Recipe

3. Mix the hot mass well until smooth. Pour the crumbs with the resulting warm mass and carefully grind to a homogeneous consistency.

4. When the base for the cake has cooled down a bit, put it in the refrigerator for a couple of hours. Here the mass will cool and become more pliable for the formation of figures. Form the mushrooms and the body of the hedgehog.

Scroll the cookies through a meat grinder (if loose, like a "Snack" - you can grate or chop in a blender), pour cocoa into it, mix, put softened (but not melted) butter, grind with cookies. Pour in condensed milk, mix thoroughly. The mass should be thick enough, but stirred. If it turned out liquid, you need to add a little biscuit. If it’s too thick and you can’t mix until smooth, you can splash a little hot water- 1-2-3 tablespoons and mix well. At the end, add cognac and stir again.

Next - form "potatoes", arrange on plates so as not to touch each other and put in the refrigerator to cool. "Potatoes" can be sprinkled or rolled in nuts, or decorated with cream, for example, add "leaves" or "roots".

Cake "Hedgehog"

The recipe is the same, only you need to form not potatoes, but a round "hedgehog" with an elongated triangular muzzle.

Sweet "Sausage"

About cookies: in Bulgaria they don't sell vanilla croutons and Yubileinoye cookies, from which I made "potatoes" in Russia. Rusks from white bread there are, but they contain so many baking powders and "improvers" that they are definitely not suitable for cooking - when wet, they break apart and completely lose their structure. Breadcrumbs(here they are called "Galeta") are also not suitable, they have a specific aftertaste, this is not for everybody.

I got a successful result with cookies:
the first - "Zhiten gift" - "biscuit obiknoveni" from the company "Nestle" (produced in Sofia), packaged in 272 grams,
the second is the biscuit "Snack" ("snack" in Bulgarian - breakfast), it is packaged in 330 grams without cocoa and 370 grams with cocoa in the composition (produced in Burgas), you can take both, but without additional cocoa Powder is still not enough.

Butter: the best is Rhodope Milk butter, you can, but Philippopolis, Rodopeya or Bor Chvor are a little worse.

Condensed milk: they sell Ukrainian and Russian Condensed Milk, they have it in Beryozka, sometimes in Gastro and Piccadilly, or you can take Dutch Lady condensed milk, better - a red jar, I took it in Kaufland ". Blue contains herbal products and milk is empty.

Dry cocoa powder I use the Greek "Cocoa Ion".

What can replace some products:


  • instead of cookies: gingerbread leftovers (chocolate ones harmonize better in taste), waffles, cracker cookies (unsalted);
  • instead of butter - nothing can replace it :-(, it must be Natural Butter; if it is not there, it’s better not to start;
  • instead of condensed milk - if there is no condensed milk, you can take half a glass of sugar, you need to add it at the dry stage ground cookies, to oil; and after adding butter, heat a glass of milk to 40-50 degrees and add it warm, gradually stirring the mass; a spoon in the mass should "almost, but not quite" stand; in this case, do not rush, let the sugar melt;
  • instead of cocoa, you can rub bitter chocolate into a still dry mass, 100 grams will be good;
  • instead of cognac, you can add vodka or rum, gin, liquor, wine - white or red, or - do without alcohol at all, although the charm, of course, will not be the same.
