Capercaillie nest refers to those salads that make their design. Without this, a standard salad will appear on the table, nothing more. What makes a capercaillie appetizer a nest? This is worth talking about in detail. But first, a brief description of the dish itself. The key ingredients of Capercaillie's Nest are 4 foods: chicken, potatoes, eggs and cheese. Everything else may vary. Lettuce is assembled according to standard technology. Layers, in the case of preparing a puff salad, are stacked in a certain sequence, with mayonnaise layers between them.

The finished structure is surrounded by thinly sliced straws and deep-fried potatoes, which gives the dish the shape of a nest. The top of the salad is sprinkled with herbs, usually finely chopped dill, on which several eggs are laid out. Eggs can be either real (boiled quail) or made from grated cheese with a variety of additives. In general, there is nothing complicated in preparing the Capercaillie's Nest salad, but it looks very impressive. Consider the recipe in more detail, with step by step photos and instructions.

  • Chicken fillet- 300 grams
  • chicken eggs- 6 items
  • fresh cucumber- 300 grams

  • How to cook Capercaillie's Nest Salad

    1 . Boil chicken fillet in salted water. Cool and disassemble into fibers.

    2
    . Wash the fresh cucumber, dry it, cut off the tails, cut into strips.

    3 . Peel the onion from the husk, cut into thin half rings.

    4
    . Boil eggs for 5 minutes in boiling water. Drain, hold for 5 minutes in cold water, peel. Separate whites from yolks. Place the yolks in a bowl and crush with a fork.

    5
    . Add mayonnaise to the yolks (better), gradually, in small portions, 0.5-1 teaspoon each. mix and check the consistency. You should get a thick, pliable mass for modeling, holding its shape.

    6
    . Dill, finely chop 1 sprig and add to the egg mass. Roll up “capercaillie eggs” from the resulting mixture, first divide the yolk mass into 10-12 equal parts. We made 10 eggs, they turned out to be large for such a nest, so it's better to make 12 pieces of a smaller size.

    7
    . Now you need to cook the Pai potatoes. To do this, grate raw peeled potatoes for Korean carrots. Rinse with cold water 3-4 times, the water after washing the potatoes should remain clear, without starch.

    8
    . Spread the potato strips on a cotton towel and pat dry. This must be done before you lower the potatoes into the boiling deep fat.

    9
    . Heat the oil in a saucepan, bring almost to a boil, to a light haze. You can check the readiness of the oil by throwing one potato straw into it, it should hiss. So you can lay a serving of potatoes. 400 grams of raw potatoes will make about 5 servings of Pai potatoes. Potatoes dipped in boiling vegetable oil will gradually begin to acquire a ruddy color, when browned, remove with a slotted spoon and spread on a paper towel to absorb excess oil. Do not go far from the stewpan, the potatoes are fried quickly.

    10
    . Mix the ingredients of the salad: cucumber, onion, chicken, chopped egg whites on a coarse grater, 2 handfuls of potato pie.

    11

    . Add 2-3 sprigs of greens (dill or parsley) to the top. And put in the center "capercaillie eggs". Decorate the edges of the salad with greens.

    Delicious salad Capercaillie nest is ready

    Bon appetit!

    Capercaillie's nest is a kind of salad, which, by the will of fate, is classified as traditional Russian cuisine. There is no point in arguing with this statement. To the Russian, so to the Russian.

    The main motivation for such a conclusion is that one of the main ingredients of this salad is chicken, instead of which only capercaillie meat was allegedly used before. Maybe this is so. At least, it is only known for certain that for crowned persons such a salad was prepared with game. And yet, what does Russian cuisine have to do with it? Capercaillie were found not only on the territory of modern Russia.

    What is completely incomprehensible is why the second name for such a tasty and unusual snack is "Cuckoo's Nest". They definitely didn’t eat cuckoos either in Russia or in other European countries. But the fact that similar salads were loved not only by Russian monarchs is known for sure. There is a similar recipe, for example, in French cuisine.

