Opening of a brewery. Home brewing equipment

Statistics show that the amount of strong alcohol consumed in Russia is constantly decreasing. Beer is replacing it. But there is very little quality beer on the territory of the Russian Federation, although the demand for it is high. That is why beer production as a business is a highly profitable and promising area, which in the future may develop into the opening of its own network of craft bars.

Business registration

Since beer contains alcohol, you will need to register a full-fledged legal entity. The easiest way is to open your own limited liability company with an authorized capital of 10,000 rubles.

Beer has many recipes and can be made in a variety of ways.

Additionally, you will need to obtain a license. Just two years ago, a license was not required to produce an intoxicating drink, but in 2015 the government changed the rules of the game. To obtain a license, you need to submit an application to your local tax office.

Please note: The period for obtaining a license is 2-3 months, so you need to apply for it immediately after registering the LLC.

You will also need to obtain a hygiene certificate, which is issued for finished products. It also takes 2-3 months to complete at the sanitary and epidemiological station.

Additionally, the following documents must be completed:

  1. Permission to conduct business from the fire inspectorate.
  2. Permission from energy supervision.
  3. Permission from the sanitary and epidemiological station.

These permits are issued subject to the availability of premises for work, so you will need to either issue a lease agreement or purchase the necessary space.

Brewery equipment

Many companies produce ready-made sets of equipment for microbreweries. They also install it, configure it and carry out the first brewing. Which equipment should you choose? It all depends on exactly how much beer you plan to produce.

There are two types of breweries:

  1. Micro-brewery, which produces from 50 to 500 liters per day.
  2. Mini-brewery producing from 500 to 15,000 liters per day.

The cost of brewing equipment can vary from 5 to 600 thousand dollars.

Please note: It is economically profitable to open a brewery with a capacity of at least 200 liters per day. Typically, beginning brewers start with this figure, and then, as they gain experience and connections, purchase a second unit for 1000-5000 liters per day.

The average price of equipment for the production of beer for 200 liters is 35 thousand dollars. On the market you can find installations from American, Czech, Austrian, German, Russian and Chinese manufacturers. We recommend that you buy domestic or Chinese equipment - it has a very affordable price, all the necessary set of documents and good performance characteristics.

There are two types of breweries:

  1. Top-fermented (ales).
  2. Bottom fermentation (lagers).

Ales are much easier and faster to brew, and they have a richer taste than classic lagers, but they require a long period of aging. For example, a classic red Pale Ale is aged for about 2-3 weeks after fermentation, and Stout can be infused for up to six months. A top-fermentation brewery will allow you to create many interesting varieties of beer, including craft ones, but the volume of their production will be small.

Bottom-fermentation breweries produce classic lagers - in them, the beer matures longer, but immediately after bottling it is ready to drink. You will only need to set up the production cycle and reach the desired level - there will be no need to make any infusions or changes in the recipe.

Which equipment should you choose? We would recommend getting a bottom fermentation brewer to start with. Craft beers and ales are more suitable for themed bars rather than for mass consumption, while lagers enjoy mass popularity.

Please note: Usually, companies that sell equipment provide training to the personnel of the future brewery. They also transfer to you the rights to produce certain types of beer according to approved recipes, which allows you to quickly obtain a hygiene certificate.

Selection of premises

What kind of premises is needed for a brewery? It all depends on how much beer you will be releasing. Try to look for a location that you won't have to move from in the future if you decide to expand to a larger brewery.

There are two options for the development of events:

  1. Buy a room.
  2. Rent it.

For beginners, the second option is more suitable. Look for a room with an area of at least 150 m2, with water, sewerage and a three-phase power line supplied to it. This must be a separate or non-residential building located at some distance from residential buildings. 150 m2 is quite enough to organize a workshop with a productivity of 200-300 liters per day - 90 m2 will be occupied by the equipment itself, 40 by the warehouse, 20 by the office and utility room. The premises can be found somewhere on the outskirts in order to pay as little as possible for it.

The room for a mini-brewery should be spacious enough

Raw materials

Lagers consist of 4 elements:

  1. Water.
  2. Malt.
  3. Hop.
  4. Yeast.

Malt can be divided both by variety and by degree of roasting. Its main indicators are:

  • humidity (should not exceed 7%);
  • extractivity;
  • amount of protein;
  • Kolbach number, showing exactly how much protein will dissolve during cooking.

