At work: smoked salmon can be replaced with lightly salted salmon or halibut in general. Adjust the number of layers to your liking, but don't get carried away - after all, the canapé should be small and elegant so that it is convenient to eat with your hands. Would need: knife and cutting board.

Recipe: put carrots and onions in a pot of water, boil until tender, add 500 g of chicken liver to boiling vegetables. Boil everything together for 15 minutes, remove from the water and beat hot with a blender, gradually adding the broth in which the products were cooked until homogeneous mass similar in thickness to sour cream. Allow to cool slightly, add 150 g of softened butter, salt to taste. This is a very cheap but festive snack!

Cheese cream with garlic on bread toast. I already wrote about how to do it in this article a little higher (it can be used as a “pillow” for boiled pork and sausage). But the cream itself is incomparably tasty and beautiful, if you put it on a lettuce leaf using a pastry syringe.

Pies and pancakes

Small pies made from yeast or puff pastry with the most traditional filling(meat, cabbage with egg, potatoes with mushrooms) have continued success. They fly apart first! I won’t describe in detail, for now I’m just throwing up an idea for a holiday in the office. The most important - small size, also for "one bite".

Another good appetizer for a buffet table at the office, which can be prepared at home and eaten cold - spring rolls. Also tiny, of course. With red caviar or lightly salted salmon, for example. Look for a craftsman in the team, someone will definitely do it :-)!

Buffet at work: are salads appropriate?

Yes, I say boldly, as there are several ways to present them in an original way!

If you chop up the usual salad (olivier, crab, etc.) a little smaller than you are used to cutting for a regular feast, you can put it on a slice of bread or in a basket. Sometimes for salads they use disposable glasses or the most ordinary glass glasses(glasses for martini, bowls). Here's what it looks like:

Compilation rules

Before you start compiling a buffet menu, you need to know the features and rules for selecting dishes. The most important are the following:

  1. A buffet table is organized only in cases where the event will last within 2-3 hours.
  2. The buffet menu must include the following dishes: cold and hot snacks, salads, desserts and drinks. In this case, all dishes will not be laid out in portions, but in common plates.
  3. On average, 500 grams of snacks should be calculated per person. This does not include drinks.
  4. Cold snacks in the form of canapes, rolls should be of several types, but up to 7 items.
  5. For a standard buffet, it is preferable to pick up 2 or 3 salads.
  6. Hot appetizers of meat or fish can be presented with 2-4 courses.
  7. Desserts can be 3-4 varieties.
  8. The number and name of drinks is selected depending on the number of people, the season and the preferences of the guests.
  9. Highly important factor- to organize a table for service personnel. Photographers, waiters, artists and presenters at such events must also be fed.

Dishes that should be on the buffet table?

Our company "Catering Banquet" takes every order seriously. The buffet menu is thought out to the smallest detail. In this case, the dishes are then discussed with the customer and only after that it is approved. For all the time of our work, we have noticed that some types of dishes are considered classic and are standard, which, of course, are present on the menu. These include the following:

  • snacks on skewers - they are practical and easy to use. As a rule, ready-made pieces of seafood are strung on skewers, for example, mussels, shrimps, oysters. Meat is also strung, and in some cases even hams and sausages are used. It is also important to serve vegetables on skewers;
  • hot snacks in the form of cooked meat, seafood and even battered vegetables. Such dishes are often in demand. They are small in size and at the same time quite nutritious, they look beautiful on a common plate on the buffet table;
  • snack snacks in the form of balls made from mashed potatoes and cheese. They are rolled in various seasonings, resulting in a product that looks spectacular on the table and tastes good;
  • very often at the buffet table you can see dishes with chips, and pizza is also possible. It all depends on the preferences of the customer;
  • the traditional drink for a buffet table is punch. It is poured into glasses by the guests themselves.

It's good when a corporate party is arranged by professionals. They will come up with an entertainment program, decorate the room, make a menu and order from the chefs necessary meals. But sometimes you have to organize a holiday on your own - decide on your own where people will relax, what contests and games will decorate the event, what to cook for a corporate party.