    Over the past century and a half, the recipe for Capercaillie's Nest has changed a lot. This is due to many factors. Some products disappeared from store shelves, others became regular guests on the tables of many people.

    During the same period, numerous varieties of this cold snack appeared. After all, the equipment of modern kitchens allows not only famous chefs to experiment and create culinary masterpieces. But a classic will always be a classic. So let's start with her.

    Classic layered version

    This version of the salad is considered the closest to the one that was once cooked with game. It involves laying out the ingredients in layers, each of which is smeared with sauce. In order to serve the classic salad Capercaillie's Nest, you will need the following products:

    • chicken fillet (preferably breast) - 400 g;
    • chicken and quail eggs - 4 pcs.;
    • fresh cucumbers - 1-2 pcs. (about 200 g);
    • onion - 1 large head;
    • hard and processed cheeses - 100-120 g each;
    • garlic - 2 cloves;
    • sugar and vinegar - 1/2 and 2 teaspoons, respectively;
    • dill - 1 bunch;
    • mayonnaise - for dressing;
    • salt - to taste.

    Rinse potatoes, peel and cut into thin bars. In principle, you can simplify the task and grate it on a special grater for cooking Korean carrots.

    Heat a sufficient amount of oil in a frying pan and fry the potatoes until a pleasant golden color. The result should be almost french fries. Put the finished “product” on a dish covered with a paper towel to remove excess oil.

    Boil the chicken fillet in water with a little salt and cut into thin sticks or divide into fibers. Boil both types of eggs and cool. Grate chicken eggs. Cheeses also need to be grated, each in his own bowl.

    Cut the onion in half and chop into half rings, lightly salt, add sugar and vinegar, mix and leave to marinate for 10-15 minutes. Just finely chop the dill. Cucumbers cut into strips, as thin as possible. If desired, you can again use a grater for Korean carrots.

    Now we need to collect lettuce and turn it into Capercaillie's Nest. In the classic recipe, the layers are arranged in the following order (from bottom to top):

    1. layer - pickled onions;
    2. layer - chicken (grease with mayonnaise);
    3. layer - cucumber straws (make a grid of mayonnaise);
    4. layer - chicken eggs (grease with mayonnaise);
    5. layer - hard cheese.

    In the center of the salad, using the back of a tablespoon, you need to make a small indentation, and then make a mayonnaise net on top. Cover the recess with half of the chopped greens. Now the end part of the salad must be overlaid with french fries to make it look like a bird's nest.

    It remains to stuff the quail eggs. To do this, they must be cleaned, cut into halves and the yolks removed from there. Mash them in a bowl with a fork, add dill, crushed garlic and melted cheese. Mix the ingredients thoroughly and fill the egg whites with the resulting mixture.

    Put stuffed quail eggs in the center of the salad on dill and ready-made classic salad Capercaillie nest can be served at the table.

    Capercaillie nest with smoked chicken

    This type of salad is a simplified version of the classic recipe. The difference is not only the use of another meat product as a "game", but also the assembly of the salad. But more on that later. Let's start with the ingredients, which include:

    • smoked chicken meat - 400 g;
    • potatoes - 3-4 medium-sized root crops;
    • hard cheese - 150 g;
    • pickled mushrooms - 300-400 g (porcini mushrooms are best);
    • pickled cucumbers - 2 pcs.;
    • chicken and quail eggs - 3 and 8 pcs. respectively;
    • green onion - 1 bunch;
    • vegetable oil - for frying;
    • mayonnaise - for dressing;
    • salt - to taste.

    Grind the chicken meat into small cubes, after separating it from the bones. Cut the peeled raw potatoes into thin sticks or grate on a “Korean” grater. Fry chopped root vegetables in oil until crispy. Put the resulting french fries on a dish lined with napkins or paper towels. This will remove excess oil from it.

