How to make margarine pie

First of all, I would like to say about margarine. Choose a quality product. Ideally, one that is specifically designed for baking. Or the one that is labeled as creamy. A variety of spreads and so-called "soft" oil will not work. If you don’t have margarine, then you can replace it with a mixture of 150 grams of butter and 50 ml of vegetable oil.

We send flour and sugar into a bowl of rather impressive size, in which we will prepare the dough for the pie. The cake turns out to be large, so a small bowl will not work here. Next, you need to put soda there - we do not extinguish it with anything, salt, and chicken eggs. I don’t soften margarine, I just cut it cold into small pieces, and also send it to a bowl.


Knead the dough. It is very dense, but it does not stick to my hands, on the contrary, sometimes I have to add even a spoonful of ice water so that it does not crumble when kneading. Do not add more, otherwise the dough will start to stick to both the dishes and your hands. In general, it is not necessary to add water at all, because a lot depends on the properties of the flour - sometimes it is possible to make a very tasty and good cake without it at all.


After kneading a smooth dough, divide it into two approximately equal parts. Put in a bag that you need to leave in the freezer for an hour. The dough will freeze well, and it will be much easier to grate it.


I rub both the bottom and the top, so the cake turns out a little more fluffy and airy. But you can not freeze one part, but simply roll it out with a rolling pin - it’s also delicious. And opt for sour jam, or at least sweet and sour, otherwise the cake will turn out cloying.

    Wrap the dough in plastic wrap and refrigerate for at least 1.5 hours, preferably overnight. Form products from the dough and bake them, after brushing them with an egg with the addition of a couple of drops of sunflower oil or water.

  • 1 egg yolk (whole egg)
  • 1 tbsp fat sour cream
  • a pinch of salt

Recipe for making a simple dough (sweet)

  1. Sift flour with salt on the table. Add vanilla and regular sugar. Add lemon zest if desired. Place the butter cut into small cubes on top.
  2. Chop the flour with butter with a knife. As a result, you should get a homogeneous flour crumb. You can do the procedure in a combine.
  3. Crack an egg into a clean bowl and lightly beat it with a fork or whisk. Pour the egg into the flour crumbs.
  4. Stir. If the dough crumbles, put 1 tbsp into it. sour cream. When preparing this dough, you can add eggs and sour cream immediately. If you want to make a lean dough, you can replace the sour cream and eggs with 5-6 tablespoons of cold water.
  5. Knead the dough, roll it into a ball and wrap it in cling film. Keep it in the refrigerator for at least 40-60 minutes (or longer).
  6. Unsweetened dough is prepared in a similar way, while it is necessary to exclude: sugar, vanilla sugar and lemon zest.

Lean yeast dough

For those who adhere to Lent, we offer a recipe for Lenten dough, the ingredients do not contain milk and eggs. Products from it, unlike conventional yeast dough, are more coarse-pored. Products made from lean dough are better stored: they stay soft longer and do not get moldy.

To prepare a simple dough you will need:

  • 5-7g dry yeast or 25g live yeast
  • 3 tsp Sahara
  • 1 glass of water
  • 1.5 tsp. salt
  • 3-3.5 cups flour
  • 3-5 tbsp vegetable oil

  1. Pour warm water into a deep bowl, put yeast and sugar in it, stir so that they are completely dissolved.

Need:

  • Wheat flour - about 4.5 cups (this is about 600 grams)
  • Margarine (preferably "Creamy", you can generally replace with butter) - 300 grams
  • Cold boiled water - incomplete glass, about 4/5 cup (about 180 grams / ml)
  • Chicken egg - 1 piece
  • Baking powder - 10 grams (about 1 teaspoon), can be replaced with 0.5 teaspoon of soda, "repaid" in 1 tablespoon of vinegar (comment "for dummies": put the right amount of soda in a tablespoon and pour vinegar - foam is formed , then shake the contents of the spoon into a bowl with the future dough).

Cooking:

Cut margarine (or butter) with a knife into small pieces in a large bowl (in the one in which we will make the dough). We put the bowl on the stove at the minimum heat level and, be sure to stir constantly and not allowing it to boil, melt the margarine to a liquid state, after which we remove the bowl from the stove.

Add cold water and an egg to the bowl with melted margarine (previously “shattered” by mixing the protein with the yolk in a cup), then pour in the baking powder OR add soda “extinguished” with vinegar and mix (in this case, a certain amount of foam is formed). Mix everything until smooth.

After intensive mixing, the foam will quickly disappear.

Gradually add flour to the bowl (we admit to you, we usually do not sift it!).

Mix the dough first with a spoon, while it is still relatively liquid and “sticky”.

Then knead the dough with your hands (do not forget to lightly flour your hands before starting this process so that the dough does not stick to your hands so much). Knead until the dough starts to come off your hands and from the sides of the bowl (don't worry, this whole process takes just a few minutes). We form two lumps from the dough: one is larger for the base of the pie, the second is smaller - for the top layer - the “lid” of the pie, sprinkle them a little with flour so that they do not stick together ( check out our video recipe!), put in the same bowl.

We cover the bowl with the dough with a lid or a plate and put it in the refrigerator for 40-45 minutes. After this time, our quick yeast-free is ready to be rolled. By the way, if more time passes and the dough is supercooled, it will be difficult to roll it out. If this still happens, let the dough lie on the table at room temperature for 5-7 minutes, and then roll it out.