Malt is produced abroad and in Russia. Russian malt is cheap, but its quality is quite low, so it is better to use imported malt. It allows you to get a higher yield of beer from the same amount of grain. Hops and yeast should definitely be purchased either American or European.

Please note: American and European manufacturers sell their products in large wholesale. You probably won't need as much malt, hops, and yeast, so you'll need to look for local vendors or organize joint purchases with other breweries.

Another option is to buy yeast and hops from breweries. They often sell surplus items at an affordable price. Remember that yeast can be top-fermenting or bottom-fermenting. Top beers are used for brewing ales, dark and wheat beers, bottom beers are used for lagers. Top yeast is usually supplied in granulated form, bottom yeast - in the form of pressed briquettes or thick molasses.

Where to get water? Most domestic factories take water from a water pipe without even purifying it. This is a completely wrong approach, which affects the taste of the beer and its quantity. The water for a foamy drink should be soft - you would be better off purchasing special filters than making a low-quality product.

The more beers you make, the more regular customers you will have.

How to make beer

The classic beer production technology is quite simple - learning how to brew a good drink is not difficult. The following steps must be completed:

  1. Grouting the wort. The malt is ground in a special mill and poured with hot water, which washes out the necessary sugars and trace elements from it.
  2. Filtration. Solid malt particles are removed from the wort.
  3. The wort is boiled for about 2 hours, hops are added to it in 2 additions (the first time for bitterness in the middle of the boil, the second for aroma 10 minutes before the end).
  4. Additional filtration using a hydrocyclone. This process removes all microparticles from the wort, due to which it clarifies.
  5. Fermentation. The wort is cooled to a given temperature, saturated with oxygen and yeast is added to it. The wort is fermented over several days and poured into special barrels for infusion.
  6. The finished beer is filtered and pasteurized again to extend its shelf life.

The favorite drink of people in many countries around the world is beer. This intoxicating drink has been and remains the most in demand and popular, regardless of the time of year. Therefore, in today’s article I want to discuss a profitable idea for making money - beer production as a business.

It is worth noting that beer production as a business is a rather ancient way of earning money. Our ancestors many years ago developed brewing technology and over time it has only improved. Today, large factories with great names are engaged in the production of beer. But it should be noted that very often the quality of this ancient intoxicating drink suffers due to the dishonesty of manufacturers who try to increase the shelf life of the drink, thereby adding preservatives to it, which negatively affect the taste of bottled beer.

True fans of this drink prefer live, draft beer, which, as a rule, comes from private breweries. The taste of such beer is always pleasant and fresh, because the drink is prepared without adding preservatives or flavor enhancers. Therefore, despite the fact that large factories are engaged in the production of beer, the number of consumers of fresh intoxicating drink on tap not only does not fall, but also increases every year. Thus, we can conclude that beer production as a business at home is a completely profitable idea for making money.

Business plan for producing beer at home

Before starting to implement a business idea, it is necessary to study in detail the demand for products, competition in the chosen field of activity, and also calculate the amount of costs and payback periods for the beer business.
  • Demand. If we talk about the popularity of alcoholic drinks, then beer takes first place, and all because of its low cost and pleasant taste. The demand for beer in the warm season increases significantly, but this drink is also popular in winter, so beer production cannot be called a seasonal business.
  • Competition. As noted above, large factories are engaged in mass production of beer, supplying large quantities of the drink to all cities and even neighboring states. Naturally, you won’t be able to compete with local giants, but you can still grab some buyers. All you need is to brew quality beer and skillfully promote your brand. Over time, you will have regular customers, through whom the business will develop.

Stages of a business plan for beer production:

  1. Selection and detailed analysis of a business idea;
  2. Business registration;
  3. Financial costs;
  4. Search and rental of premises;
  5. Equipment for beer production;
  6. Sales market and advertising campaign.

Business registration

If you want to start brewing beer at home and sell your products, then you should register your business legally with the relevant authorities.

First of all, you should decide on the material and legal form of the activity. I recommend that you focus on individual entrepreneurship. In this case, the registration process will be faster, and taxes will be paid according to a simplified system.

License for home brewing

In Russia, bills on licensing the brewing industry are considered every year. But at the moment there is no requirement for a license to produce beer. Agree that such a significant plus has a positive effect on opening a business in this field of activity.

