This is a basic set of products from which we can already prepare main dishes. The rest can only be purchased.

When you start learning to cook, the main thing is not to try to prepare global, isolated dishes at once, but to start small - with organization, with a base of products, gradually mastering technology and moving on to complex dishes. For example, there is no point in immediately learning how to cook kharcho with cherry plum and bake Napoleon cake; it is better and easier to learn how to cook a simple broth, gradually making it more complicated; It is better to master sweet pastries with simple pies such as charlotte. Kharcho will not run away from us, and the hodgepodge will not go anywhere - it will wait for its time.

First courses

The formula of any soup is simple: meat or vegetable broth (onions, carrots at least) and dressing (cereals, mushrooms, vegetables).

From basic products we can always make the basis of soup - broth. You can refuel either with a combination of basic ones or by purchasing something additional as needed. For example, vegetable broth can be seasoned with fried carrots and onions, cereals and spices, dumplings (flour + egg), and mushrooms.

If you are just learning to cook, I advise you to start with the basics - learn how to cook broths, master the technology of their preparation to perfection.

Then try to cook soups based on them. Start with simple seasonal soups, gradually move on to complex ones.

For example, you can start with plain chicken broth. Try to combine spices - add different ones, find your own taste. I read entire treatises on the compatibility of spices and foods, and came to the conclusion that each person has his own spice. Yes, juniper berries go well with beef, but it’s quite possible that you won’t like the flavor of juniper. No matter how much I try white pepper with different foods that suit it, I cannot accept its taste. White pepper is not tasty. And red, paprika and chili are happiness.

Therefore, you need to try, look for your own combinations. You can add cumin, rosemary, allspice, and dried dill to the chicken broth. By testing you will understand what tastes best to you. Quite possibly it will be cinnamon :)

After you have learned how to cook broths perfectly (and this is not a long process), you can start making soups. The perfect broth is half the battle, you need to be able to flavor it.

The simplest thing is to heat a frying pan, add a drop of vegetable oil, heat thoroughly and throw in the onion, fry until golden brown, add to the broth.

If you add champignons to the onions, you get a simple mushroom soup.

Or you can knead a light dough for a minute: flour, egg and salt, drop small balls into boiling broth - dumplings!

Once you understand the basics, you can look for options.

You can make pureed soups based on potatoes, but you shouldn’t use potatoes in sour cabbage soup - acid doesn’t mix well with starch. Vegetable soups can be eaten cold in summer, but in winter, grind in a blender to puree and eat with sour cream. Having learned how to cook kharcho, you can already look for interesting options - adding cherry plum, for example. And, of course, seasonality. Over the summer, you can perfectly master the technologies of preparing cold vegetable soups, and in the winter you can deal with pea soup, borscht, rassolnik and solyanka.

Traditional main course: meat and side dish

If you don’t really like and know how to cook, you should start with oven-baked dishes. There is no need to be afraid of the oven, the oven is our friend.

It’s not difficult to study the operating principle of your specific model of oven, but the general principle is to warm up the oven, reduce the temperature to the desired temperature (usually medium), place the dish and wait, checking the readiness from time to time.

You can cook any meat in the oven, and no special skills are needed (as, for example, when frying a steak). Simply season the meat with spices, place it on a bed of vegetables (for example, a simple carrot and onion) and put it in the oven, checking readiness from time to time.

It is better to bake lean meat in foil or a sleeve so that it is saturated with its own juice and does not become too dry; fatty meat can be baked on an open baking sheet.

Cutlets, cabbage rolls (mix minced meat with onions and cabbage minced in a meat grinder or ground in a blender, add half-cooked rice and an egg, knead), chicken (both whole and parts such as wings and drumsticks) - all this is easier to bake in the oven than to fry .

It’s simpler - because you don’t have to constantly monitor it and it’s difficult to spoil it by overcooking. The oven is the base, it means the absence of excess fat, ease of preparation.

Side dishes are any basic cereal, pasta, potatoes. You can diversify buckwheat with fried onions and mushrooms, rice with herbs, everything is clear about potatoes. A good side dish is oven-baked vegetables (the same onions, carrots, peppers, as well as champignons, eggplants, zucchini and tomatoes). There should always be cereals and your favorite pasta in the house (rice noodles, egg noodles, buckwheat, just different forms).

It’s a good idea to prepare a simple sauce for meat with a side dish. Ketchups, mayonnaise - to hell with it, the sauce is easy to make yourself. Your own sauce is much tastier and healthier than store-bought.

A substitute for store-bought ketchup is tomato paste, in which you need to simmer onions, carrots, peppers, and, if desired, chili peppers.

Cheese sauce - grated cheese and garlic mixed with sour cream.

Grated apple mixed with sour cream and garlic is ideal for chicken.

You can easily prepare delicious bacon yourself: take a few small pieces of raw bacon, choose spices for each of them.

For example, fill one with garlic cloves cut into four pieces (pierce with a knife and put the garlic inside the meat), or cut the garlic into thin slices and cover the brisket on all sides except the bottom. You can also roll the meat in a mixture of spices, or just one - I make spicy bacon with lots of black and chili pepper. I also like paprika, rosemary, suneli hops. After filling the brisket with the selected spices, place it on a baking sheet and put it in a preheated oven, bake at a low temperature until cooked. This is one way, but you can do it another way: cook raw brisket, then coat it with spices (adjika is very suitable here), wrap it in cooking paper, and leave to cool.

Thinly sliced ​​cold bacon with black bread is much tastier than store-bought sausage.

Beef tongue is also good as a cold appetizer (boil, cool, slice thinly). If you don’t like offal, you can take a large piece of pork or beef, stuff it with carrots and garlic, and bake it in the oven.

It’s better to stuff the beef with lard, otherwise it will be dry. Meat prepared in this way is especially tasty when cut into thin slices and eaten cold.

When cold, chicken fillet baked with prunes is delicious: wrap the meat in a roll along with prunes and nuts, tie with thread and bake in the oven.

You can also make sujuk, ham in a ham maker, sausage in a natural casing - but this is more complicated, more on that another time.

Spreads
