Products
  • Ground buckwheat or buckwheat flour – 200 g
  • Oat bran – 2 tbsp
  • Sesame – 1 tbsp
  • Egg white - 1 pc.
  • Water - about 250-300 g
  • Spices to taste and desire
Preparation
  1. Mix buckwheat flour, oat bran(you can take any), that is, all the dry ingredients, including salt and your favorite spices. I add salt and a little red hot pepper.
  2. If you don’t have buckwheat flour, you can grind the buckwheat in a coffee grinder. In this case, the bread will turn out to be coarser, they will contain small solid particles of buckwheat that has not been ground into flour, but I like this better and I bake bread from ground buckwheat.
  3. Add to dry mixture egg white and in parts (this is important!) water. First, add 200 g of water and mix the dough well. After the buckwheat and bran absorb water and the dough becomes thick, add more water.The result should be a dough from which you can form balls with your hands and place them on a baking sheet.
  4. Take a baking tray and line it with baking paper or a silicone mat. We form small balls of dough with our hands, place them on a baking sheet and press them with the palm of our hand so that they become round and flat.

suitable for vegans

In one black-black city on a black-black December night, when civilians fall asleep and the mafia wakes up, when the forces of darkness reign supreme, and the owls are not what they seem, I sit at the computer, work and crunch on black-black crackers.

But not simple... Under the mask of a stuffed bunny harmless crackers hide natural whole grain raw buckwheat bread. From green buckwheat with almonds and sesame. Complete benefit, Well. To cook them, we need not a stove, not an oven, not a multicooker, but just a standard central heating radiator...

For no-bake buckwheat bread we will need:

  • 140 grams of green buckwheat;
  • 70 grams of almonds;
  • 2 tbsp. flaxseeds;
  • 1 tbsp. cumin;
  • 1 tbsp. carob (or cocoa);
  • 1 tbsp. sesame;
  • 60 ml. water;
  • 1 tsp salt (less is possible).

We will prepare the green buckwheat and almonds the day before: fill them with water overnight and leave them to swell aside overnight.

Morning. It's time to start the process. And first of all, we start the blender to grind the flax seeds.

Then we add the remaining ingredients to the ground flax and turn everything into a homogeneous, not very appetizing-looking mass. By the way, you can add more water if necessary. It will evaporate later anyway.

Now we spread this mass either on a baking sheet for marshmallows in the dryer, or on homemade drying devices. I have just the second one: fiberboard strips covered with cling film.

The layer thickness can be any, but the ideal is 2 millimeters.

We immediately mark the future loaves of bread with a knife, so that later it is easier to break them off. You can even cut the pieces right away.

Almost ready. All that remains is for the heating to work. We place our devices on the radiator (or in the dryer) and wait for them to dry completely. Usually one day or night is enough for the bread (and my beloved one) to reach perfect condition.

What did we get? 16 excellent salty crackers. Mine were without cumin, but I hope it tastes even better with it. Something to enjoy on dark nights. True, the darkest night of the year has already passed. How wonderful! Course for spring:) Bon appetit!