Brewery premises

In this article we are looking at the idea of organizing a business at home, so you shouldn’t have to incur any special expenses for arranging the premises. Brewing at home is a realistic idea that does not require large financial investments.

There are no special requirements for the brewery premises. You can start your business in a garage, in a separate building, or rent a workshop (for mass beer production).

Beer production equipment

Step-by-step beer production process

I’ll tell you a secret that our ancestors were involved in the production of beer. Moreover, the first beer was made at home (modern private breweries). Mass production of this drink began in modern times, when the demand for it became very large. Over time, the first factories appeared that began to produce bottled beer on a production scale.

In this case, we will consider the idea of producing beer on a small scale (up to 100 liters per day).

Equipment for producing beer at home:

  • Capacious fermentation tank;
  • Cooking container;
  • Special system for pouring and filtering the drink;
  • Necessary laboratory equipment;
  • Keggs are hermetically sealed barrels designed for storing and transporting drinks.

The cost of home brewing equipment varies significantly depending on the manufacturer. On average, the price of brewing equipment will cost you $3,000.

Hired personnel

Managing even a small brewery on your own will be quite difficult. Therefore, hire qualified workers. First of all, you will need specialists who understand the production of beverages; their responsibilities will include monitoring the technological process. Also, someone needs to handle finance, so hire an accountant or lawyer for this position.

To transport finished products, you will need a car, and, accordingly, a driver and a loader.

In addition, do not forget about organizing a competent advertising campaign, for the development of which, hire a sales manager.

You will also need a cleaning lady, because maintaining cleanliness in the room is mandatory.

At first, you can perform some functions yourself, thus saving money. The main thing is to remember that saving must be smart, that is, you should not control the technological process without having skills in this field of activity; only professionals should perform important work.

Sales of products

Establishing the production of beer at home will not be difficult, but selling the drink is a very unpredictable process that requires special attention. As mentioned above, beer production as a business is a competitive field of activity. Therefore, it is not always possible to sell a drink at a favorable price in the initial stages.

Do not forget that beer (especially live beer) is a drink that has a limited shelf life. Therefore, it is necessary to sell it as early as possible so that it reaches the consumer fresh, without losing its beneficial properties and taste.

It is most profitable to conclude long-term contracts for the supply of beer with local bars, pubs, and outdoor cafes that sell draft drinks.

Business profitability, payback periods and profits

The relatively small financial costs of opening a beer brewing business make this area of income quite profitable. The payback period for a small brewery in a good situation is about 1–2 years. The main advantage of a beer manufacturing business is the opportunity to open production with minimal volumes, and over time, purchase additional equipment for mass production of the drink.

As for profit, then, naturally, we cannot name the exact amount, nor can we guarantee you one hundred percent success in this area of earnings. It all depends on you, the product sales channel and other significant factors that significantly affect income.

To make beer, you need a substantial investment, which not every novice businessman has. is an idea for making money that does not require large investments, so you can start with it, and later, if successful, go into production.

I wish you success in business!

The idea of producing beer is not new, but the wide opportunities that open up with modern equipment make it relevant and profitable. Large breweries produce only a few varieties of the drink; their main advantage is the scale of production. Beer mini-factory

A small mini-factory can produce more than a dozen varieties, satisfying the tastes of a large number of consumers. You can regularly update the range, making the products interesting for connoisseurs of real beer.

A mini-brewery has a number of other advantages over large enterprises:

What types of mini-factories are there?

There are two types of small breweries:

  • microlines, for home use, with a capacity of up to 1000 liters per day;
  • restaurant equipment with a capacity of up to 3000 liters per day.

Many restaurants open their own breweries, thereby attracting more visitors.

How to open your own microbrewery

The most popular are the beer production lines of the German company Speidel. The Braumeister device for a restaurant has the following technical characteristics:

Mini-brewery for home use Bavaria 70L (Germany).

Specifications:

  • productivity – up to 200 liters;
  • power – 2.5 kW;
  • boiler volume – 70 l;
  • control – automated, 10 recipes;
  • cost – 60,000 rubles.

Electric brewer Grainfather (China), technical characteristics:

Description of production equipment

A mini-factory for the production of various types of beer must have the following components:

You can supplement the production line:

  • water filters (50,000 rubles);
  • installation for washing kegs (RUB 250,000);
  • kegs (3000 rubles per 1 piece).

