Preparation

Mix thoroughly with a mixer warm water, butter, flavoring and lemon juice with syrup or melted honey. Continuing to beat, gradually add cocoa, sifted flour, then nuts.

Vegetarian dough

Pour the swollen agar-agar into the broth and bring to a boil, stirring. Cool. Stir a third of the broth with chilled sour cream until smooth. Chop the vegetables and place them on top of the frozen sour cream mixture. After this, carefully pour the remaining broth on top and wait until the dish hardens.

4. Cheese lasagna

  • Ingredients: pack of lasagne sheets, 50 grams of mozzarella, 300 grams of Almette cheese, 300 grams of Parmesan (or any hard cheese), 250 grams of cream cheese, cream (20% fat), nutmeg and salt.

Cook the lasagne sheets for 3 minutes. Then grease a baking dish with butter and place the chopped soft cheese. Next, layer your ingredients in the following order: lasagna sheets, cream cheese, lasagne sheets, curd cheese and half the mozzarella, lasagna sheets, cream cheese, lasagna sheets, the rest of the mozzarella and more lasagne sheets. 8. Shah-pilaf

This dish will stand out on your table, and it's safe to say that your guests will be delighted with it. Shah-pilaf is a traditional Azerbaijani dish that is served only on major holidays.

  • Ingredients: half a kilogram of basmati rice, 150 grams of raisins, dried apricots and cherry plums (or other sour dried fruit), 250 grams of walnuts, 3 carrots, a pack of butter and a package of thin pita bread.

The most important nuance in preparing this dish concerns the type of rice. The main thing is that it is long-grain (basmati - best variety) and properly cooked. To begin with, the rice is soaked for half an hour in cold water. Next, rinse thoroughly. Cook rice in water with a ratio of 1 to 3 for 3-5 minutes. During cooking, add salt to taste. As a result, the rice should acquire a uniform color, but remain slightly undercooked. Place it in a shallow colander and pour boiling water over it.

Fry the chopped dried fruits in a frying pan using a third of the oil. After a few minutes of frying, add 2 tablespoons of sugar and a little salt to the dried fruits. This will coat the fruit with a layer of sugar, reminiscent of caramel.

Sauté diced carrots in vegetable oil. Also fry the walnuts, broken into pieces, in a frying pan. Cut the pita bread into 5-centimeter strips and melt the rest of the butter.

It is necessary to cook pilaf in a deep bowl. It is greased from the inside with oil and covered with strips of pita bread in 2 layers so that they cover the entire surface of the dish “overlapping” and so that their ends hang down from the dish. Next, rice is laid in a 1 centimeter layer, followed by dried fruits and a layer of ghee. Next again rice, carrots, nuts and butter. Everything ends with the last layer of rice and is wrapped in “tails” of pita bread, which are once again greased with oil on top.

Shah pilaf is prepared in the oven at 200 degrees for 20-30 minutes. The pita bread should be covered with a golden crust.

9. Cake “Bird's milk”

We all know this cake from childhood, but few people cook it at home. But in vain, because the recipe is quite simple.

  • Ingredients: half a liter heavy cream(33%), 400 grams of 25% sour cream, half a liter of milk, 450 grams of sugar, 4.5 teaspoons of agar-agar.

To prepare the glaze separately, you need to take 100 ml of water, 2 tablespoons of sugar, half a teaspoon of agar-agar, 3 teaspoons of cocoa.

Cream, sour cream, 400 grams of sugar and vanillin must be mixed and stirred with a mixer for 10 minutes until thick and homogeneous. The container with the resulting mass must be placed in a plate or pan with hot water so that the mixture warms up well.

Next, grease the glass form with vegetable oil. Agar-agar should be mixed with milk and the rest of the sugar (50 grams or 3 tablespoons). Over low heat, bring the resulting mixture to a boil, stirring it constantly. The agar-agar should dissolve, after which you need to turn it off and let the mixture stand for 3 minutes. Then beat the mixture of sour cream and cream with a mixer and in the process add a mixture of milk and agar-agar. We put everything in a glass form, level it and put it in the refrigerator.

Mix the glaze ingredients and bring to a boil. Next, after cooling to 50 degrees, pour them on top of the main mass of the cake and wait until the glaze hardens. In an hour, the cake will be ready to slice and eat.

10. Baklava

There are variations of this dish huge amount, and each of them is good in its own way. Here is one recipe for making baklava at home.

  • Ingredients: a glass of milk, 50 ml of sour cream, 60 grams of butter, a quarter spoon of soda and four glasses of flour, some roasted walnuts and half a liter refined oil. For the syrup you will need half a kilo of sugar and 200 ml of water.

You need to pour the melted milk into it butter, add sour cream and soda and knead the dough, adding flour gradually so that it becomes thicker. Leave the covered dough for 10 minutes. Divide it into small pieces or balls, which you then roll out one at a time as thinly as possible on the table, allowing the resulting sheets to dry on each side for 5-10 minutes. Place the sheets one on top of the other, roll them into a roll and cut at an angle of 45 degrees. The edges of the dough should not stick together.

Pour vegetable oil into a deep frying pan and fry the rolls in it until golden crust. Place them on a plate lined with napkins and let cool.

Mix sugar with water and bring to a boil (after this you can add honey to taste). Dip the cooled baklava into the hot syrup for 1 minute. Place on plates and sprinkle with crushed nuts.

As you can see, a vegetarian holiday table will not only be nourishing and tasty, but also original. At the same time, fans of the “classic” New Year's dishes won't be disappointed.
