1. Separate the whites from the yolks and beat in a dry bowl with a pinch of salt into a strong foam. Then add sugar in small portions and continue whisking until it dissolves. Lightly beat the yolks with a mixer, add to the whites and mix gently with a spatula. Then gradually sift the flour and soda and continue mixing with a spatula.
2. Place the dough in greased molds and place in an oven preheated to 180 degrees for 10 minutes. Cool the finished biscuits.
3. Pour gelatin into 50 ml of cold boiled water and leave to swell. To prepare the soufflé, beat the whites with drops of lemon juice into a strong foam, then add sugar little by little.
