Step 1: prepare the rabbit.

We take a cleaned rabbit carcass, remove the heart, lungs, kidneys, stomach, navel from it and rinse it under cold running water from blood and any other contaminants. After we dip the carcass with paper kitchen towels from excess moisture, put it on a cutting board and chop with a hatchet into smaller pieces (9 - 10 centimeters). Leave the cut on the cutting board and immediately proceed to the next step.

Step 2: Roast the rabbit.



We turn on the stove to the middle level and put on it a deep frying pan with 50 milliliters of vegetable oil. When the fat is hot, carefully place the rabbit pieces in it and fry them until golden brown, almost dark brown. From time to time, helping ourselves with a kitchen spatula, turn the rabbit meat from side to side for more even frying.

Step 3: prepare vegetables and herbs.



We do not waste time in vain, while the rabbit is fried, we prepare vegetables with herbs. Using a kitchen knife, peel the onion, and cut off the rhizome from each mushroom. We wash them from sand under a stream of cold running water along with parsley sprigs. We dry the onions and champignons with paper towels, just shake the greens over the sink, getting rid of excess liquid. Then, one by one, we lay them on a cutting board and cut the mushrooms into layers up to 5 millimeters thick.

After the vegetables start the juice, add the fried rabbit to the pan, pour 250 milliliters of pure water there, add 1 tablespoon of vegetable seasoning, salt, black pepper to taste and bring the liquid to a boil. After boiling, reduce the temperature of the stove to the lowest level, cover the pan with a lid and simmer the rabbit with mushrooms 20 minutes. During this time, mix in a deep plate 250 milliliters of sour cream and 1 - 1.5 tablespoons of wheat flour.


After the required time has elapsed, we taste the sauce, if necessary, add more salt, spices and pour a mixture of sour cream and flour into the pan. We again cover the container with a lid and continue to simmer the rabbit for another 10 - 15 minutes. During this time, the meat will soften and the sauce will thicken. After turning off the stove, let the meat brew under a closed lid for another 5 - 7 minutes, then lay out the pieces of rabbit and mushrooms on plates, serve the meat with any side dish you like, sprinkle each serving of a chic dish with chopped parsley and serve the fragrant dish to the table.

Step 6: serve the stewed rabbit with mushrooms.



Rabbit stewed with mushrooms is served hot as a second hot dish. You can serve this yummy with any boiled cereals, pasta, vegetable purees, salads, rice, or whatever your heart desires. How to cook a rabbit in a slow cooker

In the oil where the rabbit was fried, fry finely chopped two cloves of garlic. We add meat, bay leaf, pepper, oregano, a cube of chicken broth, as well as wine with onions and carrots, in which it was marinated. If the liquid is not enough and it does not cover the rabbit, add a little water. Cook for 5 minutes over high heat, skimming off the foam. Then we switch the program from “Baking” to “Stew”, set the time to 1 hour.


After 45 minutes, open the lid of the multicooker, add the mushrooms to the meat and cook until tender without a lid for another 15 minutes to thicken the gravy.
