Beat the soft butter for 5 minutes with a mixer until fluffy, then add the remaining ingredients (after cooling the chocolate to room temperature), beat until smooth.

In order for the cream to keep its shape better on cupcakes, it is recommended to cool it.

7. Chocolate ganache

The silky texture of the cream is perfect for delicate cupcakes. The cream needs to be cooled well and let it brew, so prepare it in advance. I usually cook in the evening, leave it overnight at room temperature, and decorate the cupcakes in the morning.

  • Cream with fat content from 33% -250 ml
  • Liquid honey - 50 g (if you have thick or candied honey, melt it in microwave oven or water bath).
  • Instant coffee - 1 tbsp. l.
  • Dark chocolate (cacao content not less than 60%) - 200 g
  • Butter - 75 g

Step by step cooking process

Bring the honey to a boil over low heat. instant coffee and cream (no need to boil).

Chop the chocolate into a bowl, cut the butter into cubes, pour hot cream in two approaches: first pour half, mix with a whisk, then pour the second half - mix again until smooth.

We tighten the bowl cling film, leave to infuse overnight (no need to put in the refrigerator).

The next day, ganache can be used to decorate cupcakes and cakes.

8. Protein cream (on Swiss meringue)

Many people are afraid to use protein cream because of the risk of catching salmonella. In this recipe, proteins are brewed in a water bath, so the risk of infection is practically eliminated.

You will need the following ingredients:

  • Egg whites - 2 pcs.
  • Sugar - 150 g
  • Vanilla extract - 1 tsp
  • Food coloring - optional

How to make protein cream for cupcakes:

In a bowl of heat-resistant material, combine proteins, sugar, vanilla extract. Install on water bath so that the bottom of the cup does not touch the boiling water.

Whisking constantly, bring the proteins to such a state that the sugar is completely dissolved. You can take a small amount of protein mass and rub it between your fingers - the grains should not be felt.

After the sugar is completely dissolved, remove the protein mixture from the water bath and pick up an electric mixer. Beat into a firm meringue until the bowl has cooled to room temperature.

Ready cream can be used immediately to decorate cupcakes and cakes.

9. Fruit cream mousse

This cream can be used not only to decorate cupcakes, but also as an independent dessert. Choose the berries you like - and get to work!

  • Fruit puree - 250 g (can be made from fresh or frozen berries)
  • Leaf gelatin - 3 pcs.
  • Sugar - 150 g
  • Egg whites - 3 pcs.
  • Cream - 33% and above - 250 g

What do we have to do:

  1. Soak gelatin leaves cold water and let it swell. If you don’t have gelatin in plates on hand, you can use powdered gelatin, but choose a quality one, for example, from Dr. Oetker, it dissolves very well, you don’t have to wait two hours.
  2. Using a mixer, beat the whites into a fluffy foam, gradually adding granulated sugar.
  3. Whip the cream into a fluffy mass.
  4. Heat the swollen gelatin in a water bath until the grains are completely dissolved.
  5. Carefully fold in the beaten protein mass, cream and fruit puree.
  6. Add gelatin to the general mixture, pouring in a thin stream, without stopping stirring.

This cream should be allowed to brew properly in the refrigerator (at least 3 hours).

And if there is an important event coming up, festive, but in a less solemn format? Can you then afford to save a little and do certain preparations yourself? This year, I ran out of ideas on how to treat children at school on the occasion of the Elder's birthday, and I seriously thought about it. I can't say that my first experience was particularly successful - it turned out not bad, but far from good. After that, I made cupcakes at home twice more, trying to figure out how to solve certain problems and cope with difficulties, and personal experience I decided to combine it into this short article with tips. Read it, it can really be useful if you, like me some time ago, have never had experience with these mini-cakes before, but are also thinking about.


1. Base recipe


The base of a cupcake is an ordinary muffin or cupcake, so there should be no difficulties: just choose a recipe that has never let you down, bake it and get to work.


By the way, note that cupcakes (with a relatively flat top) will be an order of magnitude easier to decorate than muffins (which usually have a "roof" flying up). This fact in no way limits you in choosing a base recipe, however, it is worth considering

that moment, soberly assessing their ability to decorate cupcakes.


2. Filling for cupcakes


This is not a mandatory item of the program at all, but it is very interesting and elegant - if something small, but very tasty and original is hidden inside your cupcake, the cupcake will immediately become a few points cooler and more unusual.


Alcoholic cherry, piece dried plum, caramelized apple slice, nut, caramel slice, chocolate slice, raisins or dried apricots, cranberries or lingonberries, dried pear or melon, peanut butter, jam, marmalade, mashmallow, poppy seed filling- lots of options! Choose an affordable one and do not forget that the filling is not the cupcake itself, and there should not be too much of it.


3. How to make a topper


The "hat" of cream that decorates cupcakes is perhaps the most important thing in these funny cakes. In this matter, there are two stones that you can stumble over: the first is the choice of cream, the second is its accurate and effective application.


The main condition for cupcake cream is its stability: you need to understand that during transportation it can leak, go astray, fall, wrinkle, and 10-15 more verbs that obviously won’t cheer you up. To prevent such mistakes and outrages, choose a recipe that you are 101% sure of. If you don’t have such a recipe in your arsenal, don’t rush to cook cupcakes for others - first practice baking for yourself and your family, find your own branded cream that doesn’t let you down, and then take risks and cook cupcakes for holidays and fairs.


The second point is beauty and accuracy. Without experience, it is quite difficult to make a beautiful "hat" that will not only be tasty, but also attractive. Practice on cakes, try to decorate Easter cakes, make decor on pies and rolls. Having stuffed your hand, go to cupcakes.


4. How to decorate cupcakes


A beautifully laid out cupcake cream is half the battle. It will certainly be unrealistically solemn and festive, but this is not enough to say that your cupcakes are perfection itself. They lack a "zest" - and this very "zest" can be anything - from fresh berries and beautifully cut fruits and ending with small colorful candy, candied fruits, cookies. Chocolate drops, lemon or orange zest, sugar decor, fruit in alcohol, chocolate figurines, waffle rolls, mastic decorations - there are many options, choose to your taste.


And don't forget that the golden mean is always beautiful: by generously sprinkling cupcakes with raisins, you may get great cupcakes, but the essence of cupcakes will be lost. To decorate is not to disguise, so be reasonable and try not to overdo it.


5. How to make a cupcake box


Cupcakes, of course, can also be prepared for home holidays, however, most often these mini-cakes are made to take with you - to visit, to school, to work, to one or another outdoor event. And here the main problem arises - how to bring cupcakes so that they do not lose their attractiveness and spectacular appearance. You can’t hold 10-20 cakes in your hands at once, and if you just put them in rows in any box you find, the cupcakes will start to “ride” around the box back and forth and definitely ruin their “hairstyle”.


Of course, there is a way out, and it was invented a long time ago: ready-made industrial boxes with slots into which cupcakes are inserted for transportation. However, let's be honest: if you are not a professional cupcake business, most likely you are preparing them at the last moment - when the child suddenly remembers before going to bed that there will be a fair at school tomorrow, to which you need to bring homemade cakes. What kind of pre-ordered box is that? Here you need to make something with your own hands!


Imagine yourself with cardboard and scissors, design an ordinary box (by the way, you don’t have to design, but just take a suitable shoe box), put a “lid” inside, the size of which is slightly smaller than the box itself - just enough to stand up steadily inside. And in this very "lid" make round cuts with a diameter slightly larger than the diameter of the base of the cupcake - the cakes will firmly fit into the holes, and you can transport them without much difficulty.