It is necessary to pay attention to the material from which the main production elements are made. In order for the equipment to serve for a long time, it is worth giving preference to stainless steel AISI 304 or corresponding to GOST 5632.

Today, high-quality steel for equipment is produced by the Italian company Ital Inox and the German Thyssen Krup.

The digester must be well insulated to ensure the best performance of the finished product.

To produce a filtered drink, it is necessary to include a frame or kieselguhr filter in the line. Frame filter provides better filtration and costs slightly less than kieselguhr.

If you produce beer for sale, you must have washing and disinfection equipment for kegs.

Production process

The technological scheme for producing beer using a small plant is as follows:

Raw materials for production

There are a large number of manufacturing recipes; many manufacturers select unique compositions and make a branded product. Regardless of the recipe, the main components of beer are the following:

The taste, aroma, color, foam stability and aftertaste of a beer drink depend on the malt. One type of drink can contain up to seven different types of malt. To produce 100 liters of product, 18 to 25 kg of malt is required. The most common types of malt are:

Hops in the drink provide specific taste and aroma, affect foaming and increase shelf life, and are used for clarification.

How is beer brewed in Russia and what is added to it?

The most commonly used granulated hops are:
  • traditional;
  • Zhatetsky;
  • Istra;
  • Northern Brewer.

Yeast is one of the main components, it also comes in different types:

  • bottom fermentation;
  • top fermentation;

True beer lovers are well aware of the value of a properly brewed, natural drink. Its popularity is rapidly growing in comparison with the cheap product presented on the shelves of supermarkets and grocery stores. However, expensive beer is not always natural. It is quite reasonable that enterprising people have a question about whether they should start preparing this drink at home, because if there is high demand, then there will be profit. In general, this statement is true, however, such a business has its own specifics, which will be discussed in this article.

Features and profitability of the business

First of all, it is worth noting that the issue of licensing beer production is raised regularly, but today you do not need to obtain the appropriate certificate to launch your own project. However, you will still have to register as an individual entrepreneur (you can also register as a legal entity, but this is simply not necessary for a small enterprise).

As for the premises, everything is relatively simple here - you can organize a small production with minimal volumes at home, i.e. in the kitchen, however, it is unlikely that such volumes will be enough to earn at least some serious income, plus you will need a large room for storing containers in which the beer will ferment. So, the best options may be a garage or a small and inexpensive rented space. To produce 100 liters of beer per day, you need a room with an area of 40 square meters.

Of course, the amount of expenses for opening such a business will depend on many factors, ranging from production volumes to renting premises and the cost of equipment. If you are planning to open your own small brewery, it will pay for itself in 1-2 years. The amount of starting investment can be from 30 thousand dollars.

Required Ingredients

Any beer is prepared from the following ingredients:

  • Yeast;
  • Malt;
  • Hops;
  • Water.

Their proportions will depend on the type of beer, the chosen recipe, and the original idea of the brewer. Other ingredients may be added to the beer, but this will again depend on the recipe.

Required Equipment

If you already have brewing experience and decide to open your own mini-factory, the best option for you would be a set of equipment, a small production line, which usually includes:

  • Brewery (can vary in volume, for example, 100, 200 liters);
  • Mill for crushing malt;
  • Fermentation tank;
  • Cooler hose;
  • Drain tap;
  • Hydraulic jam;
  • Density measuring instruments;
  • Cleaning and disinfection kit.

The cost of such a kit with a capacity of 200 liters starts from 20 thousand dollars. At the same time, experienced brewers give preference to European producers. The fact is that domestic or Chinese analogues cost no less, but at the same time they are inferior in quality to the German and Czech manufacturers.

If you are a beginner and would like to start working with small production in your own kitchen, you do not need to purchase expensive equipment. You can brew beer in an ordinary saucepan, limiting yourself to a set of ordinary utensils. In addition, you can purchase a small home line, the cost of which is hundreds of times less than the cost of a full-fledged production kit.

Production technology step by step

Below you can familiarize yourself with the technologies for making beer at home and in your small brewery. Essentially, the difference between the two processes lies in the equipment used and the volumes of product. Thus, 20 liters of beer can be brewed in your own kitchen without expensive equipment, while a volume of one hundred liters already requires the use of special equipment. If you are a beginner who is just starting to study this field of activity, the home method will be optimal. This way you can practice making this drink, study the recipe, and choose several favorite varieties. After this, it will be possible to think about renting space and purchasing more expensive equipment.