The fundamental difference between a buffet table and other forms of serving treats at a celebration is that guests themselves take drinks and consume them without sitting at the table. In fact, the buffet table does not even imply the presence of chairs - this is convenient for dance parties, where mostly young people gather. What foods would be appropriate?

Canape

Perhaps, canapes can be called the easiest dish to make. After all, it only takes a few finished products and a beautiful skewer. What will go well together?

  1. Round cracker, cream cheese, a piece of lightly salted fish.
  2. Cherry tomatoes, mozzarella ball. Optionally, you can add olive oil.
  3. A banana slice, half a strawberry, or a whole berry.
  4. fresh tomato varieties Cream, a slice of lemon, any smoked meat.
  5. Cheese, pineapple, shrimp or a piece of boiled chicken breast.

To keep canapés fresh and beautiful on the table, they should be cooked just before serving. So it's better to bring everything with you necessary ingredients in an uncleaned (not unpacked) form.

Small rolls look very festive. It may take some time and effort to prepare them, but they will most likely be to the taste of most.

  1. Lavash or pancakes. From one finished pancake you will get about 4-5 rolls, and from a sheet of pita bread - at least 10 pieces. Pancake or pita bread is smeared with a thick layer of cream cheese, lightly salted red fish is placed on top, rolled tightly into a roll, wrapping it cling film. After an hour or two in the refrigerator, the dish is cut into portions and decorated with herbs or lemon.
  2. Hot rolls from chicken meat. To get 10 servings, you need 2-3 pieces. chicken fillet and any stuffing. For example, vegetable: 1 onion, 1 carrot, 1 bell pepper cut into strips and fry almost until tender with salt and pepper. Cool the mixture, add the olives cut in half and cheese sticks, put everything on the beaten fillet, roll up the roll and bake in the oven (time - 25 minutes, temperature - 200 ° C). Cut the cooled food.

The buffet menu for a corporate party also includes vegetable or fruit skewers, tartlets with various fillings, profiteroles with pate, snack balls, cold cuts etc. The main thing is that any dish can be quickly eaten on the go.

Banquet

A banquet is usually held on some major holidays, because this form is the most identical of all possible. Guests sit down at one large table or at several small ones, on which the same treats are displayed. It can be difficult to organize a banquet with your own hands, but if the team is not too large, then this task is quite feasible.


Cooking dessert or not depends on how much time will be allotted for the entire party. In extreme cases, you can get by with fruit and chocolates in boxes.

Buffet

The buffet is very comfortable shape serving treats at any holiday. The set of dishes will be similar to that expected for a buffet table, however Buffet at a corporate party may include salads and meat dishes to be eaten with a knife and fork. What dishes to include in the menu?

  1. Cheese steaks. A piece Adyghe cheese collapses into breadcrumbs mixed with pepper, salt, paprika and turmeric, and fried in very hot oil for 2 minutes on each side.
  2. Fresh vegetable salad: tomatoes, cucumber, bell pepper, onion, herbs. If a corporate party takes place in winter, then fresh vegetables are unlikely to be tasty, so it is better to prepare another salad.
  3. Grilled meat. Easiest to cook chicken breasts, they are soaked for half an hour in a mixture soy sauce, olive oil and spices, and then grilled for 5-7 minutes on each side. The breasts should be served separately with several sauces to choose from: creamy, tomato, cranberry, etc. You can buy them at the store or make your own.
  4. Garnish. Vegetables are served as a side dish on the corporate menu in the office: boiled green beans, cauliflower, carrots, steamed broccoli. Baked young potatoes with butter and herbs look very appetizing.

When the list of dishes is made, it remains only to take care of the drink. If it's hot outside, then the tables must be present plain water, mineral water and juices. If everyone in the company believes that it is necessary to prepare alcohol for the holiday, then this should be taken care of. Perhaps only champagne and red wine will suffice.

I don’t know how relations develop in other work collectives, but in ours idyll and mutual understanding reign. We consider each other as members of the family, and we are used to celebrating various holidays with the whole company. Of course, right at the workplace. The birthday of each of us is a special occasion. Since it turned out that the team is creative, each birthday person, setting the table, seeks to surprise his beloved colleagues. Or, at the very least, leave them satisfied and satisfied.

