Mascarpone cheese has a creamy consistency and tastes slightly sweet with a subtle sourness. This cheese is ideal for preparing delicious desserts, of which Tiramisu is the most popular.

“Mascarpone” is not the cheapest cheese, so not every housewife can afford to buy it, but I really want to enjoy the light taste of Tiramisu. At home, the simplest, most affordable and optimal option for replacing Mascarpone cheese is cream mixed with cottage cheese.

Why strawberry?

Firstly, this berry goes well with cream cheese. Secondly, strawberries appear in garden plots and on shelves very first. Strawberries are rich in nutrients. It contains a high content of vitamin C, which protects our body from colds. This berry is also rich in zinc, iodine, folic acid, potassium and magnesium, vitamin B and phytonutrients.

How to cook strawberry tiramisu, recipe with photo

1. Brew strong coffee. If you don’t have brewed coffee, you can take 1 tbsp. instant and pour 50-70 ml of boiling water over it. Pour the coffee into a convenient bowl or plate and let it cool.

2. Mix the yolk with powdered sugar, place in a water bath and beat with a whisk. The egg mixture should thicken a little, keep it in the bathhouse for 5-7 minutes after the water boils.

3. Remove the mixture from the water bath and let it cool completely. Then add mascarpone cream cheese to the yolk.

4. Gently beat with a mixer at low speed. The mass should become homogeneous and slightly increase in volume. But be careful—overbeating the cheese may turn into butter.

5. In a separate container, whip the cream at medium speed. In order for the cream to whip well, it must be very cold. The following nuances that I will list are not at all mandatory. But if you have no experience whipping cream, then it’s better to be a little safe. So, to be on the safe side, you can first keep the mixer whisks and the mixing bowl in the freezer for 5 minutes. In addition, before opening a box of cream, you need to shake it thoroughly, because all the necessary fats collect on the walls and bottom of the box.

It is very important to whip the cream at the same speed. Well-whipped cream will increase in volume and hold its shape well. At the same time, the mass should remain tender and airy. Be careful: if you overdo it, you may end up with butter.

6. Transfer the cream into the mixture with the yolk and mascarpone cheese. Gently mix with a spatula in a circular motion from bottom to top. The creamy mass should be very tender. This is a classic tiramisu dessert cream.

7. Prepare additional ingredients: wash the mint and strawberries, take out strawberry jam or preserves.

8. Add jam a little to the creamy mass and carefully stir with a spoon. Try it, the cream should be moderately sweet, not cloying. If desired, add more strawberry jam. It will make tiramisu with strawberries even more interesting.

9. Classic tiramisu uses savoiardi biscuits, also known as lady fingers. These cookies are very tender and airy, with a light vanilla aroma and a crispy sugar crust. If desired, savoiardi can be replaced with regular sponge cake.

Since we will be serving strawberry tiramisu in bowls (or glasses), we cut the cookies into several pieces.

10. Quickly dip one cookie at a time in the cooled coffee. If you leave the cookies for at least 2 seconds, they will become very soggy and the dessert will turn out too wet.

11. Immediately place the cookies on the bottom of the bowls.

12. Place about 2-3 tbsp on top. cream.

13. Wash the strawberries, remove the stems and cut into slices.

14. Lay out the strawberry slices.

15. Add a few more spoons of cream.

16. Dip the remaining cookies in coffee and place on top.

17. Sprinkle tiramisu with strawberries with cocoa powder through a fine sieve.

18. Place the finished dessert in the refrigerator for at least 2 hours, it should cool well. Then decorate with strawberries and mint.

Delicious strawberry tiramisu is ready! Bon appetit!

The Italian dessert tiramisu is a romantic, delicious and magical dessert. If you remove the mystery from it and break it down into its components, it turns into a small set of specific products. No less refined, however. The basic elements of tiramisu are not so simple: savoiardi cookies, cream with mascarpone cheese and coffee, which soaks the cookies. What will we have? Summer tiramisu: does not involve coffee, but is made with the most divine of berries - strawberries. The main thing you need to know about tiramisu - both classic and berry: it is the simplest dessert to make. And that’s why both men and children cook it with pleasure. Fluffy cake at home according to our recipe - for you step by step and with photos.

What do we need for tiramisu?

  • grated strawberries with sugar - 200-250 g;
  • savoiardi - 20 pcs.;
  • mascarpone - 250 g;
  • eggs - 2 pcs.;
  • powdered sugar - 60 g;
  • lemon juice - 1 tsp.

From the specified amount of ingredients you get about 4-6 servings of tiramisu.

How to make strawberry tiramisu

  1. Let's start cooking with cream. In our recipe it is the classic one, but, as indicated above, it can be replaced with other options, recipes for which you will find at. And for traditional cream, we separate the whites and yolks into different containers suitable for whipping. Beat the whites with a mixer, throwing in a pinch of salt, until “stable peaks”, i.e. to the point where such foam is formed that when the container is turned over, it does not flow out or fall out of it. When large bubbles form, add 1 tablespoon of powdered sugar.
  2. Beat the yolks separately with the remaining powder until white and increased in volume.
  3. Add mascarpone to the beaten yolks and continue using the mixer until completely mixed.
  4. Add whites in parts. And with a spatula, carefully so as not to drop the foam, fold the whites into the cream using a turning motion from top to bottom. Ready.

  5. If you just have frozen strawberries, you can turn them into puree without defrosting them by mixing them with sugar using a blender. In this case, the quantity can be determined according to taste. Add lemon juice to grated strawberries. It will make the tiramisu taste more complex and richer. Transfer the mixture to a container into which it will be convenient to immerse the savoiardi. Dip the cookies on both sides.
  6. Arrange 10 cookies in two rows. In the photo you see a flat dish. In fact, this is done only for better clarity. The dessert is very delicate; it is most convenient to prepare it in a container of a suitable size with high sides - in the same food container. You can also do it in portions - in beautiful bowls or wide, stable glasses, breaking the cookies into pieces.
  7. Spread half the cream on the savoiardi. It is very convenient to use a pastry bag for this purpose.
  8. Place the remaining cookies on top, after dipping them in strawberry puree.
  9. Cover with the remaining cream.
  10. Place the dessert in the refrigerator for several hours. Savoiardi should be well soaked, soft and tender.

You can decorate tiramisu with fresh strawberries, chocolate shavings, and grated lemon zest.

This version does not require fresh strawberries. Frozen or ground berries with sugar, which housewives prepare for the winter, are perfect. You can make dessert with other berries or fruits - both fresh and frozen - apricots, raspberries, bananas.

In extreme cases, mascarpone can be replaced with cream with sour cream or curd mass made from cottage cheese.

The most difficult thing in preparing tiramisu, as you understand, is the presence of a special cheese mass and special cookies. Everything else is not a problem. Sweet dreams to you with homemade tiramisu!

They say you haven't visited Italy if you don't know what tiramisu is. This is the most popular delicacy in the world, the name literally translates as “Elevate me.” This is not a cake or a cake, rather it is something in between both delicacies. To prepare the most famous dessert, Italians use Savoiardi, an oblong biscuit cookie, and Mascarpone, a young soft cheese. A recipe for tiramisu with strawberries at home cannot do without these products. But unfortunately, they can not always be bought and not everywhere. Such original cookies are difficult to find, and the cheese is quite expensive. Fortunately, there are no irreplaceable ingredients. For example, sauvyardie can be replaced with regular sponge cake. As for cheese, an excellent alternative would be full-fat cottage cheese with cream. Or, you can also prepare it at home with your own hands from cream; for the recipe for mascarpone at home, see the link.