Making beer at home

The following describes the process of making beer in a typical home kitchen. When starting brewing, it is worth recording data in a separate log, noting the date, quantity and type of malt and hops, amount of water, temperature, etc. This allows you to repeat the recipe if you brew a really tasty drink, and avoid mistakes in the future if the batch turns out to be unsuccessful.

Prepare a container with malt, the malt itself, and also a small crusher (it may well be homemade). Remember, malt cannot be ground in a coffee grinder, because the brewer does not need flour. It is the rather large shell of the grains that serves as a natural filter layer. In its absence, the malt filtration process becomes almost impossible.

Measure out the required amount of malt on a regular kitchen scale. Recipes can be different - ready-made or invented by the brewer himself. In order not to make a mistake with the proportions, you must either strictly follow the chosen recipe, or analyze the structure of the future drink in one of the special applications that will show you the color, strength and bitterness of the beer.

Start grinding the malt. Using home equipment, grinding 5 kilograms of malt will take about an hour.

Prepare water for mashing the malt (ratio approximately 1 to 3). Heat it up.

Measure the water temperature. Most often, malt begins to fall asleep at a temperature of about 72 degrees Celsius.

Gradually add malt in small mugs. Do not do this abruptly as lumps may form in the water.

Measure the temperature of the malt. The first pause (mashing) occurs at a temperature of 64 degrees.

Cover the tank or pan with a lid, wrap it in a special cloth or regular blankets.

Set the timer for 30 minutes and leave the malt to settle.

After half an hour, it is necessary to make a second temperature break (68 degrees). Raise the temperature to the desired level, slowly stirring the malt, and leave the tank for 70 minutes.

Then add boiling water to raise the temperature to 78 degrees. This is the saccharification temperature when all processes are stopped and wort is obtained. Next, you need to close the tank for 15 minutes.

After saccharification, do the so-called “iodine test”. To do this, take a few drops of wort, pour it onto a saucer, and drop a little iodine onto the same saucer. During the mashing process, the starches must be broken down into sugars. If this does not happen for some reason, the mixture of iodine and wort will turn blue. If everything was done correctly, the color of the mixture will be normal, brownish.

Open the tap and drain the first cloudy wort into a separate container (then you can return it to the tank).

Drain off some clear wort for testing. Check its transparency.

In order not to damage the natural filter layer, before the cloudy wort returns, lay two layers of food foil on the surface.

Pour the cloudy wort into the tank. It will hit the foil and spread gently, slowly, and will not damage the filter layer.

Place the wort on the fire and cover it with a lid. After it boils, you will need to remove the lid and continue to boil without a lid.

After the wort boils, make the first addition of hops. Carefully skim off any foam that forms. Boil it for 30 minutes. During this time, you can prepare the yeast - pour warm water (about 20 degrees) into the flask and add yeast powder there.

After 30 minutes, make a second addition of hops and wait 25 minutes.

While the wort is boiling, you need to prepare the chiller for cooling. One inlet will be connected to the water, the other will be lowered into the sink, and 20 minutes before the end of boiling it will need to be lowered into the boiler.

20 minutes before the end of boiling, lower the chiller into the cooking container.

Pour in the third batch of hops.

Cool the wort to 20-23 degrees.

Drain the wort into the fermentation container, having previously disinfected it. The screw needs to be treated with vodka or alcohol.

Pour the yeast into the container. Leave the beer to ferment for two weeks. Close the container very tightly.

* The remaining grain can also be used to make kvass and moonshine, as well as to feed animals.

Making beer at a mini-factory

The technology for brewing this drink using professional equipment is as follows:

The malt is prepared, cleaned and ground in a mill.

The mash (crushed malt) is added to the water and the mash is filtered. The output is the remains of barley and the beer wort itself.

Hops and other ingredients are added to the wort.

It boils for 1-2 hours.

The liquid is cooled in a tank, yeast is added and the mixture is left to ferment.

After several weeks, the beer is fermented in closed containers.

* Some manufacturers also pasteurize the product - heating it to a temperature of 60 to 80 degrees Celsius. However, despite the fact that pasteurization greatly increases the shelf life of beer, entrepreneurs usually refuse it, because this process affects the taste of beer, and this is the main advantage of such small productions.

