How to cook chicken roll in puff pastry recipe with photo

Wash the chicken fillet and lightly dry it. We beat it thoroughly with a hammer so that the meat becomes as thin as possible and equal in thickness on all sides. Then rub with spices and salt. Let's take a little break.

Defrost puff pastry. Then roll out thinly. However, not so thin that it breaks during baking. We spread the beaten chicken fillet on a sheet of dough.

Yeast-free puff pastry
Chicken fillet - 300 g
Champignons - 200-300 g
Onion - 1 pc.
Cheese - 100-150 g
Mayonnaise

Chop the onion, put it in a preheated pan with vegetable oil, fry until golden brown. Mushrooms cut into slices or small segments, transfer to a pan with onions. Add finely chopped chicken fillet there, salt and fry everything together until half cooked, cool.

Roll out the puff pastry thinly, put the filling on it, add a little mayonnaise over the entire area, salt, pepper if necessary, sprinkle with grated cheese and roll the resulting layer into a roll. Carefully place the roll, seam side down, on a greased baking sheet. Lubricate the roll with a beaten egg, put in an oven preheated to 190-200C, bake for 40-45 minutes.

For this recipe, there is a variation of the filling without cheese. In this case, one egg must be beaten with two tablespoons of mayonnaise, mixed with pre-fried onions, mushrooms and chicken. To taste, you can add chopped garlic and finely chopped dill to the resulting mass.

The dough can be bought ready-made, thawed in advance. It will take you about half an hour to prepare chicken pies for baking. And then another 40-45 minutes in the oven, the rolls will be baked without your participation. The dish is unpretentious, but quite satisfying and tasty and satisfies our desire for a variety of daily menus.

Need to:

  • Yeast-free puff pastry - 500 grams (we buy ready-made frozen)
  • Chicken fillet (breast) - about 800 grams
  • Sesame seeds - about 1 heaping tablespoon
  • Chicken egg - 1 piece
  • Salt - to taste (about 1 teaspoon)
  • Ground black pepper - to taste (it seems to us, no more than 0.5 teaspoon)
  • Margarine or butter (grease the baking sheet if you are not using baking paper) - about 15-20 grams

Cooking:

If you are using ready-made frozen dough, it must first be thawed at room temperature. Remove the dough from the freezer 2-3 hours before you intend to start cooking the chicken in the dough, remove the dough from the package and leave it on the cutting board.

Rinse the chicken fillet (we have breasts) with cold running water and pat dry with a paper towel. Cut the fillet into thin plates.

Each layer of fillet should be slightly beaten off on both sides to a thickness of 8-10 millimeters (it is convenient to do this at home by putting a piece of chicken in a clean plastic bag so that splashes do not fly all over the kitchen when beating).

The defrosted dough needs to be rolled out into a rather large rectangle so that all the chicken fillet pieces can be laid out on it.

We lay out thin pieces of chopped chicken meat over the entire area of ​​\u200b\u200bthe dough, not necessarily close to each other. On two opposite (shorter) sides, we leave 5-7 centimeters of dough, not covered with chicken, so that it is more convenient to roll the roll. Salt and pepper chicken pieces to taste.

With a sharp knife, cut the roll across into pieces-"washers" 1.5-2 centimeters thick. The oven can already be turned on to warm up (set the temperature to 200 degrees or, if your oven does not have a thermometer, set it to an average heating level).

The baking sheet needs to be covered or brush with margarine or butter. We spread our rolls there at some distance from each other. Don't forget to cut off the protruding edges of the baking paper if you use it: the paper should not touch the walls of the oven.

Lubricate the rolls on top and, if possible, on the sides with an egg (having previously mixed the protein and yolk). It is convenient to do this with a culinary silicone brush, but if there is no brush, you can use your fingers.

Sprinkle the top of the rolls with sesame seeds and place the baking sheet in the preheated oven at medium height or higher.

We bake chicken rolls, as we have already said, at a temperature of 200 degrees (at an average heating level) 40-45 minutes. So that the rolls do not dry out, you can put a metal container (for example, a bowl) with water on the bottom of the oven under a baking sheet at about the middle of the baking process. Readiness is determined by the color of the dough: it should become ruddy and golden.

It is easier and faster to make a chicken roll using a factory test.

On a rolled out layer of puff pastry, you should lay out the frying of chicken, green salad, garlic and onions. All this must be greased with mayonnaise and sprinkled with finely chopped herbs, pepper and salt. Then you need to roll up the chicken roll and pinch the edges. In the latter, you can not try hard, the main thing is that the roll does not turn around at the moment when you shift it.

On a greased baking sheet or lined with baking paper, you need to put a raw piece of puff pastry and put it in the oven for half an hour. The oven should be at a temperature of 220 degrees Celsius. The baking time depends on which oven you have. For me, for example, it is small and works in power saving mode, so I bake such a roll for about 30-40 minutes at a temperature of 240 degrees. After the specified time, the chicken roll will be ready. It needs to be taken out and cut into pieces. Serve the finished dish in plates, smeared with sour cream and sprinkled with herbs.

The above is a recipe for people who value their time. Such people tend to cook something simple, which will taste good and at the same time be nutritious. But if you like to do everything with your own hands and have a lot of time and effort, then you can decide to create puff pastry yourself. But I warn you right away that you may not succeed. After all, this process is quite complex, laborious and time-consuming. However, it is with homemade dough that chicken roll turns out to be the most delicious.

Ingredients needed to make puff pastry

To make homemade crispy roll dough, you will need:
- two hundred milliliters of water;
- two hundred grams of butter;
- one chicken egg;
- a quarter teaspoon of salt;
- three glasses of white wheat flour;
- three teaspoons of nine percent vinegar.

Making puff pastry at home

To create puff pastry for a chicken roll, the recipe calls for pouring water into a cup, pouring salt into the same place, pouring in vinegar and adding one chicken egg. These products must be mixed until a homogeneous mass is obtained. Then you need to pour wheat flour into the cup and knead a dense dough. The latter should be plastic. When this happens, it should be wrapped in cling film and allowed to rest at room temperature for two hours.

As I already mentioned, preparing puff text is a complex process. However, with some skill, it is still possible to achieve a positive result. The main thing is to work out the technique of its creation. First of all, an oil pancake is created from it. To prepare it, chilled butter should be cut into pieces and mixed with two hundred grams of flour. It is best to mix the flour and butter with a food processor. The mass that will result from these actions should be laid out on a cling film and, covered with a second piece of film, it is necessary to roll it with a rolling pin several times. After these steps, you should get an oily pancake, which should be put in the refrigerator for twenty minutes.

The finished dough for chicken, which you put off to lie down, must be rolled out with a layer five millimeters thick. On this piece you need to put an oil pancake that has cooled in the refrigerator. This pancake is placed closer to one edge of the puff text, however, stepping back a couple of centimeters from it. The dough, not covered with a butter pancake, should be placed on the one covered with it and pinch the edges. Then a part of the butter pancake is applied to the resulting part and the edges are pinched again. Then the dough is left in the refrigerator for twenty minutes.

Further, the processing of the chilled puff text for the chicken roll must be fast. The dough needs to be rolled out four times. Each time it is necessary to fold it with three layers. You need to roll out the dough very quickly, until the butter has melted and begins to be absorbed. Therefore, pick up a quality rolling pin and make every effort. The finished dough should be rolled out, filled with stuffing and create a full-fledged roll.
