Very simple and at the same time delicious grated cookies are literally made from 3 ingredients. The process of its preparation is interesting and exciting, so the company of mothers is happy to make children. No wonder, because making cookies is very similar to making snowballs from wet snow, and this is a favorite pastime of all children and many teenagers.

Ingredients:

      • butter - 150 grams,
      • wheat flour - about 200 grams,
      • fine salt - 1 pinch,
      • powdered sugar - 75 grams.

Note:

Butter can be easily replaced with butter or milk margarine, in which case there is no need to add salt to the dough; Powdered sugar can be replaced with a little more granulated sugar: For flavor, you can add 1 teaspoon of vanilla sugar or a pinch of vanillin to the dough.


How to make grated shortbread cookies:

Place the butter in the freezer 2-3 hours before the start of preparing the dough, then free it from the wrapper and grate it with large holes.


Pour all the powdered sugar and about half the indicated amount of flour into the butter. Grind flour with butter and powder with your hands until flour crumbs form.


Pour the rest of the flour onto a wooden surface, put the flour crumbs on top of it and, working hard with both hands, knead the plastic dough.

This is not an easy task, as the dough will strive to crumble, but if you have patience, then, in the end, everything will work out. As a last resort, if it seems to you that there is too much flour, and the dough cannot be collected in one lump, you can add quite a bit of milk or water to it and continue kneading.


Wrap the finished dough in several layers of cling film and send it to the freezer for about 1 hour.

Grate the frozen dough on a coarse grater, trying to do it quickly so that it does not melt.
Take a little grated dough in your hands, form a small loose ball out of it and put it on a greased baking sheet. Repeat steps required number of times.


Bake grated cookies at 190 degrees for about 10 minutes.

Cooking method:

Do not separate the eggs into whites and yolks, but immediately place them in a bowl, beat with sugar until the mass becomes homogeneous, without grains of sugar. Melt margarine and add to egg mixture. Flour and soda, previously sifted, enter last, salt the dough a little. I knead shortbread dough in a bread maker.


Knead the dough, which will lag behind the sides of the dishes.


Divide the entire volume into 3 parts, one of which is placed in the freezer.


Sprinkle a baking sheet or a form on which the cake will be baked lightly with water. Lubricate the dough, in which there is so much margarine, is not worth it.

Lay out most of the shortcrust pastry and spread on the baking sheet with your hands or using a rolling pin. Lubricate the surface of the future pie with jam or your favorite jam.

Then we break one large chicken egg or two small ones into a bowl.




We spread the flour with butter and egg on the board, first chop the mass with a wide knife.






Then add fine granulated sugar, mix the products with your hands, quickly knead the dough.




We roll the sausage from the dough, divide it into two parts. The part intended for the top layer should be slightly larger, we put it in the freezer. Put the second piece in the refrigerator for 20 minutes.




Lubricate the parchment with refined vegetable oil. Roll out a piece of dough from the refrigerator compartment into a rectangular layer 0.7-1 cm thick.




Spread the lemon curd over the dough in a thin layer.

We divide into two parts: larger and smaller. We wrap the second part in a film and put it in the freezer, let it stand for 10-15 minutes.

Turn on the oven to preheat. We prepare the form in which the cookies will be baked, lubricating with a small amount of oil. We spread most of the dough into it, and evenly distribute it along the bottom, forming small sides along the walls. Pour the jam in an even layer. Three frozen dough on top of the jam, slightly bend the sides inward.

We bake at 200 degrees. within a third of an hour.

  • flour - 24 tbsp. l. (approximately 2.5-3 stacks);

To begin with, we combine dry products in a deep container. Next, we introduce vegetable oil, melted butter, half a glass of warm water, mix well with a spoon, then with your hands. The result should be a ball of homogeneous, moderately dense dough, which does not stick to your hands at all.

Grease a baking sheet lightly with oil. Divide the dough into 2 parts, one - in the freezer, roll the second into a layer and transfer with a rolling pin to a baking sheet. Flatten with your hands. Distribute the jam over the dough, take out the ice cream dough and rub the jam with it. Bake as directed in previous recipes.

Curly cookies with jam

  • drain. oil - 200 gr;
  • sugar - 220 gr;
  • flour - 500-600 gr;
  • sour cream 15% fat - a couple of tbsp. l.;
  • soda - 1 tsp;
  • eggs - 2 units;
  • jam with large pieces of fruit or whole berries.

Perhaps there is nothing special in this recipe - butter is replaced with margarine in the same amount as the first product is indicated in any of the recipes. Margarine is often used as a substitute for butter in dough preparation. This is a budget option. It practically does not affect the taste, baking still comes out very tender and fragrant.

Sour cream cookies with grated dough

  • 400 gr flour;
  • a glass of sugar;
  • tsp baking powder;
  • vanilla sugar;
  • 3 medium sized eggs;
  • 250 butter;
  • 2 tbsp. l. sour cream;
  • 2 lemons + a glass of sugar (for filling).

The butter must be left at room temperature in advance so that it becomes soft. So it will be more convenient to use it in the dough.

Cooking begins with the combination of sugar and butter, with the help of a spoon, rub the ingredients in a deep bowl. After laying out the sour cream, mix a little with a spoon and switch to the whisk.

Sift the flour in several stages into the dough, stirring. Sifting makes the dough more airy, making the structure more airy and therefore more tender. Add vanilla and baking powder at the same time.

The dough should be elastic, not sticky. You will probably need to add a little more flour for this, as its ability to absorb liquid components varies depending on the variety and manufacturer.

Divide the dough into two different portions. Send a large share to rest in the refrigerator, and a smaller share in the freezer.

While the dough is resting, prepare the filling. Remove the zest from the lemons with a grater - it should turn out about a teaspoon. Next, carefully cut the peel from the fruit, remove the white pulp as much as possible - it has a bitter taste that can ruin pastries. Then grind the pulp with a blender into a gruel, mix the sugar and boil lightly over low heat - about ten minutes after boiling. We introduce the previously prepared zest, mix, let it boil for a couple more minutes, and leave to cool - the five-minute lemon jam is ready.

We grease the baking sheet, set the oven to warm up. We roll out most of the dough and move it to a baking sheet, distribute the filling. The bottom layer of the dough must have sides so that the liquid filling does not leak out.

Rub the top of the pie with the smaller frozen part of the dough. Bake and cut into pieces.

On a note. If you use a mixer when preparing the liquid part of the dough, you can be sure of the uniformity of the resulting mass.

How to cook in a slow cooker?

  • 100 gr plums. oils;
  • 100 grams of sugar;
  • 2 large eggs;
  • 300 gr flour;
  • 10 grams of baking powder;
  • 200 gr of very thick jam.

Using a mixer, beat the egg-sugar mass for several minutes - the mass will become light and frothy. Add soft butter, work with a mixer, gradually introduce flour and baking powder. Mix first with a spoon and then with your hands. The dough is not sticky, soft. Next, we prepare the dough, as in the previous versions - we freeze for about half an hour.

We roll out most of the dough into a small circle of such dimensions that we can make bumpers. We put a circle of parchment in the multicooker bowl, or grease it with oil. We place the dough, adjust the sides with a height of about 1.5 cm with our hands. We lay out the jam with a minimum amount of syrup. Top with the remaining layer.

We close the lid, turn on the “Multipovar” or “Baking” program for an hour. Let cool for a quarter of an hour, remove with a steamer basket and cut into pieces.