Sales areas

The main difficulty in this business lies not in mastering production technology, but in marketing the finished product. The fact is that the market is filled with products from a huge number of both small and large manufacturers, and it is not so easy to compete with them. In other words, beer is not a scarce commodity at all and you can buy it virtually everywhere, which means you need to find the place and buyers who will purchase your natural products.

For a novice entrepreneur, at first, friends and acquaintances will be an excellent sales channel and, perhaps, word of mouth will work in his favor. It will also be an indicator that people really like his product. With large production volumes, beer can be sold to cafes and restaurants that want to offer visitors a truly tasty drink. Of course, the best scenario, promising the greatest profits and prospects, is to open your own cafe or beer store, but this option is suitable for those who have enough money and time to launch such a fairly serious project.

Conclusion

If you are a connoisseur of a foamy drink and have been thinking about starting your own production for a long time, you should definitely try your hand at this. However, even if you have the funds to start a small brewery, there is no need to rush. First of all, you need to study the technology of making beer in practice. You can do this by purchasing a minimum set of household equipment and raw materials (which are very cheap) and starting to experiment in your own kitchen. Having received positive feedback from friends, you can begin to study the issue more carefully, select a suitable location, and look for good equipment suppliers. You don’t have to immediately purchase the most expensive, foreign, powerful equipment - for starters, relatively small volumes will be enough, which can be increased over time.

For many people, beer has been and remains a favorite drink. It is in demand regardless of the time of year, so its production is a highly profitable business. An intoxicating drink brewed according to traditional recipes and strict adherence to technology will allow you to get over 150% profit.

The main advantages of opening a microbrewery:

  • relatively small investment;
  • the ability to forecast sales;
  • minimal risks of non-recoupment.

Which beer is more profitable to make?

Light live beer is especially popular. But for the successful implementation of the project, you should brew several types of beer: dark, light, with different aromatic additives. The intoxicating drink is divided by concentration into weak -5%, medium - up to 12% and strong - over 14% of the wort. It is also possible to produce bottom- and top-fermented beer, filtered and unfiltered.

In the USA, Lager beer is very popular - a drink that undergoes primary fermentation and is stored at a low temperature. Technology allows it to ripen naturally. In Russia, low-calorie beer, ale, and porter have recently become popular.

It’s worth starting a brewing business with unfiltered live beer, which is made using simple technology. In the future, consumers should be offered other types of drinks, allowing them to enjoy new tastes.

Classic recipe for unfiltered live beer:

  • prepare syrup from 1 kg of sugar and 200 g of honey;
  • add: 2 kg of wort, 100 g of hops, 20 l of soft water, brewer's yeast.

By experimenting with the amount of hops and flavorings, a unique recipe for an intoxicating drink is created that will bring recognition to the company.

How to set up beer production

Anyone can start producing beer. It is worth remembering that great competition gives the opportunity to “survive” only to those entrepreneurs who brew original and high-quality beer. You can organize a mini workshop in your own garage or utility room by carrying out repair work in accordance with hygienic standards. When opening a larger business, it is necessary to rent premises.

Before starting production, it is worth deciding on the volumes:

  • a home mini-brewery can brew up to 50 l/day. Organization costs amount to 25-35 thousand rubles;
  • The microbrewery will allow you to produce up to 500 liters per shift. It requires a room of up to 40 square meters. m. Capital investments - 250-500 thousand rubles;
  • A mini brewery will require a workshop of 100 sq. m. It will allow you to get from 500 liters of intoxicating drink. Primary investments – from 1.5 million rubles.

How best to sell products

Sales of beer occupy a leading position among alcoholic beverages. Inexpensive cost and pleasant taste quickly win fans. But still, you should worry about selling the intoxicating drink in advance by concluding supply agreements with local pubs and beer gardens.

Important! Live beer has a short shelf life. It is worth brewing in small batches, increasing production as demand grows. The guarantee of the sale of the drink is the conclusion of contracts with local retail outlets.

How much can you earn

A small brewery pays for itself in the first six months of operation. However, you should not expect to receive income in the first 2 months of work.

The average cost of a mug of beer is 150 rubles. When producing 100 liters of drink per day, earnings will be 300 thousand rubles. Such profitability indicators should be counted on after establishing a sales market for the products.

The brewery's source of additional income is the sale of waste. They should be offered to livestock farms.

How much money do you need to start a business?

