In order to understand what Thai cuisine is, let's talk about the main ingredients. The basis of the basics is sauces. If Europeans try to preserve the original taste of products and use a minimum of spices and sauces, then in Thai cuisine, sauce is the basis of the basics. The dish should combine four tastes: be sour, salty, sweet and spicy at the same time. And if the piquancy in the preparation of some dishes is sometimes ignored, then the sour-sweet-salty Thai food is simply a must.

Thais eat a lot of seafood. Shells, snails, squids, fish, crabs, octopuses. Seafood is cooked in a minimum amount of time, boiled or fried with sauces for only a minute or two. Sweetness is added to dishes using regular white or brown sugar, as well as thick palm sugar. It is he who is put in the famous papaya salad.

The sour taste is invariably created with lime juice. It can be either fresh, freshly squeezed from the fruit, or concentrated, made at the factory and packaged in bottles.

The base sauces are thick oyster sauce, black pepper sauce, tamarind sauce and sweet and sour chili.

Soup Tom Yum Kung

This dish is considered by many to be a real masterpiece of Thai cuisine. It combines ingredients that at first seem completely incompatible with each other. Tom Yum soup is quite spicy, and if you don't want to be a fire-breathing dragon after dinner, ask for "no chili" soup. It is impossible to cook Tom Yam without being spicy at all, since the obligatory ingredient of the soup is chili paste. But still, without additional chili peppers, the soup will be more adapted to the European stomach.

Soup Tom Kha Kai

Soup Tom Kha has the same set of herbs and spices as Tom Yum Kung. But it has no chili paste and much more coconut milk. Therefore, it is absolutely not spicy and is very popular with children. Another difference is that shrimp in the soup replaces tender chicken fillet. Soup Tom Kha can be the most healthy and delicious food that you can feed children in Thailand.

I discovered it for myself only six months ago. Spicy thick soup in meat broth with soy and fish sauce seasoned with wide rice noodles and pak choi leaves. Great meal for the whole family.

Roti pancakes

This dish is not Thai, but rather pan-Asian. It is both in and in Malay. But in Thailand, they came up with stuffing pancakes not only with fruits, but also with colored sweets, condensed milk and chocolate. Unsweetened roti is smeared with spicy sauces and canned tuna paste. Be sure to order roti while walking through the Thai market.

Almost each of these dishes (except salads) can be either vegetarian or with chicken, pork, fish or seafood.

1. Tom Kha
Sweet soup with coconut milk. Of all Thai cuisine, it was he who fell in love with us the most - not too spicy, spicy and sooo tasty.


2. Tom Yum
This is perhaps the most famous dish in Thai cuisine, and even if you have not been to Thailand yet, you must have at least heard about this sour and spicy soup with lemongrass, galangal and lime leaves. Due to the abundance of spices, the soup has a very specific and memorable taste. True, the soup in the Thai sense is significantly different from the usual Russian person - in Tom Yam you can eat almost only broth (well, meat / fish, if any), everything else is added to create flavor and is not edible.
Since Tom Yam is a very spicy soup, rice is offered as an addition to it, more often than to other dishes.


3. Green curry (Green Curry).Also popular are red and yellow curry (Red Curry, Yellow Curry)
The basis of this dish is a special paste, which consists of chili peppers, lemongrass, lime leaves, basil, shrimp paste and coconut milk.


Green, red, and yellow curries are three dishes that are similar in structure and texture and differ in spice composition and spiciness. Green is the sharpest, red and yellow are slightly less sharp. But it should be borne in mind that "less" in this case is a very relative concept, which is why, most often, curry is eaten with rice (although Thais generally eat everything with rice).


3. Massaman Curry
One of our favorite curries is made with coconut milk, roasted peanuts (or cashews), cardamom, tamarind and fish sauce. It has a spicy and pronounced taste and aroma


4. Phanaeng Curry
A bit like massaman, but it has less peanuts and additionally uses shrimp paste.


6. Green Papaya/mango Salad, Som Tum
Green papaya (or green mango) salad with crushed peanuts, green beans, tomatoes, cucumbers, dried shrimp, fish sauce and, of course, chili peppers. We did not succeed in distinguishing the taste of green papaya from green mango in a salad. Both salads are delicious, but very spicy - it's almost impossible to eat them without tears 🙂


7. Pad Thai
Fried noodles with egg, soybean sprouts, fish (or oyster) sauce, peanuts and assorted additives. Quite simple, but tasty and very popular dish in Thailand - it can be found both in street eateries and in decent restaurants. Padtai differs in the type and composition of noodles, so there can be a huge number of variations


8. Fried Rice (Khau Phat)
Fried rice with egg and vegetables is one of the favorite dishes among backpackers, as it is sold on every corner and is cheap. We are not big fans of rice, so we liked only one variation of this dish called Khao Phat Sapparot - pineapple fried rice.


