Cottage cheese soufflé for a child. Curd soufflé

Soufflé from fresh low fat cottage cheese perfect for both baby and diet food. Curd soufflé easy to prepare, very tasty and healthy. "Soufflé" means airy (translated from French). Air will be curd soufflé only if we can beat the egg whites into a strong foam. Here are some secrets on how to beat egg whites properly:

Curd With ufle

  • Beat egg whites in glass, porcelain, enamel bowls. Aluminum cookware is not recommended, it gives a gray color to the proteins. Plastic utensils have pores that are not properly cleaned of fat and this prevents whipping proteins.
  • The dishes must be clean, without traces of grease and perfectly dry. A drop of water or poorly washed fat from the dishes will extinguish the foam, the protein will be more difficult to whip, and the resulting foam will be fragile, unstable.
  • Proteins beat better if you add a pinch of salt to them.
  • Fresh egg whites do not beat well, use a week old egg white

Souffle can also be vegetable and fruit. I will also write about this, but later.

Ingredients:

  • cottage cheese mass with a fat content of 9% - 250 gr
  • berries (raspberries, currants) - 100 gr
  • chicken egg - 1 pc.
  • cornstarch - 2 tbsp.

Everyone knows perfectly well how useful cottage cheese is, but for some reason my family does not really want to eat it, and persuasion in this situation almost does not work. So it was quite recently, but now the situation has changed dramatically, and I don’t stale in the refrigerator. And all thanks to an amazing recipe that I discovered recently. This curd soufflé in a slow cooker is a delicious delicacy with a bright taste, while being light and healthy, because it is steamed, and even with berries. It can be safely called a dessert not only due to its spectacular appearance, but also due to its taste - tender, airy, with berry sourness. The secret of such beauty is that during the cooking process, berries are added to the curd mass - they give the dessert bright blotches and refreshing sourness.

Cooking method

  1. I have collected the products, my trouble-free assistant PHILIPS HD3077/40 is ready, which means that I am starting to cook curd soufflé with berries in a slow cooker.

  2. As a rule, if I cook something from cottage cheese, then I grind it first to get rid of grains, but this time I have it so soft that there is no need for it. Soft cottage cheese, sugar, egg, sour cream and 1 tbsp. I spread the starch into a container to combine into a homogeneous creamy mass.

  3. If you have a food processor as an assistant, then you can do it in it or use a blender, but I beat with a mixer. Everything, the basis for the curd soufflé is ready.

  4. Today I have raspberries and currants, from home stocks that I made in the summer, but when the berry season comes, then, of course, fresh berries will be used.

I pour the berries into a bowl and roll in the remaining starch (I do this so that during the cooking process they do not settle to the bottom). Then I pour the currants and raspberries into the curd mass and gently mix with a spoon.

  5. I lightly grease silicone molds with vegetable oil and put the prepared mass with berries in them. I place them in a steaming tray, which, in turn, I insert into the multicooker bowl, having previously poured about 1 liter of hot water.

  6. The preparation of berry curd soufflé in a slow cooker takes place in the “steam” mode for 30 minutes. After a sound notification about the end of the program, I turn off the multicooker, carefully open the lid and let the soufflé cool down.

  7. Before serving, I remove the curd soufflé from the molds and put it on portioned plates, decorating with berries and a sprig of mint. Enjoy your meal!

Dessert contains eggs. It is better to limit their number to 2 - 3 pieces.

Important! It is better to choose milk and sour cream for diet soufflé with medium or low fat content. Cream is recommended to use 10% fat. Use coconut oil instead of butter

A dietary dish can be supplemented with vegetables, fruits, berries, herbs, dried fruits. Nuts, seeds, orange zest are often used for decoration.

How to choose the right cottage cheese

For a diet soufflé, you need to choose the right cottage cheese, for this, pay attention to its following characteristics:

  1. Fat content from 5 to 9%. The product retains more fatty acids, calcium, protein and other substances necessary for the body.
  2. Buy cottage cheese in airtight packaging. A homemade product has more useful substances, but may contain harmful microorganisms. If you opted for the latter option, then heat it before use.
  3. Soft, pasty curd. Avoid dry, grainy foods. Choose a mass with a delicate, uniform texture of white color with a slight creamy tint. There should be no impurities and separation into solid and liquid parts.
  4. Fresh cottage cheese has a pleasant, slightly sour taste and aroma.
  5. Make sure that the package says "Cottage cheese" and not "Curd product". The latter contains a minimum of benefits and chemical additives.
  6. Be sure to check the expiration dates, storage conditions.
  7. Refuse to buy curd mass, it contains vegetable fats, emulsifiers, stabilizers.