There are 30 people in our team, I think about the same number work in your teams. For such a large number of colleagues, a table of snacks and sandwiches is suitable. I offer you several options for not very expensive menus to celebrate a birthday at work.

It is better to mix the styles of different cuisines of the world, since it is unlikely that you will be able to guess the gastronomic preferences of each of your colleagues. It would not be very polite to bring only pizza or sets of rolls. Strive for variety. The cost of ready-made snacks is based on 30 people.

  • Tartlets with salad. For this snack, you need to purchase only salted or unleavened tartlets, but not with raisins or powdered sugar. 30 baskets with a diameter of about 5 cm will cost 150-200 rubles. You can cook any salad, it is better to choose a simpler option. For example, finely chop smoked chicken and chinese cabbage, season with mayonnaise. Or grated cheese with garlic. The first option is more neutral, because not everyone likes the stable taste of garlic, which does not evaporate even in a day. The approximate cost of this option is 300 rubles.
  • Sandwiches with salted salmon. As a fish, you can use trout or salmon, it is better to take a crispy wheat baguette from bread - then slices of bread will ideally fit under pieces of fish. Can add butter, but not necessarily - too much trouble, and the taste of sandwiches will turn out to be very tender and pleasant anyway. The cost of 30 sandwiches is about 350 - 400 rubles.
  • Ham rolls with stuffing. It is better to take ham in the store where sellers can cut it for free. No matter how sharp your kitchen knife is, the machine will do it better than you. As a filling - grated eggs with cheese and garlic, seasoned with mayonnaise, fried champignons or finely chopped pineapple slices. Fasten the finished roll with a toothpick for reliability. Estimated price of 60 rolls - 300 rubles.
  • Any canapes. The beauty of the dish is that it looks festive, and one hundred percent enough for everyone. Options: slice of cheese and olive, slice white bread and a piece salted trout or pink salmon, a slice of black bread, a slice of pickled gherkin and a slice of smoked sausage, cherry tomato and mozzarella. It is better to cook sandwiches with different fillings. This option will have to spend from 200 to 400 rubles.
  • Home rolls. Option to cook Japanese dish at home is suitable for those who have already done this more than once, since there are few ingredients for cooking. Additionally, they purchase a makisa (mat), rice vinegar and the algae themselves. If everything is available, you can cook rolls. Moreover, this is the most convivial dish. As toppings - salmon, shrimp and crab sticks, the best office option. Roughly speaking, for 30 people we will prepare 10 rolls with different fillings. If each is divided into 6 pieces, we get 60 mini portions for colleagues. Approximate cost - 400 rubles.

It was these options for treats on the office table that seemed to me the most interesting, because they satisfy different tastes and wishes. If time does not endure, you can order the delivery of pizza or the same rolls, buy cheese, meat and sausage cuts in the store.

Those who are serious about cooking can cook independent dish. So, some of my colleagues brought self-made manti or home-made dolma to work. Ready meals it turned out a lot, and the birthday boy received a lot of compliments and rave reviews.

Some birthday people have been accustomed to treat their friends with sweets since childhood. You can do this even in adulthood. As treats, sweet tartlets with confiture or ice cream, small cakes, sweets, cut fruits will look good.

Cooks can prepare treats themselves: bake pies, donuts with powdered sugar or cookies.

There are not so many options here, because homemade homemade compote hardly anyone will take you to work. As a rule, they buy tea bags on the table (packaging is just enough), a couple of boxes of juice or lemonade. Alcohol is not drunk in all groups. If you decide to put it down with just such a drink, check in advance if there are unspoken rules on this matter. Perhaps in some offices they allow you to drink a glass during the lunch break or at the end of the working day, somewhere the strictest dry law works. Someone collects money and gives a tight envelope, somewhere they throw off for a general gift, somewhere everyone gives something special. If your team has special traditions, try to observe them, even if there is not an extra hundred in your wallet.