    Boil eggs. Quails are easy to peel, and chickens are finely chopped. Cut cucumbers and mushrooms into strips. The thinner the straws turn out, the tastier the salad will turn out. Chop the onion as small as possible. Grate the cheese on a shredder. In a bowl, mix chicken, mushrooms, cucumbers, chicken eggs and cheese. Salt, season with ready-made mayonnaise, and then mix well.

    Put the resulting salad Nest of Capercaillie on a flat dish. Fill the center with green onions and put quail eggs on it. It remains only to overlay the salad with french fries to make it look like a nest.

    Salad variant Capercaillie nest with beef

    Chicken meat is not considered by many to be a particularly suitable ingredient for salads. There is an opinion that it is dry. This is, of course, a matter of taste. But it was for such people that the Capercaillie Nest salad with beef was invented.

    The ingredients of this variety are almost the same as in the version with smoked chicken. Only instead of 400 g of smoked poultry meat, you need to take the same number of grams of beef or veal.

    The meat must be boiled in brackish water, cooled to an acceptable temperature and cut into relatively small cubes. Further technology for the preparation of Capercaillie Nest is fully consistent with the previous one. All ingredients are mixed, laid out on a dish and decorated with french fries, onions and boiled quail eggs.

    Recipe with ham or sausage

    An excellent ingredient for the Capercaillie's Nest salad is ham or sausage. Mushrooms are also a good addition. So lovers of these products should stop at this option. And you will have to prepare for it:

    • ham or sausage - 350 g;
    • potatoes - 4-5 medium-sized root crops;
    • processed cheese - 150-200 g;
    • canned champignons - 200 g;
    • chicken eggs - 5 pcs.;
    • dill - 1 bunch;
    • garlic - 2-3 cloves;
    • vegetable oil - for frying;
    • mayonnaise - for dressing;
    • salt - to taste.

    The technology for making salad is quite simple and standard. First you need to make french fries, i.e. cut it into sticks, fry in a sufficient amount of vegetable oil and dry on a paper towel.

    Finely chop the ham / sausage, eggs, mushrooms and a third of the dill, mix in a bowl, season with salt and season with sauce. Put the finished salad mixture on a flat plate in the form of a slide with a recess in the center. Sprinkle the second third of dill on top, and then overlay potatoes on all sides. Lay eggs cooked from cheese in the center. It's not hard to make them either. To do this, mix cream cheese grated on a shredder, finely chopped dill and garlic crushed in a crush. It is from the resulting mixture with the help of a teaspoon to form a semblance of testicles.

    Capercaillie nest with chicken, mushrooms and carrots

    Salad Grouse Nest is quite satisfying. However, you can turn it almost into a main dish by adding a few more ingredients. After all, it already contains potatoes and meat. For males, this is just what you need. The ingredients you will need are the following:

    • chicken meat (fillet) - 350 g;
    • potatoes - 5-6 medium-sized root crops;
    • pickled mushrooms - 300 g;
    • fresh cucumbers - 2 pcs.;
    • carrots - 2 medium-sized root crops;
    • onions - 2 medium heads;
    • chicken or quail eggs - 3 or 6 pcs. respectively;
    • processed cheese - 80-100 g;
    • garlic - 2 cloves;
    • vegetable oil - for frying;
    • mayonnaise, herbs, salt, pepper - to taste.

    Boil both types of eggs and chicken fillet in different saucepans, then cool. Peel the potatoes and cut into thin slices. Fry the prepared root vegetables in oil and put in a colander to drain excess fat.

    By the way, you can make real french fries. To do this, already chopped root crops must be marinated in a mixture of water, a tablespoon of vinegar and the same amount of sugar. It is necessary to keep the potatoes in the marinade for a couple of hours, then send them to the refrigerator for at least an hour and only after that throw them into the heated oil. It takes longer but tastes better.

    Peel onions and raw carrots. Cut the onion into quarters of rings, and carrots into strips. In a frying pan, change the oil after the potatoes and fry the onion along with the carrots. Cut the chicken into strips or disassemble into fibers. Mushrooms, if possible, cut into strips. Do the same with cucumbers. Peel the eggs and separate the yolks from the whites. Only squirrels will go to the salad, so they need to be cut into thin sticks. Set aside the yolks. They will be needed to decorate the salad.

