I removed the excess dough, it will go to the next rolling. And in the center of the blanks I made holes of small diameter. For this, I used a sunflower oil bottle cap. Cut out cores can be collected in a common lump of dough, or you can fry separately. Thus, in addition to large "bagels", you will also get lush donuts on kefir in a mini version!

Well heated frying pan with refined oil. I lowered the blanks into the hot oil. I did not lay it very tightly, because the pastries will increase in size under the influence of temperature. I fried on each side until a nice blush, but here it's a matter of taste - you can make it more fried, or you can make it paler. The main thing is that the dough is baked. To form donuts, you need to make cakes from balls. Next, stick a wooden stick into the center of the cake (you can use a pencil or pen). Then quickly twist the cake with a stick on the table. I once saw this method already and I don’t remember where, but the main thing is that it works! You can, of course, form donuts in the traditional way - roll out the dough 1 cm thick, cut out mugs with one capacity, and holes inside with a smaller capacity.   3. Kefir is poured into a spacious bowl and kept at room temperature for about half an hour.

First stage:

  1. In a deep bowl, pour eggs with kefir, add vanillin.
  2. Mix the mass well so that the components are connected to each other.
  3. After that, beat the mixture with a blender at the lowest speed.
  4. Without turning off the device, add soda and continue beating.
  5. After about ten seconds, pour sunflower oil into the mass.
  6. Then turn on the blender again at low speed, pour in the granulated sugar.
  7. Add a third of the flour, increase the speed of the blender.
  8. As soon as the flour has interfered well, turn off the device and set it aside.
  9. We begin to knead the dough by hand, adding another portion of flour.
  10. We add the remaining flour very little by little, without stopping the active kneading of the dough.
  11. As soon as the dough stops sticking to surfaces and hands, stop kneading.
  12. Let the mass stand for about ten minutes in a bowl covered with towels.

Second phase:

  1. We shift the mass onto a floured kitchen table and roll it into a layer.
  2. Using a glass or a special shape, cut out donut blanks from the dough.
  3. In the middle of each blank, cut out a circle using a plastic bottle cap.
  4. We let the donuts stand for a while, but for now we heat the oil in a pan.
  5. As soon as the oil begins to actively bubble, we dip the first batch of donuts into it.
  6. Fry them until they get a pronounced light brown color.
  7. We take out the finished donuts with a slotted spoon and put them on paper towels.

Your delicious kefir donuts are completely ready to eat! Lubricate the surface of your products with a drop of condensed milk and cover them with multi-colored confectionery dust or curly pieces of candied fruit to give donuts a very festive and cheerful look.
