomes really elastic. Probably 10+ times. Fast.

Congratulations, we got something like puff pastry. Turn on the multicooker to Baking (160-180 degrees), while it is heating up, roll out the dough into a sausage, cut off a slice from the sausage, roll out the slice into a pancake the size of the multicooker bowl. You can try to do it very thinly, but it will turn out to be dry garbage. It's better to make the dough a little thicker. At least a millimeter++.

The temperature in the multicooker is excellent: nothing will burn, you can’t get burned—everything can be done with your hands. But at the same time, our pancake bakes normally.

While it is baking, cut off the next slice from the sausage and roll it out again. Don’t forget to turn the flatbread in the slow cooker over to the other side in the middle of the process. Yeah, right with your hands. Of course, we keep the slow cooker closed the rest of the time, it should be hot in there!

Bake as much as you like. You can have a minute on the side. Possibly three or more. Depends on your multicooker, on the thickness of your flatbread/lavash/whatever-you-have-got, on your preferences.

Break off a piece. Did you like it? Take it out. If you didn’t like it, let him bake some more =)

Do this with all the sausage. It took me 40 minutes to do everything. (as much as I'd like to say it's less)

Most likely you will end up with something like this:

The flatbreads turned out to be pleasant in taste, moderately crumbly, not soggy, and flaky. Remind shortbread dough from berry baskets which cost 50 rubles each.

Why did I call these cakes dietary?

To be honest, I was full while I was cooking them, now I’m finishing the article, there are still two flatbreads left.

My cheese scones fried with kefir in a Mirta MC 2211 multicooker, with a bowl with a volume of 5 liters and a power of 900 W. Keep this in mind when frying. If your model is less powerful, you will have to bake a little longer.

Cooking method

  1. Pour kefir into a convenient bowl, preferably a tall one. The fat content of kefir does not play a special role, so you can use any.

  2. First add 2-3 tablespoons of flour and salt.

  3. Then add baking soda or baking powder and mix the dough.

  4. Grate the hard cheese on a coarse grater. It's better to use a little salty cheese. If you want to experiment, then try adding processed cheese.

  5. Add the grated cheese to the bowl with the dough and mix all the ingredients well.

  6. Wash the dill and chop finely.

  7. Add the chopped dill to the bowl with the dough. To add flavor, you can also cut olives into the dough.

  8. Add the remaining wheat flour and knead into a soft and elastic dough.

  9. Divide the dough into three parts. Make round pieces out of them. You can roll it out with a rolling pin, or you can just smooth it out with your hands.

  10. Grease the bowl with oil or simply pour it into the multicooker. Turn on the “Frying” or “Multi-cook” mode with the temperature you need (160-170 degrees). Place the first flatbread. Fry on one side until golden brown, then turn over and fry again for 3-4 minutes.

  11. Fry the rest of the flatbreads as well. When placing each finished tortilla on a plate, you can place a piece on them butter. Before serving, sprinkle chopped dill on top.