9. Sen Khao Soi
Popular in northern Thailand, this dish is a soup made with deep-fried egg noodles. Lime, onion, chili and pickle from cabbage are also served with the soup.


10. Roti - pancakes with various fillings (egg, chicken, as well as chocolate, banana and other fruits)
Pancakes are not baked from batter, as in Russia, but from kneaded and kneaded to a thin, almost transparent state. We are not sure if this is an original Thai dish, but it is prepared in many places and pancakes are very popular among both tourists and locals.

Well, as a bonus, a little homemade Thai cuisine, namely, a recipe for chili sauce, which we learned to cook in Kanchanaburi under the guidance of our Thai friend Adisaka.

The Adisaka family has Chinese roots, so for the first dinner he treated us to Chinese-Thai dishes, and after learning about ours, he offered to cook the next dinner together, in Thai style.

We exchanged recipes and told Adisak about our culinary experiments in Bali, and he taught us how to cook chili sauce, without which, in his opinion, Thai cuisine would not be Thai (the smart iPad persistently suggests replacing the word "Thai" with "heavenly" - what can we say about people, even if technology is a good judge of Thai cuisine 🙂

So, the recipe is quite simple, for cooking we need the following ingredients:

  • Green chili pepper - 7 pcs.
  • Cherry tomatoes - 7 pcs.
  • Garlic - 7 cloves
  • Lime - 1 pc.
  • Shrimp paste 1/2 tsp
  • Fish sauce 1 tbsp
  • Cane sugar 1 tsp


By the way, we thought that only in the street cafes of Thailand (and Asia in general) cooks do not wash vegetables, but it turned out that this is not accepted in their culture at all - even in such a decent house, no one even thought to wash vegetables before cooking. That is why in Asia it is better to avoid food that has not undergone heat treatment.

To prepare the sauce, you will need a mortar, it is most convenient to make such sauces in it. In Asia, as we have noticed, any housewife will definitely have a mortar in the kitchen - even those who have both a food processor and a blender still use a mortar when it comes to sauces, apparently this is also in their blood 🙂

Adisak assured that the order in which the ingredients are added is very important:

  • First, put the chili pepper in a mortar, after cutting off the tips, knead.
  • Next, add sugar and garlic, previously crushed with a knife (to extract juice) and cut into small pieces, knead.
  • Then squeeze the lime juice and throw in the tomatoes cut into quarters, knead.
  • The last step is to add the shrimp paste and fish sauce, mix everything thoroughly.

The basis of nutrition for the inhabitants of an exotic country is rice, which is considered the main Asian culture. Almost all Thai dishes contain this product. Moreover, two varieties of rice are used: sticky and white crumbly. The second is eaten with spoons as a side dish, and the first is rolled into balls, which are then put whole in the mouth. Rice stir-fry, watery soup, sweet and sour rice… The list of dishes from this product that Thais cook is simply endless.

But a variety of sauces (soy, fish) are always served on the table with a side dish. However, it is worth noting that Thai dishes are not only rice. It is served with vegetables, fish and meat.

Therefore, it is quite difficult to reproduce such dishes at home, because you need to achieve special flavors. But you can still try to cook the most popular dishes.

After that, the cereal can be poured with water in a ratio of 1 to 1.5 and sent to cook over medium heat. Rice is considered ready as soon as all the liquid has evaporated.

In the meantime, you can move on to preparing the meat. The beef needs to be marinated. Cut it into small pieces and put in a bowl. Now you need to prepare the marinade: squeeze the juice from the lemongrass, and cut its pulp, add soy sauce and exactly half of the prepared starch. The resulting mixture is sent to the beef.

Mince the garlic and finely chop the chili pepper. Mix these ingredients and add also fish sauce, as well as sugar and the juice of the fourth part of the lime.

