  • 700 g pork ribs,
  • 100 g pork fat,
  • 300 g sauerkraut,
  • 2 onions,
  • 3 potatoes,
  • 1 carrot,
  • 1 white root (celery, parsley, parsnip),
  • 3 cloves of garlic,
  • dried herbs (dill, parsley, basil),
  • 2 bay leaves,
  • 2 allspice peas,
  • red ground pepper to taste (or 0.5 pod),
  • ground black pepper to taste,
  • sugar to taste,
  • salt to taste,
  • 3 liters of water.

Sauerkraut cabbage soup - preparation:

  1. Wash the pork ribs, process them, and cut them into portions so that each bone contains meat.
  2. Boil water in a saucepan and place the pork ribs in it. Bring to a boil, skim off the foam, add an onion cut in half, a white root, Bay leaf, allspice and salt. Cook the broth for about 1 hour.
  3. Cut the bacon into strips. Finely chop the onion. Grate the carrots coarse grater. Cut the potatoes into cubes. Chop the greens and garlic. Chop the sauerkraut if necessary.
  4. Melt the lard in a frying pan using lard. Remove the cracklings, sauté the onion in lard, then add the carrots and fry for 5-7 minutes. At the end, add garlic, herbs, red and black ground pepper and fry for a couple of minutes.
  5. Remove the ribs from the broth and strain the broth itself. Return the meat to the pan, add the potatoes and simmer for 10 minutes. Add roasted cabbage and sauerkraut to the broth. Bring to a boil, reduce heat and simmer for about 20 minutes.
  6. Try sauerkraut cabbage soup and, if necessary, add salt, sugar and cabbage brine. Then remove from heat and let the cabbage stew for about 30 minutes.

  • 400 g white cabbage;
  • 3 potatoes;

  • 50 ml vegetable oil;
  • 1 garlic clove;
  • 1 tbsp. tomato paste;
  • 1 bay leaf;
  • 0.5 tsp each salt and pepper.

    We prepare delicious cabbage soup from fresh cabbage with pork, starting with cooking meat broth. To do this, we thoroughly wash the meat, cut off things we don’t need: chaff, fat, bones and more. Cutting the pulp small cubes, but not too small, because After cooking, the meat decreases greatly in volume. We put everything in a saucepan, fill it with cold water and send it to cook on the burner.

    When the first foam appears, be sure to remove it with a slotted spoon. Add a little salt to the broth and cook over medium heat for about half an hour, covering with a lid.

    We free the head of cabbage from the top leaves, rinse it, cut it in half, and chop it into thin strips with a sharp knife with a long blade.

    Place the potatoes in the pan with the prepared meat, after draining the water. Cook the vegetables until almost done. Next ingredient The one we'll add to the pan is cabbage. Cook it until soft. At the end of cooking, season the soup with roasted vegetables, stir and wait until it boils again.     Peel the vegetables. Cut the cabbage into strips, carrots, parsley root and potatoes into small cubes.

    Remove the finished ribs from the broth. Add chopped vegetables to the broth, add water (the water should completely cover the contents). Cook over medium heat for about 15 minutes until done. Add some dry vegetable seasoning.

    Add fried bacon and onions. Season the cabbage soup with cumin, salt and pepper. Add ribs. Bring to a boil and set aside.
