With regards to this recipe: such pork is clearly not worth the title of "The main dish of the festive table." But nonetheless...

It took me: 1 kg of pork pulp (hams, absolutely no fat, as I like), 175 ml of dry red wine, 1 tbsp. l. honey, 15 g (1 tsp) ginger, a pinch of ground cinnamon, black and white ground pepper, salt, 250 g lingonberries, 1/4 cup sugar.

I pour 125 ml of wine into a bowl, add honey, spices. I mix thoroughly.

Dried pork a little salt and pour the resulting composition. I'm going to marinate. I had a piece in the refrigerator for a day, I turned it over several times.

I preheat the oven to 220 degrees. I put the meat on the grill. I put a baking sheet underneath. I bake for 10 minutes. So that the meat does not burn too much on the grate and can then be easily washed, I cover the grate with a sheet of baking paper, on which I make cuts with a knife so that the juice flows into the baking sheet.

After 10 minutes, the temperature is lowered to 160 degrees. I cover the meat with foil and bake for another 2 hours. Remove foil 10 minutes before done. After I take it out of the oven, cover with foil and let it brew for 10 minutes.

For the sauce, the juice released during cooking meat should be drained into a saucepan, add 50 g of wine, evaporate more than half of the volume over medium heat and add lingonberry and sugar puree. There was no meat juice. Rather, everything that dripped onto the baking sheet burned safely to it) Therefore, I simply evaporated 50 g of wine and added most of the lingonberries with sugar, crushed in a blender to a puree state.

What to say in the end? A ham, like a ham, does not pull a dish on the festive table. To cook it normally, you do not need to bother with a wire rack and a baking sheet. Should just bake until done in the sleeve. For 10 minutes, cut it to get a golden crust. The juice formed in the process, drain from the sleeve and use to prepare the sauce. Sauce with such baking (in the sleeve) will turn out to be quite a lot, even if the pork is not fatty.