Next, you need to chop the green onion, and dissolve the remaining starch in the broth. Now fry the beef in a well-heated pan for several minutes, removing the lemongrass first. Then add oyster sauce (prepared by us) and broth with starch to the pan. Mix all ingredients and bring to a boil. At the end, basil and onions are added, after which the pan is removed from the stove.

Now you need to properly serve the dish. Put the beef on boiled rice, and decorate it with cilantro on top.

Pad Thai

We would like to bring to your attention the recipe for one of the most popular and delicious Pad Thai consists of fried flat rice noodles (its width is about half a centimeter) and tamarind (sweet and sour) sauce. The second component is, unfortunately, very difficult to find. Therefore, tamarind sauce can simply be replaced with a mixture of fish and soy sauce with lime juice and vegetable oil (peanut and sesame are good).

It is very difficult to reproduce the dish in the original version, but you can cook a more adapted version that is close to the original. All the necessary ingredients can be purchased in large supermarkets or in specialized shops for Asian cuisine. For cooking, you will need special dishes - a wok.

So, let's start with preparing the noodles. It must be boiled according to the instructions on the package, and then rinsed. Next, clean the shrimp, removing all unnecessary from them. Beat a few large eggs in a separate bowl with a whisk.

Cut the onion feathers, chop a few shallots and one clove of garlic. Salted roasted peanuts should be chopped.

Next, we move on to cooking meat. One hundred or two hundred grams of pork cut into slices. We put a wok on the stove and heat the sesame oil on it. Put the shallots in a bowl and fry it for about a minute, then add the meat and also cook for a couple of minutes. After that, put the garlic and shrimp in the pan and fry all the ingredients for a few more minutes, not forgetting to stir constantly.

Now you need to add eggs to the pan and immediately mix everything thoroughly. If the wok is too hot, you can lift it up and stir the contents by weight. The eggs should turn into something resembling flakes. Such an effect is not so easy to achieve.

In the dish we put a tablespoon of ketchup, two tablespoons of fish sauce, a teaspoon of sugar (it is better to use cane or palm sugar), the juice of one lime, and a meal of sprouted beans. Mix all ingredients again and remove from heat. Sprinkle the finished dish with onion, ground pepper and chopped peanuts. After mixing the ingredients well, the food is served in special bowls.

Sirracha sauce

Thai sriracha sauce is incredibly fragrant and spicy, it goes well with almost any dish: rolls, fish, meat, and is also used when baking food.

Ingredients:

  1. Three cloves of garlic.
  2. Chili pepper - 65 g.
  3. A tablespoon of soy sauce.
  4. One head of onion.
  5. Rice vinegar - 2 tbsp. l.
  6. Tablespoon of vegetable oil.
  7. Tomato paste - 120 g.
  8. Sugar - 2 tbsp. l.

This sauce was first prepared fifty years ago by a Thai woman in a small village. Everyone liked him incredibly. And after some time, the recipe was bought out and the sauce began to be produced in large volumes. Siracha is still very popular in Asian countries. It is used for baking, frying, as an ingredient for marinade.

Cooking should start by frying chopped onion and chopped garlic in a pan. Next, you need to add pepper and tomato, and simmer the workpiece for five minutes. Now you can pour vinegar, soy sauce and put sugar. Cook the dish until the ingredients are soft. After our sauce has cooled down a bit, it must be chopped in a blender. It can be placed in a glass jar, sealed and stored in the refrigerator.

A dish with such a beautiful name is included in the TOP-50 of the world's best culinary products. So, it is definitely worth a try. Massaman curry is prepared in every restaurant in Thailand. This type of curry is considered the least spicy among other types. In addition, it is worth knowing that the dish is prepared exclusively from beef. Of course, you can use chicken, pork, but then it will not be a completely original dish.

It is said that during the time of King Rama II of Siam, massaman curry was on the royal menu. The basis of the dish is pasta. It traditionally consists of shallots, dried red peppers, galangal, garlic, cumin, white pepper, lemongrass, white coriander, salt, and shrimp paste.

An amazing combination of beef pulp and potatoes, stewed exclusively in coconut milk, is complemented by the aromas of spices, resulting in a very harmonious dish.

Ingredients:

  1. Coconut milk - 220 g.
  2. Beef - 430 g.
  3. Onion sets - 18 pcs.
  4. Tamarind paste - to taste.
  5. Massaman curry paste - 60 g.
  6. Fish sauce - to taste.
  7. Cashew or roasted peanuts.
  8. White cardamom - 5 pcs.
  9. Bay leaf - to taste.
  10. Half a teaspoon of zira.

