Cake "Gypsy" - a wonderful yummy! Cake "Gypsy": a culinary recipe, cooking features and reviews Gypsy cake reviews.

Leafing through my old cookbook, I came across this cake. This cake is from the distant 90s, we used to make it often. It was a duty recipe, there was always jam and kefir in the house. Why is he called Gypsy? Because blackcurrant jam goes into the dough, though this time I used apple jam.

So, let's prepare such products as in the photo. If you take sweet jam, then add less sugar to the dough.

Add soda to kefir. We do not extinguish soda, kefir does it. Next eggs, sugar.

We cover the form with paper and pour the dough. We put in a preheated oven to 180 degrees for 25 minutes.

Let the finished biscuit cool down.

Invert the cooled cake onto a plate. So that the bottom is on top.

We cook cream. We mix all products. Put on a slow fire and bring to a boil. Boil for 3 minutes until slightly thickened. We need liquid cream.

And slowly pour the cream over the entire surface of the cake. Shedding well all edges.

Biscuit cake Gypsy is ready.

Let soak and cut. Bon appetit!

Girls! We love him, he's amazing! I don’t even see the point in praising it, you just need to try it!

Cake "Gypsy"

The favorite cake of my childhood and adjacent ages, the invariable symbol of the holiday, so long and so undeservedly forgotten in favor of synthetic purchased pastries ... How glad I am that I remembered it and dug up my grandmother's notebook with recipes!

You will need

For the crust:

  • Sugar - 2 cups;
  • Cocoa powder (only real, bitter!) - 2 tbsp. spoons;
  • Eggs - 4 pcs.;
  • Low-fat sour cream or natural yogurt - 2 cups (400-450 g);
  • Wheat flour - 3 cups;
  • Soda - 1 teaspoon without top;
  • Vinegar - 1 tbsp. spoon.

For cream:

  • Butter - 200 g;
  • Boiled condensed milk (namely milk, not a "milk and vegetable product" !!!) - 1 can (about 350 g);
  • Cocoa powder - one and a half tbsp. spoons;
  • Milk - 3-5 tbsp. spoons.

For impregnation:

  • Strongly brewed sweet tea (almost tea leaves) - 1 cup (or a little more);
  • A little strong alcohol - cognac, vodka, alcohol ...

Process

Mix all the ingredients for the cake, except for soda and vinegar, and mix them thoroughly so that there are no lumps and white inclusions of flour in the dough. You can use "small kitchen mechanization" like a mixer. Grease a baking dish with oil, preheat the oven to 180 (approximately!) Degrees. We traditionally bake this cake in the shape of the "Miracle" oven, but you, of course, can use any others. Extinguish the baking soda with the vinegar, stir in the batter and immediately pour the batter (it will be quite runny) into the mold. Put the mold in the oven and bake for about half an hour. The exact baking time depends on the shape you choose. Check the readiness of the cake with a toothpick or a match.

When the cake is baked, remove it from the oven, cool and remove from the mold.

While the cake is cooling, take care of the cream. First mix butter and boiled condensed milk. To make the oil softer, hold it for some time at room temperature beforehand. Then dilute the cocoa with warm milk and add to the cream. Mix everything thoroughly again. Cream is ready!

With a sharp knife, cut the cooled cake into three "washers".

Prepare the impregnation for the cakes by mixing strong sweet tea and some alcohol. Cherry liqueur is ideal (then you do not need to add sugar to tea). Or you can just mix vodka with cherry jam ... Gently soak the bottom cake with a teaspoon.

Then spread cream on it - a little less than half of the total.

If possible, put cherries on top of the cream - fresh or canned, this will make your cake even tastier. Then cover the bottom cake with the second and repeat the procedure. Leave a little cream to lubricate the top.

Putting the top cake in place, grease it with the rest of the cream, sprinkle with grated chocolate and decorate with berries. The cake is ready! You can start eating immediately, but it will be tastier if you let it stand for a couple of hours at room temperature ...

