Sour milk should be at room temperature, you can warm it up a little, but not much. If the liquid is hot, the yeast will not start working, it will just go bad. Now it remains to wait for the yeast to ferment slightly. I chose dry fast-acting Saf Moment yeast for baking, Voronezhskie still works well. I prefer to use only these two types, the baked goods do not have a yeast aftertaste or an unpleasant smell.

2. Now let's move on to the other components. We take an egg, add sugar to it and beat it with a whisk, until the sugar is completely dissolved. It is not necessary to beat until foamy, because we do not make a biscuit, but buns.

3. The butter must be melted before kneading. If you have a microwave, place the butter in a plate and place in the oven for 1-2 minutes. It is very important that the butter does not boil, but simply melts. I often just cut the butter into small pieces, put it in a skillet and put it on the fire. As soon as the butter begins to melt, I remove it and stir with a spoon until smooth.

4. Take a bowl, or the container in which we usually knead the dough. Pour the fermented yeast, beaten egg, melted butter, salt and vanillin into it. Then add the sifted wheat flour and knead the dough. It is better to add flour little by little, mixing it, so our dough for kefir buns will be light and airy.

5. Knead the dough well, then put it neatly in a deep bowl and set it in a warm place for 35-50 minutes to rise. If you bake in the winter, a place near the battery is ideal for the dough.

6. Here the bread roll dough has risen. It has more than doubled in size. We take it out of the mold where it rose, and gently knead it again using a kitchen table sprinkled with flour or oiled with vegetable oil.

8. Put the filling in the middle of each cake, in our case, jam or thick homemade jam, fasten the edges to the center and form balls with the filling with our hands. We have already done this process for, for example, in this photo. Unfortunately, the intermediate photo for the jam buns is blurry. But I think the process is clear.

9. Now we take a high rectangular baking sheet, grease it with vegetable oil and put the balls with jam on it quite close. During the proofing, the buns with jam will increase in size. For a good rise, the baking sheet must be placed in a warm place, for this purpose I use the hob of the stove, while the oven is already warming up. 30-40 minutes for raising buns on kefir is quite enough.

10. Before straightening, the top of the "Friendly Family" buns should be greased with a beaten egg, or even better, only with yolk. The yolk will give the baked goods a more beautiful dark color. Sprinkle each bun on top with a mixture of sugar and ground cinnamon. 11. We are waiting for the buns to increase in size, take our baking sheet and place it carefully in a well-heated oven. We bake buns "Friendly family" at a temperature of 180 degrees. The baking itself does not last long, about 30-35 minutes. It is easy to check the readiness of the dough with a wooden stick; if dry, the buns are ready.
