I made jam for the first time this year, and it turned out delicious. I advise you to cook according to my recipe.

  • 3 kg of rowan berries,
  • 4.5 kg sugar,
  • 1 kg,
  • 0.4 g walnuts(can be replaced with cinnamon, half a teaspoon),
  • 3 glasses of water,
  • 2 large lemons.


Pour boiling water over the berries, leave for 12 hours, and drain the infusion. Prepare syrup from 3 glasses of infusion and sugar. Add berries, peeled and seeded apples, lightly chopped nuts to the syrup, cook for 5 minutes from the moment of boiling.

Let cool until warm and cook for 10 minutes from the moment it boils. Add the chopped lemons and cook for another 15 minutes. Don't forget to remove the foam.

Remove the jam from the heat, let it cool slightly and pour into sterile jars, close with simple lids and put away for storage.

You can take a small amount, I just have a large harvest of berries, so I make a lot of jam.

Chokeberry raisins

  • 1.5 kg of berries,
  • 1 kg sugar,
  • 2 tbsp water,
  • 1 teaspoon of citric acid.

We make syrup from water and sugar. Dispense the berries and citric acid into boiling syrup and cook for 20 minutes. Cool and place the berries in a colander, let the syrup drain and place the berries to dry on a baking sheet, on parchment paper. Stir occasionally while drying. Dry for 3-4 days. We store in paper bag or in a glass jar with a gauze tie.

It will be very tasty if you sprinkle the berries with powdered sugar before putting them to dry.

The syrup left over from cooking the berries is poured into a sterile container and stored for making drinks and jelly.

It will turn out very delicious drink– liqueur, if you mix syrup with good vodka 1:1. I tried it, it’s a wonderful, beautiful and tasty drink.

Universal berry for compote

Chokeberry berries give a very beautiful color to compote and can be combined with any fruits and berries. One handful per three liter jar enough to paint a nice, rich color.

For 1 three-liter jar of compote we take 0.5 kg of sugar. Pour chokeberry berries into the jar, filling it 1/3 full, add apples or any other fruit (you can use just one handful for taste).

Cook the syrup, add 0.5 sugar to 2.1 liters of water, carefully pour the boiling syrup into the contents of the jar and immediately twist it, put it under a fur coat until it cools.


Compotes are stored for a very long time, several years.

Cut into slices, remove the core and stems, and place the apples in boiling water or a cold 0.01% citric acid solution for 2-3 minutes.

Place thoroughly washed chokeberry berries along with apples in jars up to their shoulders and pour hot syrup over them. Sterilize in boiling water.

  • Compote of chokeberries and raspberries

600–700 g chokeberry berries, 300–400 g. Ingredients: 333–429 g of sugar per 1 liter of water.

Wash the berries in cold water and blanch for 1-3 minutes in boiling water, then cool in cold water.

Sort the raspberries, remove the stalks, sepals and receptacle, place in a colander and wash, repeatedly immersing them in cold water.

Place the prepared berries in layers in jars, shaking occasionally to compact.

Fill jars with berries with hot syrup and sterilize in boiling water.

  • Assorted chokeberry compote

700 g of chokeberry, 100 g of apples, pears and plums. Ingredients: 333–429 g of sugar per 1 liter of water.

Wash ripe chokeberry berries, blanch for 1-3 minutes in boiling water and cool in cold water.

Mix chokeberry juice and apple juice in equal quantities, heat, add sugar to taste (40–60 g per 1 liter of mixture), bring to a boil, boil for 4 minutes, immediately pour into heated jars or bottles and seal.

Juice can also be prepared in a juicer. In this case, chokeberry berries and apple slices are placed together in a juicer.

1 kg chokeberry, 800 g sugar.

1 kg of chokeberry, 1.3–1.4 kg of sugar, 2 glasses of water.

Boil syrup from 2 glasses of water and 500 g of sugar.

Pour boiling syrup over the berries, bring to a boil while stirring, cook for 3-5 minutes, then set aside for 8-10 hours. Then add the remaining sugar, stir and cook until tender with short breaks.

  • Chokeberry jam with pears

1 kg chokeberry, 300 g pears, 1.5 kg sugar, 2 glasses of water, 5–7 g citric acid, vanilla sugar or cinnamon.

Place chokeberry berries in boiling water for 3-5 minutes, remove and cool in cold water, drain and place in a cooking bowl. Prepare syrup from 2 glasses of water and 500 g of sugar and pour it over the berries.

Bring to a boil, simmer for 3-4 minutes and set aside. After 8-10 hours, bring to a boil, add sugar.

Cut the pears into slices, remove the skin and core.

Place the slices in boiling water for 8-10 minutes, without letting them boil. 15–20 minutes before the end of cooking the rowan, add apples to the jam and cook until tender.

To ensure that the apples are evenly mixed, shake the bowl in a circular motion from time to time. Just before the end of cooking, add citric acid and vanilla sugar or cinnamon to the jam.

  • Chokeberry jam with red currant juice

1 kg of chokeberry, 1.2 kg of sugar, one and a half glasses of water and one and a half glasses of juice, 2–3 g of citric acid.

Prepare syrup from water, freshly prepared redcurrant juice and sugar.

Place prepared chokeberry berries in a colander and immerse for 3–5 minutes. hot water, cool in cold water and place in a cooking basin

Pour hot syrup over the berries, leave for 5–6 hours, and then cook until tender in one step.