    When all the ingredients are prepared, you can start assembling the salad. The layers will be laid out as follows:

    layer 1 - mushrooms;

    layer 2 - chicken fillet (slightly salt, pepper and grease with mayonnaise on top);

    layer 3 - carrots with onions (grease with mayonnaise on top);

    layer 4 - cucumbers (lightly salt);

    layer 5 - egg whites (grease with mayonnaise on top).

    From above and a little from the sides, overlay a slide of lettuce with potatoes. Capercaillie's nest is ready. It remains to decorate it with artificial eggs or figurines of chicks made from the remaining products. To do this, you need to take egg yolks, mash them with a fork and add grated cheese, chopped greens as finely as possible and a little mayonnaise to them. Mix the workpiece properly and form the necessary figures with which to decorate the top of the resulting salad.

    salad recipe without potatoes

    It is difficult to say that this option is easier than all other varieties of Capercaillie's Nest. However, if for some reason someone does not like french fries in a salad, then it can be easily replaced with carrots.

    Such a salad is prepared in the same way as the previous version. The only caveat is that onions are fried without carrots. And the root crops are peeled, cut into strips and fried in oil until tender. When assembling, it is from carrots (instead of potatoes) that the Capercaillie nest itself will be formed.

    Variant with cabbage and quail eggs

    But this is really a lighter version of the famous salad. It uses a minimum of high-calorie foods. He, of course, not quite dietary, but still. It will also appeal to those people who love Beijing cabbage. Although, if this vegetable is not available, then our variety of cabbage is quite suitable. The taste will not deteriorate from this. For such a salad, you need to prepare:

    • chicken meat (fillet) - 100 g;
    • Beijing or ordinary cabbage - 100 g;
    • fresh mushrooms - 100 g;
    • onion - 1 head;
    • quail eggs - 5-7 pcs.;
    • hard cheese - 100 g;
    • green apple - 1 pc.;
    • lemon - 1/2 pc.;
    • nuts - 5 pcs. (preferably almonds, but hazelnuts or walnuts will do);
    • vegetable oil - for frying;
    • mayonnaise, salt - to taste.

    Cut the onion and mushrooms into strips, and then fry in vegetable oil until tender. Lightly salt the prepared ingredients. Boil chicken breast and eggs in water and cool. In the process of cooking, it is better to salt the meat a little.

    Cut chicken, cheese, cabbage into strips, setting aside a little of each chopped product for salad dressing. Immediately advice: cabbage can be set aside a little more - about half of the available amount. Cut the apple in half, free from the core and also cut into strips. So that the fruit prepared in this way does not darken, it must be sprinkled with lemon juice. A little chopped apple should also be put aside on a separate plate.

    Put the main part of the chopped ingredients in a deep bowl, add mayonnaise and mix very well. Put the prepared salad base on a dish in the form of a slide, a capercaillie nest with a flat top. Cover the entire top of the salad with the set aside ingredients, to which you do not need to add mayonnaise. Fill the very middle of the top with chopped nuts, and lay quail eggs peeled from the shell on them.

    More variations on a theme

    The conclusion that can be drawn after analyzing all the recipes presented above is quite simple: it is not so difficult to make a Capercaillie Nest salad, and the varieties of lettuce differ little from each other. But this does not mean that there is no room for imagination at all.

    For example: a Korean carrot can be a great substitute for french fries. If you choose the ingredients that match with it and decorate the Nest with a Korean-style finished carrot, you will also get both tasty and beautiful.

    And you can cook any favorite salad and overlay it with crispy potato chips, again getting a semblance of a salad Nest of a wood grouse or a cuckoo, or a swallow. The point is not in the name.

    17. Sprinkle the top with potato chips.

    18. Deepen the middle, place bird eggs there.
