Caviar from black milk mushrooms / Recipe with step by step photos

Black milk mushrooms belong to the category of conditionally edible mushrooms and require lengthy preparation. But the caviar from these mushrooms turns out to be very tasty.

Ingredients:

Black milk- 3 liters (boiled)

Carrot- 1 kg.

Onion onion- 1 kg.

Vegetable oil- for frying

Spices: salt, ground black pepper, garlic

How to cook caviar from milk mushrooms

1 ... Fresh black milk mushrooms need to be sorted out (worm-eaten) and soaked in cold water for at least 2 days. It is necessary to change the water daily, at least 3 times a day. Well-soaked black milk mushrooms will not taste bitter in the finished caviar.

... Thoroughly clean the milk mushrooms, rinse, put in a saucepan, add water and cook on the stove. After boiling, the stove must be put on low heat.

... Boil black milk mushrooms for 30 minutes, then drain the water, rinse the mushrooms. Put the mushrooms back in the pan, cover with water, add 1 tsp of salt (without a slide) and put on fire. After boiling, reduce the water and cook for another 40 minutes, periodically removing the dirty foam from the surface of the water.

4 . While the milk mushrooms are boiling, cook the onions, carrots and garlic. Peel and chop the onion in any way convenient for you. Peel and grate the carrots. Peel and chop the garlic. Fry carrots and onions in vegetable oil.

Milk mushrooms are among the most delicious and incredibly healthy mushrooms (russula). They live only in the vastness of the former CIS, so neither Europe nor America knows about these useful mushrooms. But here they are highly valued, both for their taste and for the benefits that they bring to the body.

Milk mushrooms contain a very large amount of protein, perhaps less of it in meat than in these mushrooms. They help to strengthen bone and muscle tissue, and are also used to prevent tuberculosis, treat diseases of the kidneys and urinary tract (break stones, take them out). The main property of milk mushrooms is to regulate blood sugar levels. Thanks to such an enzyme as riboflavin, as well as thiamine, milk mushrooms are used as a natural and extremely safe antibiotic. These mushrooms are enriched with vitamin C, so they can be taken instead of tableted vitamins if this is lacking.

It is worth remembering that almost all mushrooms of the russula family are extremely heavy on the stomach. They can be difficult to digest if overeating or improperly cooked. It is better to boil well before use, and then bake, marinate and fry.
