Hello! Today I want to talk about how to prepare winter tomato dressing for pasta. Surely every housewife prepares pasta dishes. A tomato sauce vegetables will serve as an excellent sauce for spaghetti, noodles or horns.

Grind the tomatoes in a blender until smooth.


Place a fine-mesh colander over the pan. Pour in the tomato mixture and strain. As a result, skins and seeds will remain in the sieve.


Pour sugar and salt into a homogeneous tomato mass and mix. Bring to a boil, cook over low heat for about 20 minutes.


Rinse the sweet peppers with water and cut out the seeds. Chop the pulp into small pieces.


IN sunflower oil fry finely chopped onion. The vegetable should become golden in color, which makes it aromatic. Place the peppers and onions in a blender and blend until smooth.


Pour the onion and pepper puree into the pan and stir. Cook for approximately 30 minutes. And 10 minutes before it’s ready, add chopped garlic cloves.

Maybe you have a better food processor, so decide for yourself how you want to process the tomatoes and pasta sauce.

The onion should be simmered over low heat for 30 - 50 minutes. If you like the pronounced taste of onions, then 30 minutes is enough. If you want the onion to be practically invisible, then simmer for 50 minutes. I sauté the onions for 50 minutes to add the pasta sauce.
Add twisted tomatoes, sugar, salt, pepper to the prepared onion, bring to a boil and simmer everything together for 15 minutes. Add gravy to the pasta.

Place the prepared jars - 7-8 pieces - into the oven on the wire rack, turn the temperature up to 100 degrees and let them sterilize.
During cooking, taste the gravy for salt and add salt to taste.
Peel the garlic, chop it, and add it 2 minutes before the end of stewing.
Place the metal lids in a bowl and pour boiling water over them.

Place the gravy in jars: take out HOT jar from the oven using a small towel, the width of the height of the jar, with which you need to grab the jar so that you hold only the ends of the towel in your hands. Place a ladle or wooden spoon into a HOT jar of HOT gravy, cover with HOT DRY metal lid(taken from hot water and quickly dried with a sterile cloth). Seamed using a seaming machine.

Try to do everything very quickly, and the process will take you 5–7 minutes.

Place the pan with the tomato mixture on the fire, add salt, sugar and butter. As soon as it boils, reduce the gas and cook on low for 30 minutes.

After 30 minutes, add finely chopped garlic to the gravy, chopped herbs if desired, if you like it spicy, you can add a little hot pepper. Add vinegar essence and cook it all for another 10 minutes.

Pour the hot pasta sauce into sterile jars and secure with sterile boiled lids. Turn it upside down and wrap it until it cools. That's all, the pasta dressing for the winter is ready.

Well, the most popular addition for many is ketchup. However, finding a truly tasty, and most importantly, harmless store-bought sauce is not at all easy. Luckily, making homemade tomato pasta dressing isn't difficult.

You don't need any special ingredients for this. In the summer they are all at hand. It happens that you buy a kilogram or two of tomatoes, and by the time you bring them home, it turns out that one or two are bruised. And the next day there are more of these bruised but not spoiled tomatoes. This amount is not enough to make juice or paste from them, but it is quite possible to make a pasta dressing.

Now autumn is coming to an end. I managed to buy brownish tomatoes, and green bell peppers. Much tastier dressing will turn out bright red ripe tomatoes and red bell pepper of fleshy varieties. Well, now we’ll be content with what we have, it’s also very tasty, although less spectacular.

Finely chop the onion and saute it in vegetable oil.

While the onions are frying, prepare the other ingredients. We grate the tomatoes or chop them in another way - with a blender, food processor, or put the tomatoes through a juicer. We will not use the skin.

Add salt and sugar: sugar - one tablespoon, and salt - one teaspoon. We'll adjust it later to suit your taste. Immediately put the mixture on the fire to boil.

Let's prepare the bell pepper: just remove the seeds.

You can chop the pepper coarsely, but we will still need to grind it with a blender.

And during this time the onion will already be fried.

Now we need to chop the bell pepper and sauteed onion. This can be done using a blender, food processor or meat grinder. Choose the option that is convenient for you. If there is a lot of food, then it is obvious that in this case a meat grinder or food processor is more suitable for us. My workload is small, so we can get by with a blender. Grind the vegetables into a homogeneous mass.

Add the grated onions and peppers to the tomatoes and mix. Let it cook for half an hour from the start of boiling. 10 minutes before the end of cooking, add garlic, passed through a press, and any seasonings you like.

Immediately place the finished mixture into sterilized jars.

Roll up and turn over. Tomato pasta dressing for the winter is ready.

Use as pasta sauce as needed. This dressing would be good for meat and, for example, buckwheat.
