But, this is just “red grass”, not a berry. But the home-prepared berry in its own juice turns out fragrant, tender, almost like fresh. Moreover, the final product can be said to be two-part. You get both berries and strawberry syrup. It turns out very tasty, which can be prepared using strawberries in its own juice.

This is not to say that cooking strawberries in their own juice is quick. But you can’t call it complicated either. Just do everything consistently and you will succeed!

We wash the strawberries in cold water, tear off or cut off the stems, and sort them out. Place in a colander or scatter on towels to drain the water from the berries.





Place in a saucepan or small bowl food products. It is advisable that the dishes have an enamel coating.

We measure out half a kilo of granulated sugar and sprinkle it on the berries.





Let it soak in sugar. Time required for impregnation: from 8 to 10 hours. I put the strawberries in the refrigerator to soak and cover the bowl. cling film so that the strawberries do not absorb foreign odors. During this time, the strawberries will release a lot of juice.





Place the bowl with strawberries on a warm stove. And over low heat we simply heat, do not cook, the berries. The granulated sugar should completely dissolve.







We sterilize glass jars and lids.

Place the strawberries and syrup in a sterile container.

Now our task is to sterilize the product already placed in jars. We will sterilize using regular saucepan. Pour water into it at the same temperature as the jars with laid out strawberries. (This important condition so that the temperature difference does not cause the glass to burst.) Place the jars of berries in the water. The water should be somewhere up to the neck of the jars, or a little lower. If necessary, add water or, on the contrary, drain the excess. The main thing here is that when boiling, water does not get inside our preparations.

We cover the jars with strawberries with sterile lids (just put them on top, don’t screw them on). Turn on the stove and simmer over low heat for 10 to 15 minutes. The starting point is the beginning of boiling.





We remove our installation from the stove and turn off the fire. Carefully remove the jars using oven mitts (be careful, the pieces are hot).

Now the lids can be rolled up, which is what we do. Let's check how tight the rolling process was. To do this, tilt the jars to the right and left. If no drops appear, turn the jars over and put them on the lids. In this inverted state we will leave them for a while. We are waiting for the strawberries to cool completely.

The first thing we do is sort out the strawberries, remove the spoiled ones and tear off the tails.

When the strawberries are ready, we can actually start canning. To do this, scatter the berries into clean and dry jars, alternating layers: strawberries - sugar - strawberries, etc. Sprinkle sugar depending on how sweet you like it. In our case, this is 1 tbsp. l. on top of each layer.


Having placed the strawberries in jars and sprinkled them with sugar, we leave them to release their juice. This takes approximately 6 hours, but can be left overnight if desired.


When enough time has passed and the strawberries have released their juice, you can continue the canning process.


The next step is sterilization. You need to take a pan with a towel on the bottom. Place jars of strawberries in it, covering them with lids. If all the jars don't fit in one go, save them for the next time.



Pour water into a saucepan up to the hangers of the jars, bring to a boil and sterilize for 20 minutes. Then we take it out using tongs and roll it up.



Be sure to check that the lid fits tightly after rolling. To do this, simply turn the jar on its side and see if the syrup leaks.

    You should start this preparation by choosing strawberries. The criteria for such a choice have already been mentioned: you need ripe, natural strawberries with a deep taste and rich aroma.     Already collected berries need to be removed from the stalks and thoroughly washed under running water, putting the strawberries in a colander and leaving them to drain there. During this process You can also remove all spoiled berries or, due to some criteria, not suitable for harvesting.

    Helpful advice: choose medium-sized or slightly smaller berries for closing, this will make it more convenient to work with them.

    During the time it takes for the strawberries to dry in a colander, you can have time to prepare the glass containers. Selected small jars are sent to the oven and sterilized at a temperature of 100 degrees for about 15-20 minutes. Of course, before this they need to be thoroughly washed in hot water and soda, rinsed and wiped dry.

    Now that the jars are ready, we begin to fill them with already dried strawberries. Place the first layer of berries on the bottom and add a tablespoon of sugar on top. Each layer can be lightly pressed to the bottom with the same spoon, but do not overdo it, because we want to keep the shape of the berries intact.

    Fill the jar to the very top as shown in the photo. It’s okay if a small mound forms, because after sterilizing the canning, all the sugar will melt, the strawberries will release juice and significantly decrease in volume.

    We also add a tablespoon of sugar on top of the last layer. Calculate the amount of refined sugar you need based on the amount of strawberries that you purchased or collected for harvesting.

    Now we begin the process of sterilizing the workpiece. Cover the bottom of a deep, voluminous pan with a piece of clean cotton cloth, folded so large. A regular clean kitchen towel will also work for this purpose.

    Place jars of strawberries in sugar in a saucepan and pour hot water so that it reaches the hanger of the glass container. A kitchen towel is needed at the bottom to prevent the glass from breaking when touching the hot metal. Place the pan on the stove and bring the water to a boil, simply cover the necks of the jars with lids. After boiling, reduce the heat and sterilize the workpiece for 15-20 minutes. After the specified time has passed, carefully remove the jars, wipe them and seal the lids tightly.

    The indicated time is only suitable for half-liter jars; a larger volume will take more time, respectively.

    During sterilization, the strawberries will give a lot of juice and decrease in size; the workpiece can be stored in the pantry at room temperature after it has cooled completely.

Wash the strawberries in water and immediately tear off the tails from each of them. Place the berry mixture in a container.

Salt the released water and pour the mixture into a saucepan, cauldron or container with a non-stick bottom. Let's add granulated sugar And citric acid or replace it with lemon juice.

Place the container on the stove and bring to a boil, and then reduce the heat. Simmer the strawberry mixture on low for about 10-15 minutes, until the berries become soft and give up all their flavor and juice to the jam. If desired, you can remove the foam with a slotted spoon, or you can leave it - I don’t remove it.

We sterilize jars and lids in microwave oven, oven or water bath. Carefully pour the strawberries in their own juice into containers and roll up the lids using a canning key. We simply screw the jars with threads on with hot lids.

Be sure to check the tightness of the workpieces and leave them to cool, and then transfer them to a closet or pantry. Strawberries in their own juice are ready for the winter.

I pour the mixture into the blender bowl and add 1-2 tbsp of sugar. Use sugar according to your taste. Puree the berries until smooth and sugar dissolved, about 2 minutes.

For freezing, I transfer the strawberries into containers, and you need to shake the containers a little so that the berries fit more tightly. I pour strawberries berry puree to the edge of the form.