Cost items when organizing a mini brewery:

  • equipment. Cost depends on performance. A small line producing about 100 liters of beer per day can be bought for 200 thousand rubles. a full cycle system will cost 1.5 million rubles;
  • raw materials. It is best to buy malt and hops from foreign producers. For example, 50 tons of malt from Germany will cost 50 rubles. per kg, but you can only buy it in large quantities. As an option, you can organize your own malt production - a business that accompanies brewing.

The business plan should include the costs of obtaining permits - 20 thousand rubles, advertising and creating a business card website - 50 thousand rubles, wages of hired employees (if hired labor is used) - 200 thousand rubles.

Step-by-step plan for opening a microbrewery

The technology of organizing production involves performing several stages:

  • conducting marketing research of the region for the presence of competitors and the sales market;
  • drawing up a business plan;
  • registration of activities, obtaining permits for the production of intoxicating drinks;
  • arrangement of the premises and obtaining permission to use it as a workshop;
  • acquisition and installation of equipment;
  • conclusion of sales contracts.

Regulatory framework

To organize a mini brewery, registration with the tax office and SES is required. First, a decision is made on the legal form of the company. For a small workshop, it is advisable to register an individual entrepreneurship by providing a photocopy of your passport to the tax service, paying the state fee and writing an application in the prescribed form.

Do I need a permit to open a microbrewery?

In accordance with the laws of the Russian Federation, beer production is not a licensed activity. Permission must be obtained from the SES for compliance of the product with the declared recipe. A hygiene certificate is a document confirming the quality of products. The fire inspectorate must also issue a special permit for the use of the premises in which the intoxicating drink will be brewed.

Which OKVED code should I indicate for product sales?

In accordance with the all-Russian classifier, when registering activities, the OKVD code 11.05 is indicated.

Which taxation system to choose for registering activities

The best option for choosing a tax payment method is the simplified taxation system. To apply it, you must write an application to the tax office. The tax rate can be 6% (calculated on the amount of income received) or 15% (calculated on the amount of net profit).

Brewery organization technology

The process of preparing a low-alcohol drink is complex and requires high professionalism. Live beer is considered the easiest to prepare, since the brewing technology does not provide for the process of filtration and heat treatment. This drink does not contain preservatives, and the brewer's yeast cells remain alive. The shelf life of live beer is no more than 5 days.

Purchase of raw materials

The ingredients of beer - water, malt, hops and yeast - must be of high quality. It is best to use soft water, which is the basis of the drink. The choice of water should be approached especially responsibly, since its taste depends on it. When using hard water, additional filtration is necessary.

Malt and hops of foreign origin are considered the best in quality. Therefore, it is worth thinking about concluding contracts for the purchase of raw materials with large factories.

Creation of a mini workshop

A mini brewery can be placed in a basement, garage or utility room. The requirements put forward by the SES and the fire inspectorate are minimal:

  • wall decoration - ceramic tiles at a height of 2 meters;
  • ceilings - painted with water-based paint;
  • the floor is covered with ceramic tiles or reinforced concrete panels;
  • availability of heating;
  • equipped ventilation.

All surfaces in the workshop should be easy to clean and disinfect.

Selection of equipment for preparing products

The minimum list of equipment for creating a mini brewery is:

  • containers for fermentation and post-fermentation of the drink;
  • fridge;
  • water filters;
  • scales for determining the amount of raw materials;
  • container for sterilizing containers.

Equipment is selected depending on the scale of production. Full-cycle lines allow you to brew up to 2 thousand liters per shift. The market offers equipment from domestic and foreign manufacturers, the cost of which depends on performance. For example, the Moscon JSC line will cost 1 ml. 200 thousand rubles, German Inyegral-Geha – 2 million 500 thousand rubles, Czech Technoexport – about 2 million rubles. For a beginner, it is optimal to purchase a small line that will allow you to produce up to 100 liters of beer per shift. Such equipment will cost 200-400 thousand rubles.

Features of business promotion

For the success of the activity, business promotion is extremely important, the main goal of which is to stimulate consumer demand and improve the company’s image. It is also very important to create a memorable image of the microbrewery.

The main directions of promotion are:

  • conducting a competent advertising campaign;
  • creating your own Internet resource;
  • sales promotion through promotions and discounts;
  • sponsorship of public events.

Beer should be advertised at the entire stage of the mini-workshop’s operation, even after the drink has gained recognition and won its consumer. Holding tastings will help attract more fans and, accordingly, increase the profitability of your business.
