Quick pie on kefir

According to the following recipe, a pie with frozen berries in the oven is prepared from the following set of products:

  • a couple of eggs;
  • ¾ glasses of sugar + 4 tbsp. filling spoons;
  • 190 g of kefir;
  • half a packet of oil;
  • 1 g salt;
  • 6-7 g baking powder;
  • one and a half glasses of flour;
  • 0.45 kg of berries;
  • a couple of tablespoons of sour cream;
  • vanillin for flavor.

Leave the butter on the table for a couple of hours to melt. Then cut it into cubes and beat together with ¾ cup sugar. Add an egg, pour in kefir and mix well again. Add flour sifted together with baking powder in small portions, add vanillin. As a result, a homogeneous mass should be obtained, in consistency resembling thick sour cream.

Grease a high baking sheet with any fat and pour out the dough. Arrange frozen berries and sprinkle with sugar. If you are using large berries such as cherries, you can press them into the dough a little. Send the cake to bake at 200 ˚C. Cooking time - half an hour. Grease the finished dessert with sour cream.

  • flour - 800-900 grams;
  • dry yeast - 11 grams (pressed - 25 grams);
  • eggs - 2 pieces;
  • margarine or butter - 100-150 grams;
  • salt - 1 incomplete teaspoon;
  • sugar - 4 tablespoons;
  • vanilla sugar - 10 grams;
  • any berries - 500 grams;
  • sugar for berries - to taste;
  • egg for greasing - 1 piece.

  1. For making pies, I used slightly warmed kefir (up to 35-40 degrees). But this butter dough can be made with milk, whey, yogurt and even water.
  2. Add yeast to kefir, stir well and leave for 5-10 minutes to activate. Even if you already have activated dry yeast, then still carry out such a manipulation - this will only improve the process of raising the dough. If you add compressed yeast, then initially you need to crumble it and stir it well in the liquid until it is completely dissolved. And then leave to stand for a while.
  3. Add eggs, salt, sugar, vanilla sugar or vanillin to softened margarine (or butter) and grind everything into a homogeneous mass.
  4. Add the sifted flour in small portions to the egg-oil mixture (about a third of the total). Knead the baking - the dough will turn out to be very soft, sticky, close to semi-liquid.
  5. When the yeast swells in kefir and is activated, add a third of the flour to it and knead. Then we combine it with baking and knead until smooth.
  6. Add the remaining flour to the resulting dough in small portions, bringing to the desired consistency. The dough should be soft and elastic. Knead until it starts to lag behind the hands.
  7. Cover the bowl with the dough with cling film or linen towel and leave in a warm place to rise for 1-1.5 hours. During this time, it should grow 2.5 times.
  8. Put the matched butter dough on the table, sprinkled with flour. And we separate the blanks for pies, with an approximate size of an egg. But here you can navigate as you see fit.
  9. We roll each piece into a cake, approximately 0.5 centimeters thick.
  10. You can use any berries for the filling (raspberries, strawberries, strawberries, cherries, mulberries, and so on). We sort them out, rinse them under running water and put them on a sieve so that the liquid is glass. Then we combine and mix well. Please note - we do not add sugar to the berries, otherwise they will immediately start up the juice.
  11. We spread the berries on a rolled cake, and only now we add a little sugar and sculpt a pie. We pinch the edges like a dumpling.
  12. We spread the pies on a baking sheet, greased with vegetable oil. We put them seam up so that berry juice does not flow during baking, which can burn. Also note: leave a gap of about two centimeters between the pies. Since the dough will increase during baking and the cakes may stick together.
  13. Before baking, leave the pastries for 5-10 minutes, so that they come up a little. Shake the egg lightly and grease the pies with it.
  14. Preheat the oven to 200 degrees and send a baking sheet with pies into it for 15-20 minutes.

Butter pies with berries are ready! How soft and tender they are, with a stunningly appetizing aroma, and inside the juicy, sweet filling.