Recipe of dish

Fry the cardamom and zira in a dry wok. Cut the meat into pieces. Take out the cream from a jar of milk (coconut) and add it to the pan along with the curry paste. Fry the ingredients until the cream begins to release oil. Next, put the meat in the wok and simmer it in the mixture until tender (30 or 40 minutes). In the meantime, prepare the onions and potatoes, peel them and cut into large pieces. Twenty minutes before the end of cooking, add onions, potatoes and fish sauce to the pan. Ingredients:

  2. Vegetable oil.
  3. A teaspoon of fish sauce.
  4. String beans - 120 g.
  5. Three teaspoons of curry paste.
  6. Two teaspoons brown sugar.
  7. Coconut milk - 220 ml.
  8. Broccoli - 120 g.
  9. Chile - 4 pcs.
  10. A pinch of lime leaves.
  11. Nuts - 60 g.

Recipe

green curry

Thai green curry is one of the best dishes in northern Thailand. The combination of coconut milk with spicy spices gives an amazing taste, making the dish incredibly popular. Its basis is the green curry paste itself, which can be purchased or cooked.

Ingredients:

  1. Pea eggplant - one handful.
  2. Thai eggplant - 6 pieces.
  3. One chicken breast.
  4. Winter melon - 250 g.
  5. Can of coconut milk.
  6. Chili pepper - 3 pcs.
  7. Curry paste (green) - 3 tbsp. l.
  8. Three cloves of garlic.
  9. Two tablespoons of fish sauce.
  10. Lime leaves.
  11. palm sugar.

Vegetables must be prepared: we pick pea eggplants from the branches, cut round ones, cut the melon into pieces, chop the pepper in the form of rings. Chili and garlic must be ground in a mortar and fried in vegetable oil. Can be used for frying and coconut cream. Next, add curry paste to the pan and fry the ingredients for a couple of minutes. Then pour some of the milk (coconut) and mix the mixture, put the pieces of chicken and continue cooking over very low heat. Do not bring the dish to a boil, otherwise the coconut milk may simply exfoliate.

Now you can pour the rest of the milk and cook, remembering to stir. Add sugar, fish sauce, pea eggplant, chili, lime leaves and heat everything again. At the very end of cooking, basil leaves are placed in the curry. They are added to the dish and immediately removed from the fire. Curry is usually served with rice noodles and rice.

Thai salad

Som Tam salad is incredibly popular among Thai women. The dish consists of almost all herbs and is quickly prepared. There are two types of Som Tama: with salted crabs and dried shrimp.

Ingredients:

  1. Green papaya.
  2. Two chili peppers.
  3. Six cherry tomatoes.
  4. Two cloves of garlic.
  5. Six pods of long beans.
  6. Tablespoon of sugar.
  7. Lime.
  8. Two tablespoons of ground peanuts.
  9. A tablespoon of dried shrimp.

Papaya must be peeled and the seeds removed from the core. Using a special tool, we rub the papaya in the form of noodles (the knife for the fruit is somewhat similar to our potato peeler).

In a mortar, grind the chili and garlic. The sharper we want to get the salad, the more carefully we rub the seasonings. Then add tomatoes and beans to the mortar and crush the contents. Tomatoes should release juice. Now we put the shrimp, papaya, peanuts and all other spices, squeeze out the lime juice and mix the ingredients thoroughly. The dish is ready!

Thai Shrimp is an incredibly delicious seafood dish. To prepare it, we need:

  1. Tiger prawns (large) - 0.8 kg.
  2. Lime leaves.
  3. Lemongrass - four stalks.
  4. Ginger - 60 g.
  5. Two chili peppers.
  6. Sesame oil - 6 tbsp. l.
  7. Juice of three oranges.
  8. Sea salt.

Grind ginger and garlic on a grater, previously peeled. Cut the stalks of lemongrass into four parts. Finely chop the chili pepper and add it to the ginger and garlic. Pour orange juice, sesame oil there, put salt, lemongrass, lime leaves and mix the ingredients well. The result is a marinade. Add shrimp to it and let them brew in the refrigerator for six hours. We wrap marinated seafood in several layers of foil and bake on coals or on a grill. Estimated cooking time is 10-15 minutes.