Alas, man is weak, and therefore he cannot do without the satisfaction of his whims! Sometimes he is drawn to eat salty, and sometimes sweet. This is fine. The main thing is to find the strength in yourself to stop at reasonable portions, and not turn every day into a holiday of disobedience.

On a festive day, it is perfectly acceptable to indulge yourself. For example, prepare a cake "Gypsy". It is so delicious that it is able to win the heart of even those who do not like sweets at all. So the dessert will be to your liking.

Associative series

Already the name of the cake "Gypsy" inspires. Such associations immediately pop up as beauty, bright colors, a slight touch of exoticism and the enchanting atmosphere of the night. Actually, this dessert embodies all this. It has a dark color of cakes and layers, has a mild taste and rich aroma. Well, you can experiment with the recipe. After all, no one has canceled the struggle for a good figure, but you always want to afford a piece of cake.

Let's go through the list

So, how to make a Gypsy cake? Let's start with the selection of ingredients. For the cake, you need about 3 cups of wheat flour, a teaspoon of soda, 2 cups of sugar and low-fat sour cream, 4 eggs, 2 tablespoons of cocoa, and a tablespoon of vinegar.

Sour cream in this recipe can easily be replaced with natural yogurt. Flour should be sifted before cooking. Then the dough will be more lush and airy.

For the cream, you will need butter (200 grams), a can of boiled condensed milk, a pinch of cocoa and about 50 grams of milk.

Well, do not forget about impregnation, otherwise our "Gypsy" cake will be dry. Stock up on a small dose of fragrant strong alcohol and a glass of sweet black tea.

Classic variant

If you are planning a Gypsy cake for dessert, it is better to try the recipe in advance, otherwise you may simply miss the time. On average, the whole job will take 70 minutes, but after the cake you need to let it brew, so you need to do it in the morning in order to treat yourself and your family to dinner.

So, in a deep bowl, combine sugar, cocoa, eggs, yogurt or sour cream. Add flour, mix everything thoroughly until the last lumps disappear. Quench the soda with vinegar and mix into the dough, which should eventually turn out to be quite liquid.

By this time, the oven should be preheated. Lubricate the mold with oil and pour the dough into it. Now send the form to the oven and bake for 35 minutes at a temperature of 180 degrees until cooked. After the cake needs to be cooled and removed from the mold. While the base of the cake is cooling, there is time to work on the cream. Mix butter with boiled condensed milk, and then add cocoa diluted with warm milk to the mixture. The cream should be thick.

Final stage

The cream and base are ready, which means it's time to form the cake itself. Cut the cake into three "washers" with a sharp knife. Mix tea with alcohol and use a teaspoon to soak the cakes. Most often they use cognac or vodka, but the original taste of impregnation is possible when vodka is combined with cherry jam or tea with cherry liqueur.

Spread cream on the cakes and lay other cakes on top. Leave a little cream for the top. Use grated chocolate and fresh berries to decorate the surface.

As an option

And it’s even easier and faster to cook the Gypsy cake in a slow cooker. The dessert turns out tender, elastic, with a sour layer. In this version, you can not add whole eggs to the base, but only proteins can do. Then the dough will be airy and less high-calorie. Instead of soda, you can add baking powder to the base. And replace sugar with fructose or, even better, honey.

Mix all the ingredients and send them to the multicooker form. So you save 10-15 minutes to quickly prepare the cream. Try to make it more exotic and add a little cinnamon, and replace the butter with fruit puree. Knead the cream with a mixer or blender, but at a moderate speed. The cream should reach the consistency of thick sour cream. For impregnation, use cherry liqueur or good cognac with tea. And the main highlight lies in the addition of cherries to the base. Soak each cake, coat with cream and decorate with halves of berries.

The main thing here is not to overdo it with the juiciness of cherries, because an excess of juice can adversely affect the shape and taste of the dessert. Do not forget to coat the side edges with cream and lay the berries on top. So the "Gypsy" cake with cherries is ready. Bon appetit!
